8 sausages
2 tablespoons butter
2 medium onions, halved and sliced
3 large apples - peeled, cored, and cut into thin wedges
2 tablespoons apple cider or red wine vinegar
2 tablespoons brown sugar, packed
salt and pepper to taste

Steps:

  • Prepare grill for high heat.
  • With a fork, poke sausages several times. Place in a pot, cover with water, and simmer over medium-high heat until cooked through, about 7 minutes. Remove from heat, and set aside.
  • Warm butter in a skillet over medium heat. Stir in onions, and cook until soft and translucent. Stir in apples, vinegar, and brown sugar; cook, stirring gently, until caramelized, about 10 to 15 minutes. Season with salt and pepper.
  • Meanwhile, place sausages on grill (or under broiler), and cook until well browned. Serve on a mound of caramelized apples and onions.

2 medium red apples, peeled and chopped (2 cups)

  • In 10-inch skillet, melt butter over medium-high heat. Cook onions in butter 10 minutes, stirring occasionally, until golden.

6 tablespoons extra-virgin olive oil
4 Granny Smith apples, peeled, cored and cut into 6 wedges
2 stems fresh thyme
2 bay leaves
2 tablespoons butter
3 large white onions, peeled and sliced
Kosher salt and freshly ground black pepper to taste

Steps:

  • Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
  • In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Reduce heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes. Remove from heat and throw away the thyme and bay leaf.
  • To serve, warm the apples and onions over medium-high heat and spoon them around the pork chops on a warmed platter.

4 tablespoons butter
1 onion, diced
1 large apple, diced and cored
1 1/2 cups unsweetened applesauce
1 cup apple juice
1 cup beef broth
1 clove garlic, minced
2 tablespoons ground curry powder, to taste
more salt and pepper

Steps:

  • Season chops with salt and pepper; brown both sides in a skillet with a little olive oil; remove to a 9x13 inch baking dish.
  • In the same skillet, melt butter over medium heat.

1 tablespoon salt
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon black pepper

1/4 cup olive oil
1 tablespoon sesame seed oil
1 tablespoon dried herbs (blend of dried and ground oregano, thyme, rosemary, black pepper, and basil, recommended: Daddy's)
4 Granny Smith apples, quartered
1 1/2 sticks butter, melted and slightly browned
1/4 cup ground cinnamon
2 tablespoons ground nutmeg
1/4 cup brown sugar
2 1/2 pounds Brussels sprouts
3 cups water
3 tablespoons olive oil
1 large onion, sliced thin
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon dried herbs (blend of dried and ground oregano, thyme, rosemary, black pepper, and basil, recommended: Daddy's)
1 teaspoon paprika
2 chicken bullion cubes

Steps:

  • Pork Chops:
  • Wash and season the chops with salt, onion powder, garlic powder, black pepper, coriander, olive oil, sesame seed oil, and dried herbs. Marinate in the refrigerator for a minimum of 2 hours or up to 24 hours.
  • Preheat a grill or grill pan to medium high. Preheat oven to 375 degrees F.
  • Remove chops from marinade and place on the preheated grill. Grill chops on both sides for about 2 minutes each side. Transfer to an ovenproof dish and place in the oven until done. Set aside and keep warm.
  • Apples:
  • Raise oven to 400 degrees F.
  • Place the apples in a large bowl and add half of the butter, cinnamon, nutmeg, and brown sugar. Mix well and let sit for 20 minutes.
  • Place apples on a greased baking sheet and pour the remaining butter over the apples. Put in the oven and roast until caramelized and fork tender. When serving, pour the juices over the apples.
  • Brussels Sprouts:
  • Cut ends off Brussels sprouts and wash them. In a pasta pot with insert bring the water to a boil. Add Brussels sprouts, cover, and steam for 7 minutes. Drain.
  • Heat a skillet over medium-high heat and add the olive oil. Add the onions and saute until caramelized. Add the Brussels sprouts, onion powder, garlic powder, dried herbs, paprika, and bouillon cubes, crushing the cubes to combine with the onion mixture. Saute Brussels sprouts until browned. Lower heat, cover and simmer until Brussels sprouts are fork tender. Serve with pork chops and apples.

1 medium onion, thinly sliced
1 teaspoon kosher salt plus more
Freshly ground black pepper
2 medium red- or pink-skinned apples (such as Pink Lady), thinly sliced
5 tablespoons sugar, divided
3 teaspoons fresh thyme leaves, divided
1 1/2 cups cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
2 large eggs
1 1/2 cups buttermilk

Steps:

  • Preheat oven to 400°F. Melt butter in an 8" cast-iron skillet over medium-high heat. Pour all but 2 tablespoons butter into a small bowl; set aside.
  • Add onion to butter in skillet; season with salt and pepper, and cook, stirring occasionally, until onion is softened and beginning to brown, about 4 minutes. Add apples, 2 tablespoons sugar, and 2 teaspoons thyme and cook, stirring often, until apples are softened, about 4 minutes. Transfer onion mixture to a medium bowl and reserve skillet.
  • Whisk cornmeal, flour, baking powder, 1 teaspoon salt, and remaining 3 tablespoonss sugar in a large bowl. Gradually whisk in eggs, buttermilk, and 3/4 cup reserved melted butter until smooth (no lumps should remain). Fold in half of onion mixture and scrape batter into reserved skillet. Top with remaining onion mixture and remaining 1 teaspoon thyme.
  • Bake cornbread until golden brown and a tester inserted into the center comes out clean, 30-40 minutes. Let cool slightly before serving.
  • DO AHEAD: Cornbread can be made 6 hours ahead. Reheat before serving, if desired.

1/4 cup oil
2 medium yellow onions, sliced
1 teaspoon salt
1 teaspoon pepper
2 cups rome apples, sliced into wedges
2 tablespoons coriander seeds, crushed
1 teaspoon ground cumin
2 tablespoons Dijon mustard
2 tablespoons honey
4 pieces boneless pork chops

Steps:

  • Preheat oven to 400 degrees.
  • Caramelize the onions by melting 1 tbsp butter and 2 tbsp oil over medium-low heat- Add onions and cook until browned- They will get soft and translucent first but keep cooking- This can take 30 minutes or so- Add 1/2 tsp salt and 1/2 tsp pepper- Remove from heat and set aside.
  • Saute apples by melting remaining butter in a large skillet over medium high heat- Add apples and cook until lightly browned on one side- Turn over and continue until browned- Remove from heat and keep warm.
  • Combine the coriander, cumin, mustard, honey and 1/2 tsp salt and 1/2 tsp pepper in a small bowl.
  • Heat remaining vegetable oil in ovenproof skillet over medium high heat.
  • Spread the spice mixture over the pork chops and place them in the hot pan.
  • Sear pork chops for two minutes on each side and transfer to oven.
  • Continue to cook until done 5-7 minutes.
  • Serve with sauteed apples and caramelized onions.

1 tablespoon fines herbes, Spice Islands®
1 stick (1/2 cup) butter, cut into small pieces
No-stick cooking spray, Pam®
1/2 package (17.3 ounce) frozen puff pastry (1 sheet), thawed, Pepperidge Farm®
1 wheel (13.2 ounce) baby brie, Aloutte®

Steps:

  • 1. In a large bowl, combine apples, onions, raisins, brown sugar, white sauce mix, and fines herbes; toss well. Place mixture in a 5-quart slow cooker; dot with butter. Cover and cook on Low heat setting for 12 hours.
  • 2. Forty minutes before serving, preheat oven to 400 degrees F. Coat a baking sheet with no-stick cooking spray; set aside.
  • 3. Unroll pastry sheet. Place Brie wheel in the center of the puff pastry and wrap cheese by bringing ends of pastry together toward the center of the wheel. 1 1/3 lb. black cod, skin romved, in four 6-oz. portions
Kosher salt and red pepper (cayenne or piment d'Espelette)
2 Tbsp. olive oil, divided 1 large firm apple (such as Braeburn), skin on, cored, cut into 8 wedges
1 cup Caramelized Onions (see recipe below)
12 oz. dry hard cider
1 tsp. juniper berries
1 bay leaf
Pour remaining 1 Tbsp. oil on pan. Pat cod dry with a paper towel and place in pan. Cook for about 5 minutes until one side of the fish is lightly browned. Temporarily remove fish to the plate. Add the caramelized onions, cider, juniper berries and bay leaf to skillet and stir. Once mixture is boiling, arrange fish, raw side down, and apples in pan. cover, turn the heat down to medium-low, and cook until fish is opaque at the center, 4-6 minutes longer. Remove fish from pan. Increase heat and cook onion mixture, uncovered, until thick and saucelike, about 3 minutes. Divide the onion mixture among low bowls and arrange fish and apples in each bowl.
Caramelized Onions
Makes 2 1/2 Cups
This recipe makes extra in order to stock our Week 1 Cleanse Pantry. We recommend making it on Sunday so that it's on hand throughout the week.
1/4 cup olive oil
5 lb. yellow onions, cored, thinly sliced
3 sprigs thyme
2 Tbsp. kosher salt
Heat oil in a large (at least 5 quarts) skillet over medium heat. Add onions, thyme, and salt. Cook, stirring frequently, until they are soft and golden brown, 45-60 minutes. If the onions start to brown too much, add 1/4 cup water

Steps:

  • Season cod with salt and red pepper (use a light touch with cayenne). Heat a large deep nonreactive skillet over medium-high heat. Add 1 Tbsp. olive oil and swirl to coat pan. Add apple wedges in a single layer and cook for 4-5 minutes, until browned on the bottom. turn apples and cook for another 3-4 minutes until browned on the other side. Remove from pan and set aside on a plate. Pour remaining 1 Tbsp. oil on pan. Pat cod dry with a paper towel and place in pan. Cook for about 5 minutes until one side of the fish is lightly browned. 2 medium yellow onions
1 tsp. salt
1 tsp. fresh-ground pepper
2 Rome apples
2 tbsp. coriander seed
1 tsp. ground cumin
2 tbsp. Dijon mustard
2 tbsp. Honey
4 boneless pork chops

Steps:

  • Caramelize the onions: Melt 1 tablespoon butter and 2 tablespoons oil in a large skillet over medium-low heat. Add the onions and cook, stirring occasionally, until they are soft and translucent and continue cooking until onions are browned. Stir in 1/2 teaspoon of salt and 1/4 teaspoon pepper and set aside. Sauté the apples: Melt the remaining butter in a large skillet over medium-high heat. Add the apples and cook until lightly browned on one side. Turn the wedges over and continue to cook until browned. Remove from heat and keep warm. Cook the pork chops: Preheat oven to 400 F. Combine the coriander, cumin, mustard, honey, and remaining salt and pepper in a small bowl. Heat the remaining vegetable oil in a large ovenproof skillet over medium-high heat. Spread the spice mixture over the pork chops and place them in the hot pan. Sear pork chops for 2 minutes on each side and transfer to oven.
