ASIAN CARAMEL CHICKEN WINGS



Asian caramel chicken wings image

Using dark caramel in savoury dishes is common in Asian cooking- it adds depth of flavour and contrasts well with sour and spicy notes

100g golden caster sugar
4 tbsp gluten-free fish sauce
1 green chilli , halved (optional)
small piece cinnamon bark
small piece ginger , finely chopped
juice 1 large lime , plus extra for squeezing over
1kg chicken wing , tips removed and cut in half
small bunch spring onion , cut into 1cm lengths
large piece ginger , cut into matchsticks
1 green chilli (seeds removed if you don't like it too hot), cut into rings
handful coriander sprigs
boiled white rice , to serve

Steps:

  • Put the sugar in a medium sauté pan with enough water to make it go sludgy. Place on a low heat and bring to the boil, then cook until you have a dark amber caramel (see tip, below).
  • At arms length, add the other ingredients, except for the chicken and garnish, and bring to a simmer - take care as it will spit. Once it has calmed down a little and you have a thick sauce, stir in the wings until well coated. Pour over 100ml water and simmer on a medium heat for about 30 mins, stirring every now and then until the sauce is a thicker consistency - add a splash more water if needed.
  • Turn down the heat and continue to cook, covered, for a further 15 mins, stirring occasionally, until the wings are lacquered and tender and the sauce is very thick. Turn off the heat and quickly stir through half the spring onion, ginger and chilli. Tip the wings and sauce onto a platter. Scatter with the remaining garnish and coriander, and serve with extra lime and rice.

Number Of Ingredients 12

3 pounds chicken wings, wing tips removed and cut at the joint, if necessary
2 tablespoons olive oil
2 teaspoons coarse salt
Zest of 1 lime
Zest of 1 lemon
3 blood oranges
1/3 cup sugar
1/2 cup freshly squeezed blood orange juice
3 tablespoons corn syrup
1 teaspoon finely chopped fresh ginger
1 to 2 teaspoons Sriracha
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 450 degrees.
  • In a large bowl, toss chicken together with olive oil, salt, and half of the lime and lemon zests. Spread in an even layer on a rimmed baking sheet. Transfer to oven and roast until golden brown, draining fat and shaking pan occasionally, about 1 hour.
  • Meanwhile, slice the top and bottom of oranges with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the oranges over a bowl, cut along both sides of each segment, staying close to the membrane, to release. Chop oranges and place in a fine mesh sieve in a bowl, to drain, pressing down on oranges to release juice as necessary; set aside.
  • In a medium saucepan heat sugar and 1 teaspoon water over medium-high heat and cook, stirring occasionally and brushing down the sides of the saucepan with a damp pastry brush, until the sugar dissolves and comes to a boil. Cook until mixture becomes golden amber in color; remove from heat and add orange juice. Return mixture to heat and cook until reduced by half, about 4 minutes. Stir in corn syrup and continue cooking until thickened, about 1 minute more. Add orange pieces and cook until liquid is reduced and mixture is thick, about 3 minutes; remove from heat.
  • Remove chicken from oven and transfer to a large bowl. Pour over citrus glaze and toss to coat. Stir in remaining lime and lemon zest, ginger, Sriracha, and cayenne pepper; serve immediately.

MISO CARAMEL CHICKEN WINGS

2 tbsp vegetable oil
4 tbsp white miso
1kg chicken wings
100g golden caster sugar
30g butter
½ lime , juiced
1 tbsp sesame seeds

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the oil with 2 tbsp miso, toss the chicken wings in the mixture to coat, season well and spread out on a large baking tray. Put in the oven for 45 mins.
  • Put the sugar in a pan with 2 tbsp of water and gently dissolve the sugar. When it's no longer grainy, turn up the temperature, keeping an eye on it, and boil until it's an amber caramel. Take off the heat and carefully stir in the remaining miso, the butter and lime juice. Set aside.
  • Pour the caramel over the chicken wings, coating all of them. Sprinkle over the sesame seeds, then return to the oven for 5 mins.

Caramel (recipe follows)
1/3 cup sugar
1/4 cup plus 2 tablespoons nam pla (Thai fish sauce)
2 garlic cloves, sliced
4 shallots, sliced
2 1/2 pounds chicken wings
One 1-inch piece fresh ginger, julienned
2 teaspoons cracked black peppercorns, plus more for garnish
6 sprigs fresh cilantro

Steps:

  • 1. Preheat the oven to 450°F.
  • 2. To make the caramel: Put the sugar in an oven-proof casserole and add just enough water to wet it, about 1 tablespoon. Shake the pan to distribute the sugar and water and caramelize over medium heat, shaking the pan occasionally. The sugar will gradually liquefy and darken; when it becomes golden brown, remove from the heat.
  • 3. Carefully add the nam pla (it may spatter; hold the pan at arm's length), then return to the heat. Add the garlic and shallots and cook, stirring, until softened.
  • 4. Add the chicken wings and coat with the sauce. Gently stir in the ginger and pepper and continue stirring until the chicken browns slightly, about 4 minutes. Cover and cook for 7 minutes, then transfer to the oven and cook for 45 minutes.
  • 5. Remove the chicken wings, which should now be a rich caramel color, garnish with cilantro and cracked black pepper, and serve.

VIETNAMESE CARAMEL CHICKEN WINGS



Vietnamese Caramel Chicken Wings image

Sweet sticky with a bit of heat.

MARINADE
2 Tbsp brown sugar
3 Tbsp fish sauce
2 lb chicken wings
1 tsp rice vinegar
FOR THE SAUCE
2/3 c brown sugar
1 c water
2 Tbsp each rice vinegar and fish sauce
4 clove garlic minced
1 Tbsp ginger grated
1 tsp ground birds eye chili or fresh birds eye chili sliced
peanut oil
GARNISH
3 Tbsp scallions thinly sliced

Steps:

  • 1. Mix the chicken wings with the marinade and allow to marinate for at least 2 hours. Pat dry. Add some peanut oil to a large skillet. Add the chicken wings and brown on both sides. Remove from pan and set aside.
  • 2. In the same pan add the brown sugar and 4 tbsp.water. Stir until its melted and begins to bubble. Add the remaining ingredients. Stir and reduce the heat to low.
  • 3. Add the chicken wings back to pan and cover and cook 5 minutes. Then flip wings and cook 5 more minutes. Watch carefully so caramel doesn't burn.
  • 4. Garnish with scallions.

MOCHIKO CHICKEN WINGS W/ CARAMEL GINGER SAUCE

1 cup(s) sugar
1/2 cup(s) fish sauce
2 tablespoon(s) ginger, minced
2 tablespoon(s) red onion, minced
3/4 cup(s) thai sweet chili sauce
CHICKEN
3 pound(s) chicken wings
1 bottle(s) teriyaki sauce
2 cup(s) mochiko, rice flour

Steps:

  • Sauce: Cook sugar in a heavy bottom sauce pan with 2 quart capacity over low heat.Allow the suagr to caramelize. Stir with a wooden spoon. Sugar should be golden brown. Carefull add in the fish sauce. The suage will become hard but let it melt back down into the fish sauce. Add in the ginger & onion & cook until soften. Add in the chili sauce & mix well. Let sauce cool the room temperature before coating the chicken.
  • Chicken: Toss chicken wings in the teriyaki sacue & place in ice box for up to 2 hrs.
  • Heat oil in a wok or frying pan to 350F. Fill the frying pan or wok 1/3 to 1/2 way full with oil. Drain chicken from sacue then dredge in mochiko rice flour. Shake off excess flour.
  • Drop the chicken carefully into the oil & fry until golen brown.
  • toss in the ginger sacue to coat all the pieces & allow the sauce to absorb intp the chicken.
  • Optional garnish of cut green onions & toasted sesame seeds.

CHICKEN WINGS WITH CHILLI & DATE CARAMEL

1kg chicken wings
1 tbsp ground cumin
2 tsp sumac
2 tbsp plain flour
1 tbsp vegetable oil
6 dates , stoned
2 red chillies , deseeded, plus 1 thinly sliced to serve
150g light brown soft sugar
150ml red wine vinegar
2 tsp sesame seeds , toasted

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Tip the chicken wings into a large bowl and toss with the cumin, sumac, flour and plenty of seasoning. Spread out over a large baking tray, drizzle with oil and cook for 35 mins, turning halfway through cooking.
  • Meanwhile, make the glaze. Put the dates, chillis, sugar and vinegar in a food processor with 100ml water and blitz. Pour into a saucepan and bubble for 5 mins until thick and glossy.
  • Brush the glaze over the chicken wings, making sure they're well coated, and sprinkle with the sesame seeds. Return to the oven for 10 mins more, turning and brushing after 5 mins until sticky.
