Caramelized Tofu and Brussel Sprouts With Cilantro and Nuts image

Number Of Ingredients 11

200 g extra firm tofu, cubed
10 Brussels sprouts
1/3 cup walnuts (or mix of both) or 1/3 cup pecans (or mix of both)
4 -6 garlic cloves, peeled
1/4 cup fresh cilantro, minced
1 tablespoon lemon juice
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
1 tablespoon olive oil
2 tablespoons butter
2 tablespoons brown sugar

Steps:

  • Brown tofu and garlic in olive oil until crispy one side. Add butter, brown sugar, nuts, chili, and stir. Separately cut Brussels sprouts in half lengthways and steam in pot or microwave. When tofu is caramelized, drain Brussels sprouts and add to mix. Toss, remove from heat, then add cilantro, salt, and lemon juice. Serve hot.

BRUSSEL SPROUTS
2 lb brussel sprouts halved
2 Tbsp olive oil
3 Tbsp melted butter
salt and pepper
2 Tbsp fresh cilantro minced
1 Tbsp fresh basil minced
FISH SAUCE
1 Tbsp butter
1 medium shallot chopped
3 clove garlic minced
1 Tbsp ginger minced
1/3 c fish sauce
1/2 c sugar
2 Tbsp water
juice of 1 lime

Steps:

  • 1. Preheat oven 425 degrees. Combine the brussel sprouts with oil and butter. Sprinkle with salt and pepper and toss to coat well. Place cut side down on baking sheet and roast about 20 minutes.
  • 2. Meanwhile In small saucepan melt butter and add the shallot, garlic, and ginger stirring until softened. Add the remaining sauce ingredients to pan and cook on med low heat until reduced and syrupy
  • 3. Serve sauce over sprouts and garnish with cilantro and basil.

1 lb. Brussels sprouts, trimmed and washed
1/4 lb. Bacon, diced
2 TBSP. Butter
2 shallots, minced
1 TBSP. garlic, minced
1/4 cup roasted pistachios, shelled
1/8 cup balsamic vinegar
Salt and pepper to taste

Steps:

  • Blanch Brussels sprouts in salted boiling water for 7-8 minutes, or until almost tender. Strain immediately and shock in ice water to stop cooking. In large sauté pan, cook bacon until it begins to crisp. Add butter, shallots and garlic. Add Brussels sprouts and sauté for 1-2 minutes, until they begin to caramelize. Finish by adding pistachios and balsamic vinegar. Season with salt and pepper.

I love brussel sprouts but my family did not care for them until I came up with this recipe. Such a simple recipe but great flavor.

1 lb brussel sprouts (fresh)
2 Tbsp butter
2 clove garlic, finely chopped
salt and pepper to taste

Steps:

  • 1. Cook, brussel sprouts in boiling water to just tender. Cool sprouts to to handling temperature, and slice in half lenghtwise.
  • 2. In the meantime, melt butter in saute pan, add the chopped garlic, and cook for one minute. Add the brussel sprouts (sliced side down) turn heat to medium high, and cook for 3-4 minutes or until the bottoms of the sprouts are caramelized. Sprinkle with salt and pepper to taste.
