Here is another Paula Deen Recipe! I simply LOVE Paula Deen, and if given the opportunity to ever meet this great lady would absolutely wet myself ! She has this in her Magazine "Cooking With Paula Deen" and is one of the contest winners for Brand Name Recipes donated by Linda Rizzo of Trevor, Wisconsin, this one is using Campbells, which is another plus in my book. I am the fundraising Coordinator for our small school up here, and Campbell's Labels for Education is one of our projects to help bring in equipment and extras for our students. Number Of Ingredients 13

1 cup granny smith apple, peeled, cored, and diced (about 1 large)
1 cup walnuts, chopped
3 1/4 cups all-purpose flour, divided
2 cups butter, softened
2 cups sugar
6 large eggs, room temperature
2 teaspoons vanilla extract, divided
1 (3 1/2 ounce) package pudding mix, instant butterscotch flavored
1 (10 3/4 ounce) can cheddar cheese soup
1 teaspoon baking powder
1/2 cup butter
2 cups dark brown sugar, firmly packed
2 tablespoons heavy whipping cream

Steps:

  • Preheat oven to 325°F degrees. Spray 15 cup fluted pan with nonstick baking spray with flour.
  • In a medium bowl, combine apples, walnuts and 1/4 cup flour.
  • In a large bowl, beat 2 cups butter and sugar at medium speed with an electric mixer until creamy. Reduce speed to low. Add eggs, one at a time, beating well after each addition. Increase speed to high, and add 1 teaspoon vanilla, beat for 2 to 3 minutes, or until mixture is fluffy. Reduce speed to low, and add pudding mix and soup; beat for 1 minute. Increase speed to medium and beat for 1 minute longer.
  • In a medium bowl, sift remaining 3 cups flour and baking powder together. Gradually add to butter mixture, and beat until mixture is well combined, about 2 to 3 minutes. Fold in apple mixture.
  • Pour batter into prepared pan. Drop pan lightly on counter to release any air bubbles. Bake for 1 hour and 30 minutes, or until wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes. Remove from pan, and cool completely on a wire rack. Place wire rack over a large piece of aluminum foil.
  • In a small saucepan, melt 1/2 cup butter over medium heat. Stir in dark brown sugar and remaining 1 teaspoon vanilla. Add cream, stirring constantly until combined. Pour mixture over cooled cake.

2 cups quick-cooking oats
1 1/2 cups packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt

1/2 cup caramel topping
3 tablespoons Gold Medal™ all-purpose flour
1 medium apple, peeled, chopped (1 cup)
1/2 cup coarsely chopped pecans

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray. In large bowl, beat 2 cups flour, the oats, brown sugar, baking soda, salt and butter with electric mixer on low speed, or mix with spoon, until crumbly. Press about 3 cups of the mixture in pan. Bake 10 minutes.
  • Meanwhile, in small bowl, mix caramel topping and 3 tablespoons flour. Sprinkle apple and pecans over partially baked crust. Drizzle with caramel mixture. Sprinkle with remaining crust mixture.
  • Bake 20 to 25 minutes or until golden brown. Cool completely, about 1 hour 30 minutes. For bars, cut into 6 rows by 6 rows.

APPLE FILLING
2 granny smith apples chopped
1 Tbsp lemon juice
5 Tbsp brown sugar
2 tsp corn starch
3 Tbsp water
1/2 tsp cinnamon
NUTS
3 Tbsp butter
1/4 c sugar plus 2 tb
1 1/2 c chopped walnuts or pecans
CRUST: MAKE MY CRUST, OR PURCHASE AN EXTRA LARGE PREMADE CRUST FROM THE GROCERY STORE. IF YOU BUY THE PREMADE CRUST. YOU MAY NEED TO USE LESS ICE CREAM THAN LISTED IN INGREDIENTS .
1 c cinnamon grahm cracker crumbs
1 Tbsp brown sugar
5 Tbsp butter melted
CRUMB TOPPING
1/2 c flour
1/4 c softened butter
1/4 c brown sugar
2 Tbsp granulated sugar
ICE CREAM
1 1/2 qt vanilla ice cream softened (usually a large container)
3-4 oz caramel ice ream topping
8 oz cool whip thawed

Steps:

  • 1. Preheat oven 350 degrees Make crust: place about a sleeve of graham crackers in a food processor. Process until crumbed. Pour into a bowl. Add melted butter, and sugar. Combine well. Press lightly into a deep dish pie plate or you may use a springform pan. Bake at 350° about 10 to 15 minutes or until edges are just starting to turn golden. Remove from oven to cool.
  • 2. Crumb topping: Combine butter flour and sugar is in a bowl. Mix well. Press into a 9 inch baking pan. Bake about 10 minutes at 350 degree's, or until edges are golden brown. Remove from oven to cool.
  • 3. make nuts: Place butter in a small fry pan over high heat. When butter melts. Stir in the sugar to combine add nuts. Keep tossing and stirring mixture for about five minutes. You'll start to smell the aroma of the nuts. Pour nuts onto a platter. Separate nuts too cool.
  • 4. Apple filling: Peel two of your favorite apples like granny Smith. Cut into wedges. Place in food processor and pulse until chopped. It should only take about 3 to 5 seconds. Mix apples with lemon juice. Place in the same pan you made the Nuts in. Add in the butter brown sugar and cinnamon. Cook and stir over medium high heat until juices are released and apples are starting to soften. Mix the cornstarch and water together. Remove apples from heat. Stir cornstarch mixture into Apple's. Place back on burner and cook until thickened. Cool mixture and place in fridge.
  • 5. Mix half of the ice cream with half of the apples and half of the nuts. Spread into bottom of pan with crust. Drizzle a liberal amount about 2 ounces or more of caramel topping randomly around top of ic ream. Mix remaining ice cream with remaining apples and most of the nuts.reserve a little bit of nuts. Place ice cream on top of the caramel topped ice cream in pan. Spread ice cream. Drizxle more caramel topping over second layer.
  • 6. Place in freezer for about 30 minutes. Pipe or spread Cool Whip over top of pie. Crumble the cookie you made and sprinkle over Cool Whip with remaining nuts. Place in freezer to freeze. When frozen you can wrap with a piece of waxed paper on top and thoroughly wrap with plasic wrap, or slice and serve with some more caramel topping. ( set out at room temperature for about 10-15 minutes before slicing.

This cookie is perfect for the Fall and it's also great as a breakfast cookie or a mid morning snack. It's not too sweet, you get a bite of apple, a little crunch from that breakfast bar coating, and a sweet and salty finish with that yummy caramel and coarse sea salt.

2 c all purpose flour
3/4 tsp baking soda
1/2 tsp sea salt
1 1/2 stick unsalted butter
1/2 c granulated sugar
1/2 c brown sugar, firmly packed
1 egg
1 tsp vanilla
1 green apple
3 squirts of lemon juice
1 c chopped walnuts
3 4 oz. breakfast bars
**caramel sauce to drizzle
**coarse sea salt for topping, opt

Steps:

  • 1. These are the Breakfast bars I used, you can use whatever brand or flavor you like.
  • 2. Before you begin, place breakfast bars in food processor and crush, set aside. Peel and core apple, cut into very small diced pieces, squirt with a little lemon juice, set aside.
  • 3. In mixing bowl combine butter and sugars and mix. To that add vanilla, baking soda, salt and egg and mix well. Now add flour a little at a time until completely combined. Now add diced apples and chopped walnuts, mix only to combine, do not over mix.
  • 4. Spoon out by the tablespoon, roll in your hand to form a ball. Coat with crushed breakfast bar crumbs.
  • 5. Bake 375º for 9-10 min. Allow to cool completely, remove to bake sheet with wire rack.
  • 6. Drizzle with caramel sauce, sprinkle with coarse sea salt if desired. Remove caramel from can into small bowl, microwave about 1 min or until you can stir and drizzle easily.

6 medium taffy apples with nuts (unpeeled & sliced thin)
6 large granny smith apples, peeled & sliced thinly
3/4 c splenda blend brown sugar,firmly packed
1/3 c all purpose flour
2-3 Tbsp lemon juice
2 1/2 tsp cinnamon
1 tsp nutmeg
2 Tbsp butter
2 pillsbury refrigerated pie crust
1 1/2 Tbsp turbinado sugar(raw sugar) optional
1 large egg yolk blended w/1 tbs water

Steps:

  • 1. Preheat OVEN TO 425 DEGREES F. There is one picture in the above pictures where the pie is real dark on top. That is the RESULTS OF WHAT HAPPENS WHEN YOU FORGET TO LOWER THE TEMPERATURE AFTER THE FIRST 15 MINUTES OF BAKING. i LEFT IT SO YOU CAN SEE WHAT HAPPENS, if you DO NOT LOWER THE HEAT. So after the first 15 minutes of baking lower the temperature as directed. The pie at the bottom is what the finished pie is SUPPOSE TO LOOK LIKE AFTER BAKING.
  • 2. Core and slice Taffy Apples thinly.
  • 3. Core & slice the Granny Smith Apples. Then combine the 2 apples, & toss with lemon Juice.
  • 4. Combine brown sugar blend with cinnamon, salt, nutmeg & flour. Stir till blended.
  • 5. Pour sugar mixture over apples and toss to coat evenly. Unroll first pie crust and fit into deep dish pie plate. Shape neatly into pan, then pierce with fork in bottom and along the sides . Then set aside till needed.
  • 6. Now pour apples into pie plate, and distribute evenly and along sides. Top with small pieces of butter.
  • 7. Add second crust to top of apples and arrange so it fits over the apples. Pinch the edges of both pie crust together, then roll edges in a rope like fashion or pinch with thumb and index finger. Brush top & sides and edges with egg wash or evaporated milk. Sprinkle with Turbinado sugar. Then place pie on wide cookie sheet to catch any potential drips.
  • 8. Bake in preheated 425 degree F. oven for 15 minutes, then REDUCE HEAT to 350 degrees F. and continue to bake for an additional 45 minutes. Remove from oven, and allow to cool. Serve with your favorite ice cream.
  • 9. PLEASE NOTE THE COLOR OF THE APPLES when they are cooked will be brown because of the caramel and the brown sugar blend cinnamon & nutmeg. The pie is sooo good. TURBINADO SUGAR is a type of raw sugar, commonly used by food stylist for decorating the tops of pies or cookies, and is usually found in most larger grocery stores.

2 lbs light brown sugar
10 oz butter
1 1/2 cups heavy cream
5 oz milk chocolate, broken up
2 cups shelled mixed nuts, rinsed

  • Caramelize the brown sugar & butter together in heavy skillet. Stir in half of the cream, keeping heat on medium high. Stir in chocolate pieces, turning heat to lowest point, till chocolate is completely melted. Add remaining cream. Stir till smooth, & then stir in nuts. Remove mixture from heat. Set aside. salt, a pinch

3 tablespoons cold unsalted butter, cut into bits

  • Preheat the oven to 400°; line a 9-inch pie plate with 1 rolled-out crust.

My kids always enjoyed helping me make these for Halloween...they still look forward to helping...we love them! I usually use Granny Smiths, but can use whatever apple you like... Enjoy!

4 large apples, washed, dried & chilled - caramel sticks better to cold apples
8 oz chopped, macadamia nuts or have used pecans
1 - 14 oz unwrapped caramels + 2 tablespoons water
4 oz chocolate - i use hershey bars
crafting sticks

Steps:

  • 1. Have a piece of waxed paper ready to set apples on once dipped or butter a pan. I use fine grit sand paper and go over the apples, not to the point of removing skin, just to rough them up a bit, so the caramel adheres better. Insert sticks in the center of the apples. Set aside. Melt caramels with 2 tablespoons water in a saucepan over low heat, until smooth, stirring frequently.
  • 2. Dip apples as soon as caramel is ready. Scrape the excess caramel from the bottom of the apples, onto the side of the pan and let excess drip back into the pan. Immediately roll apples into the nuts and with your fingers press slightly so they stick. Place apples on the waxed paper to set up, about 30 minutes. In a closable ziplock baggie, place chocolate and microwave on one side 1 minute, then turn and microwave another minute, knead the bag, making sure all chocolate is melted. Snip and small corner of the baggie, and decorate the apples to your liking. Let set another 30 minutes to set up. Can place in refrigerator to speed up the process...enjoy!
