This Addictive Caramel Crispix Snack Mix is so good! One batch of this caramel glazed snack mix will feed a crowd that no one can resist!

18 oz Crispix cereal (Rice chex also work)
1 lb peanuts ( salted or lightly salted)
1 lb M&M candies (or chocolate coated candy pieces)
1 cup butter
2 cups brown sugar
1/2 cup light corn syrup (I used Karo Syrup)
1/2 tsp salt
1 tsp baking soda
2 brown paper bags (grocery bag size)

Steps:

  • Place one paper bag inside the other and pour cereal, peanuts, and M&M candies into it.
  • Add brown sugar, butter, Karo syrup and salt to a large saucepan. Boil for 1-1/2 minutes. Remove from heat and stir in the baking soda. Be careful because the mixture will foam up and be very hot. Pour into the paper bag over the cereal mixture.
  • Roll the top of the bag down and shake to distribute the sugar mixture throughout the cereal mixture. Heat bag in the microwave on high for 1 minute. Remove and reshake. Return to the microwave for a total of 3 times.
  • Spread out on rimmed cookie sheets to dry for a couple hours or overnight. Occasionally break up the mix. Store dried mix in an airtight container.

This Crispix mix is so addicting! You won't be able to take just one handful of this caramel party mix. It makes a big batch to share with friends and family, especially during the holidays.

1 cup (2 sticks) unsalted butter
2 cups brown sugar (packed)
1/2 cup light corn syrup
1 teaspoon vanilla
16 ounces or 1 large box Crispix
1/2 teaspoon baking soda
sea salt (for sprinkling)

Steps:

  • Place the Crispix in a large microwave safe mixing bowl or large paper bag. Line two large baking sheets with parchment paper or a silpat mat and set aside.
  • Combine the butter, brown sugar, corn syrup and vanilla in a large saucepan. Bring to a boil over medium-high heat and allow to boil for 1 1/2 - 2 minutes, stirring frequently. Be careful not to boil too long or caramel will be too crunchy. Remove mixture from the stove and add the baking soda. The mixture will foam a bit then settle.
  • Add the caramel mixture to the prepared Crispix and stir gently with a rubber or wooden spatula. Place the bowl of caramel Crispix in the microwave and heat on high for 1 minutes. Remove from microwave and stir gently. Repeat 3 more times to reach a total of 4 minutes. Spread mixture evenly onto prepared baking sheets and sprinkle generously with sea salt. Allow to cool completely, breaking pieces or chunks apart with your hands or spatula as it cools. Store in an air tight container for up to 5 days.

Our whole family has a sweet tooth, so this caramel-drizzled mix of popcorn, almonds and cereal goes quickly. My "off-limits" batches are divided into plastic bags, tied with ribbon and shared with all the snackers on my Christmas list.

9 cups popped popcorn
9 cups Crispix cereal
1 cup slivered almonds
1 cup butter, cubed
1/2 cup light corn syrup
2 cups packed brown sugar
1/2 teaspoon baking soda

Steps:

  • In a very large heat-proof bowl, combine the popcorn, cereal and almonds; set aside. In a large heavy-duty saucepan, melt butter; stir in corn syrup and brown sugar. Cook and stir over medium heat until mixture comes to a boil. Reduce heat to medium-low. Cook 5 minutes longer, stirring occasionally. , Remove from the heat. Stir in baking soda. (Mixture will foam up and get lighter in color.) Carefully pour over popcorn mixture; stir to coat evenly., Transfer to two 15x10x1-in. baking pans coated with cooking spray. Bake at 250° for 45 minutes, stirring every 15 minutes. Spread on waxed paper to cool. Store in airtight containers.

Hopefully there will be some left for the party...made two batches! I think you could use all peanuts if preferred. I found it broke up better when...

1 c brown sugar, firmly packed
1/4 c white corn syrup
1/4 tsp salt
1 stick butter
8 c crispix or corn or rice cereal
11/4 c mixed nuts
1/4 tsp soda
1/4 tsp vanilla

Steps:

  • 1. Place the cereal and nuts in a 'double' grocery bag. Shake to mix. Set aside.
  • 2. Combine first 4 ingredients in large microwavable bowl. Microwave on high for 2-1/2 minutes. Stir. Cook 2-1/2 minutes more. Add soda and vanilla. Stir well.
  • 3. Pour the caramel mixture (while hot) into the grocery bag with cereal. Shake well then place in microwave on high for 1-1/2 minutes. Shake again. MIcrowave 1-1/2 minutes more. Shake and pour onto jelly roll plan to cool and break up.

2 cups brown sugar
3/4 cup light corn syrup
1/2 teaspoon baking soda
1 box Crispix cereal

Steps:

  • Bring butter, brown sugar, and corn syrup to a boil.
  • Boil 2 minutes.
  • Remove from heat and add baking soda (it will foam).
  • Put the cereal in a large bowl and pour the boiled mixture over the cereal and stir to coat.
  • Bake 1 hour at 200-250F degrees.
  • Stir every 15 minutes.
  • You may add nuts if you desire.

  • 1. Foil-line a 17 x 14-inch cookie sheet. Lightly butter and set aside.2. In heavy 12-inch fry pan, over medium heat, cook almonds, margarine, sugar, corn syrup and water, stirring constantly, until mixture starts to boil. Cook and stir about 12 minutes longer or until almonds start to brown. Remove from heat.3. Carefully stir vanilla and almond flavoring into hot mixture. Add KELLOGG'S CRISPIX cereal and gently stir to evenly coat cereal. Spread mixture on prepared cookie sheet. Cool completely. Break in pieces. Store in airtight container.

1 1/2 stick(s) butter
1/3 cup(s) light corn syrup
1 1/2 cup(s) brown sugar
1 1/2 tablespoon(s) watkins caramel extract
1/2 teaspoon(s) baking soda

Steps:

  • Bring butter, syrup, sugar and extract to a boil for 1 1/2 minutes.
  • Stir in baking soda.
  • Pour over cereal in a large pan.
  • Bake in 200 degree oven for 1 hour stirring every 15 minutes.

1 cup small pretzels
2 cups brown sugar
1/2 cup white corn syrup
1 cup butter
1 teaspoon baking soda

  • 1. Put cereal; nuts and pretzels into large bowl.
  • 2. Melt butter in saucepan. Add brown sugar and corn syrup.
