1/2 cup butter or margarine
3 large red onions, cut in half and thinly sliced
1/4 cup sugar
3 tablespoons raspberry or balsamic vinegar
1 loaf (1 pound) baguette bread, cut into 1/2-inch slices
1 tub (8 ounces) soft cream cheese with herbs or vegetables
2 tablespoons chopped fresh parsley

Steps:

  • In 12-inch heavy skillet, melt butter over medium-high heat until sizzling. Cook onions in butter 5 to 6 minutes, stirring frequently, until onions are softened. Stir in sugar and vinegar. Cook 9 to 10 minutes, stirring frequently, until onions are very soft and light golden brown. Cool onion mixture slightly, about 10 minutes.
  • Set oven control to broil. Place bread slices on cookie sheet. Broil with tops 4 inches from heat 1 to 2 minutes or until lightly browned. Turn bread; broil 1 to 2 minutes longer or until lightly browned.
  • Spread about 2 teaspoons cream cheese on each bread slice. Top each with 1 tablespoon onion mixture; sprinkle with small amount parsley.

I posted a Fresh Strawberry and Almond Baked Brie that I sometimes make a different way...with apples and walnuts. This gave me inspiration to come up with this Bruschetta recipe. It is great in the fall for dinner parties and other occasions.

1 large white onion, thinly sliced
1 large baguette, cut into 1/2 inch slices
8 ounces brie cheese, rind removed
2 gala apples, cored and sliced into thin wedges
1/4 cup chopped walnuts, toasted
2 tablespoons rice wine vinegar
1 tablespoon dark brown sugar
2 tablespoons olive oil
salt

Steps:

  • Heat Olive Oil in a pan to medium high heat. Add Onions, seasoning with a pinch of salt. Cook until they begin to turn brown and caramelize. DO NOT BURN!
  • Add apples, vinegar, and brown sugar. Reduce heat to medium. Saute until apples are cooked through and vinegar/brown sugar are absorbed.
  • In the meantime, slice the brie into pieces that are similar in size to the baguette slices. Place one slice of cheese on each baguette slice. Broil for about 2-3 minutes, or until cheese melts and bread is crispy.
  • Top each baguette slice with a spoonful of the caramelized apple/onion mixture. Serve warm.
  • Idea! - This appetizer is great for a dinner party where pork is the main dish.

1 large onion, thinly sliced
1 loaf Italian bread, cut diagonally into 1/2-inch-thick slices*
1 clove garlic, halved
2 cups Bertolli® Vodka Sauce made with Fresh Cream
1 cup crumbled Gorgonzola cheese
2 Tbsp. toasted pine nuts, chopped

Steps:

  • Preheat oven 425 degrees.
  • Heat 2 tablespoons olive oil in 10-inch nonstick skillet over medium heat and cook onion, stirring frequently, 15 minutes or until onion is golden.
  • Arrange bread on baking sheet. Evenly rub with garlic, then brush with remaining olive oil. Bake 10 minutes or until golden. Evenly spread Pasta Sauce on bread, then top with cheese, onion and pine nuts. Bake 5 minutes or until cheese is melted.
  • *SUBSTITUTION: Use your favorite prepared pizza crust instead of bread for a quick meal.

2 pounds onion, chopped
1 pound chanterelle mushrooms, halved and very thinly sliced
4 tablespoons olive oil, divided
1 teaspoon white sugar
salt to taste
1 French baguette, sliced into 1/2-inch rounds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook and stir onions until they are soft and beginning to turn golden, about 25 minutes. Sprinkle with sugar and continue cooking, stirring as necessary, until soft and dark brown, but not at all crispy, 10 to 15 minutes. Reduce heat if onions are crisping.
  • Heat remaining 2 tablespoons olive oil in another skillet over medium heat. Cook chanterelle mushrooms until soft and golden, 15 to 20 minutes.
  • Arrange baguette rounds in a single layer on a baking sheet.
  • Bake in the preheated oven until just toasted, 3 to 5 minutes.
  • Arrange a small amount of onions on top of each piece of toast. Top with a few mushrooms slices and serve warm.

1 tablespoon butter
1 tablespoon olive oil
1 large onion, chopped
1 teaspoon sugar
1/4 cup chopped fresh basil (NOT dried)
1 French baguette
1/2 cup freshly grated parmesan cheese
fresh ground black pepper
fresh basil leaf, for garnish (optional)

Steps:

  • Preheat oven on BROIL.
  • Heat the butter and olive oil in a small skillet over medium heat. Add the onion and sugar; cook 15-20 minutes or until very soft and golden brown; stirring frequently. Remove from heat.
  • Cool mixture slightly then stir in the fresh basil.
  • Cut baguette into 1/2" slices. Place bread slices on a baking sheet.
  • Broil the bread for 2 minutes or until toasted. Watch oven carefully!
  • Divide and spread caramelized onion mixture over each bread slice. Sprinkle with Parmesan cheese and season with fresh cracked black pepper.
  • Return to oven and broil for 1 minute or until cheese melts.

1 T. olive oil
1 T. butter
1 C. thinly sliced onion
1 oz. thinly sliced prosciutto, chopped
2-3 T. fig preserves
2-3 oz. sliced taleggio cheese

Steps:

  • 1. Preheat oven to 425. Ligthly brush both sides of bread slices with olive oil. Place bread slices on a baking sheet. Bake for 7-9 min. or until bread is crisp and lightly browned, turning once. 2. For caramelized onion; in a small skillet, melt butter. Add onion. Cook, uncovered, over med-low heat for 10-15 min. or until onion is tender and golden brown, stirring occasionally. Remove pan from heat. Stir in prosciutto. 3. To assemble, spread fig preserves on toasted bread slices; top with onion mixture and taleggio cheese. Return bread slices to the baking sheet. Bake about 3 min. or until bruschetta is heated through and cheese is softened. Serve warm or cool. 4. Make-Ahead Tip: Prepare and bake bread slices as directed; cool. Store in airtight container at room temperature for up to 24 hours. Prepare caramelized onion as directed; cool. Cover and chill for up to 24 hours. Assemble and bake the bruschetta as directed.

Caramelized onion and golden raisins add sweet balance to the shrimp. It can be assembled in no time by making the onion spread ahead. Remove the shrimp for a vegetarian option and replace with crumbled feta. I've allowed 30 minutes resting time for the raisins and if the onions aren't made ahead of time another 30 minutes cooling time for the onions once cooked.We enjoyed them for Christmas Eve before the BIG meal.;)

4 cups chopped yellow onions
2 tablespoons capers, rinsed and chopped

24 thin slices baguette, toasted
24 peeled and deveined cooked shrimp (26-30 per pound)

Steps:

  • Place raisins in a small bowl and cover with boiling water; set aside for 30 minutes.
  • Meanwhile, heat oil in a large skillet over medium heat.

5 oz. goat cheese
2 tblsp. pine nuts
baguette, cut into slices

Steps:

  • 1. Heat oil in large skillet 2. Add onions, lower heat & cook stirring occasionally, until deep golden brown, about 30 minutes. 3. Add vinegar, sugar & salt & cook for 5 minutes, until the liquid is almost evaporated. 4. Can be made 1 day ahead. 5. Preheat oven to 375. 6. Toast baguette slice until golden, about 9 minutes. 7. Top baguette slices with onion mixture, then with goat cheese & pine nuts. 8. Bake at 425 for about 10 minutes, until heated through & the cheese just starts to melt.
