MINI GERMAN PANCAKES WITH APPLE-CALVADOS CARAMEL SAUCE

1 cup milk
1 heaping tablespoon granulated sugar
1 teaspoon vanilla extract
1 teaspoon finely grated orange zest
6 eggs
1 cup all-purpose flour
4 tablespoons butter, melted and cooled
1/2 teaspoon salt
Nonstick cooking spray
Apple-Calvados Caramel Sauce, recipe follows
1/4 cup powdered sugar mixed with 1 heaping teaspoon ground cinnamon
4 tablespoons unsalted butter
1 Gala apple, peeled, cored and diced
1 Granny Smith apple, peeled, cored and diced
1 cup packed light brown muscovado sugar
1/4 cup calvados
1/4 cup heavy cream
3 fresh mint leaves, torn, for garnish

Steps:

  • Preheat the oven to 400 degrees F. Combine the milk, sugar, vanilla, zest and eggs in a blender and blend until smooth. Add the flour, butter and salt and blend until completely smooth, about 1 minute. Spray muffin tins well with nonstick cooking spray and pour 1/4 cup batter into each tin, filling about three-quarters full. Bake until puffy and golden on top, about 15 minutes. Remove and let sit on a baking rack for a few minutes. Remove the individual pancakes to a platter. The pancakes will sink slightly in the center. Fill with some of the Apple-Calvados Caramel Sauce and dust with cinnamon powdered sugar.
  • Melt the butter in a large skillet over medium-high heat. Add the apples and cook, stirring until soft, about 8 minutes. Whisk in the sugar and cook until the sugar melts and thickens slightly. Remove the skillet from the heat, add the calvados, then return to the stove and cook until reduced. Add the heavy cream and cook until warmed through. Finish with the mint.

The sauce may be made the night before, if you like. Simply cover and refrigerate, then warm up while the pancakes cook. Depending on the size of the griddle, this makes a batch of 4 or 6 pancakes.

1 large apple - peeled, cored, and diced
2 tablespoons water
1 cup brown sugar
½ cup heavy cream
5 tablespoons unsalted butter, cubed
⅛ teaspoon salt
2 teaspoons vanilla extract
1 ⅔ cups all-purpose flour
1 tablespoon baking powder
2 teaspoons white sugar
½ teaspoon salt
2 large eggs
1 ¼ cups milk
2 tablespoons unsalted butter, melted
½ cup chopped, toasted walnuts

Steps:

  • Combine diced apples and water in a microwave-safe dish for the sauce. Cover and microwave on high power for 3 minutes. Stir, replace cover, and microwave on high until apples are fork-tender, about 2 more minutes. Drain and set aside.
  • Combine brown sugar, cream, butter, and salt in a 2-quart saucepan over medium-low heat. Bring to a boil and cook, stirring occasionally, for 5 to 7 minutes. Mixture should be bubbly all over the surface. Mix in vanilla extract and cook, stirring, for an additional 2 minutes. Remove from heat and stir in cooked, drained apples.
  • Preheat an electric griddle to 250 degrees F (120 degrees C). Lightly grease.
  • Combine flour, baking powder, sugar, and salt in a bowl.
  • Combine eggs and milk in a separate container, stirring briskly until eggs are well incorporated. Drizzle in melted butter while stirring. Add wet ingredients to dry ingredients and stir until most of the lumps are gone.
  • Use a 1/4-cup measuring cup to pour batter in batches onto the preheated griddle, forming 6-inch pancakes.
  • Cook until bubbles form on top of the pancakes and the surface begins to look a little dry, 3 to 4 minutes. Brown to desired doneness on the second side, 2 to 3 minutes. Keep first batch warm in a 250 degrees F (120 degrees C) oven, while the remaining pancakes cook.
  • Serve a stack of 3 pancakes with caramelized apple sauce, and garnish with chopped, toasted walnuts.

1 1/2 cups plus 1 tablespoon all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
2 large eggs
1 cup milk
2 tablespoons packed light brown sugar
1 teaspoon vanilla extract
4 tablespoons unsalted butter, plus more as needed
1 apple
1/4 cup jarred caramel sauce or dulce de leche, plus more for serving
Greek yogurt, whipped cream or ice cream, for serving

Steps:

  • 1. Preheat the oven to 250 degrees F. Whisk 1 1/2 cups flour, baking powder, cinnamon and salt in a medium bowl.
  • 2. In a large bowl, whisk the eggs, milk, sugar and vanilla. Melt 2 tablespoons butter in a medium nonstick or cast-iron skillet. Whisk into the egg mixture and reserve the skillet for cooking the pancakes. Whisk the dry ingredients into the liquid mixture until it forms a thick, lumpy batter.
  • 3. Core and grate the apple on the large holes of a box grater into a small bowl. Toss with the remaining 1 tablespoon flour. Add the caramel sauce and stir until the flour is absorbed. Stir into the batter until just combined.
  • 4. Melt 1 tablespoon butter in the reserved skillet over medium heat. Drop 2 tablespoons batter per pancake into the hot skillet. Cook until the surface of the pancakes form bubbles and the edges are set, about 3 minutes. Flip the pancakes and continue to cook until puffed in the center, about 1 minute more. Transfer to a baking sheet and place in the oven to keep warm while making the rest of the pancakes. Continue to make the pancakes, adding the remaining 1 tablespoon of butter as needed, until all the batter is gone.
  • 5. Serve the pancakes with a dollop of yogurt, whipped cream, or, for dessert, a scoop of ice cream. Drizzle with additional caramel sauce.

4 cloves
2 cinnamon sticks
2 star anise
One 1-inch piece fresh ginger, peeled and chopped
1/8 teaspoon ground nutmeg
1 1/2 cups granulated sugar
1 tablespoon apple cider vinegar
1 tablespoon apple schnapps
1 1/2 cups all-purpose flour
2 tablespoons dark brown sugar
1 tablespoon granulated sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
2 large eggs
1 1/2 cups buttermilk
3/4 cup ricotta, drained for 1 hour in a strainer set over a bowl
1/2 cup pumpkin puree
2 tablespoons butter, melted and cooled, plus melted butter or nonstick spray for the griddle
3/4 cup creme fraiche, for serving

Steps:

  • For the caramel sauce: Combine the cream, apple juice, cloves, cinnamon, star anise, ginger and nutmeg in a medium saucepan, and bring to a simmer. Remove from the heat and let steep for at least 20 minutes. Set aside and keep warm while you make the caramel.
  • Combine the sugar, 1/2 cup water, and the cider vinegar in a medium saucepan over high heat, and cook without stirring until it reaches a deep amber color, about 8 minutes. Slowly strain in the warm cream, whisking constantly; continue whisking until smooth. (Be careful! The caramel will bubble up as you add the cream.) Whisk in the apple schnapps and cook for 30 seconds longer. Transfer to a bowl and keep warm. (The sauce can be made 2 days in advance and refrigerated. Reheat over low heat before serving.)
  • For the pancakes: Preheat the oven to 250 degrees F. Place a baking sheet with a rack in the oven to heat.
  • Whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, cloves and ginger in a large bowl.
  • In a medium bowl, whisk together the eggs, buttermilk, ricotta, pumpkin and 2 tablespoons melted butter. Add the wet ingredients to the dry ingredients, and whisk until just combined; do not overmix. Let the batter sit at room temperature for at least 15 minutes and up to 1 hour.
  • Heat a large nonstick pan or griddle over medium-low heat. Brush with melted butter or spray with nonstick spray. Drop a scant 1/4 cup of the batter onto the pan; cook until small bubbles form on the surface and at the edges and the bottom is lightly golden brown, about 3 minutes. (Adjust the heat if the bottom browns too quickly.) Flip, and continue cooking until golden brown on the reverse side, another 2 or 3 minutes. Remove to the rack in oven to keep warm. Repeat with remaining batter.
  • Serve the pancakes with a drizzle of caramel sauce and a dollop of creme fraiche.

1/4 cup butter

2 small apples, cored, cut crosswise into very thin slices (gala, fuji, granny smith)
1 cup pancake mix (Aunt Jemima Original Pancake & Waffle Mix)
1 teaspoon ground cinnamon
3/4 cup milk
1 egg, beaten
1 tablespoon butter, melted
1/2 cup maple syrup, warmed

Steps:

  • For caramel apples, melt butter in large skillet. Add brown sugar and cinnamon; cook and stir until sugar is melted.
  • Add apples, stirring to coat with sugar mixture.
  • Cook over medium heat 5 to 7 minutes or until apples are tender, stirring frequently. Keep warm over low heat.
  • For pancakes, combine pancake mix and cinnamon in medium bowl.

2 medium cooking apples
4 tablespoons butter
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
2/3 cup brown sugar
1 1/2-2 teaspoons cornstarch (amount may be adjusted to make a thinner or thicker syrup as desired)
1 cup water, cold
1/3 cup walnut pieces
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
4 tablespoons melted butter or 4 tablespoons oil
2 cups buttermilk

Steps:

  • SYRUP:.
  • Peel, core, and thinly slice the apples, set aside (this is fast work with the food processor).
  • In a large saucepan, melt the butter over low heat.
  • Stir in the spices and brown sugar all at once.
  • Mix the cornstarch into the 1 cup of water until dissolved and immediately add the water mix, stir until the sugar is dissolved.
  • Add the apples and cook over medium heat, stirring frequently, until the apples are nearly tender and the syrup is bubbly.
  • While the apples are cooking, make the pancakes.
  • Serve.
  • Note: If you would like a thinner syrup, simply add a little more water.
  • PANCAKES:.
  • Mix the dry ingredients together in a large bowl.
  • Mix the egg, butter, and buttermilk together in a small bowl.
  • Make a depression in the dry ingredients and add the liquid mixture.
  • Stir until moistened, some lumps will remain.
  • Add more water to get the right consistency, if required.
  • Do not over mix.
  • Pour about 1/3 cup of batter onto a hot, lightly greased griddle.
  • Cook for about two minutes on medium heat or until the edges are set and the bubbles remain open.
  • Turn over and cook on the other side.

APPLE PIE PANCAKES W/ CARAMEL BOURBON GLAZE

These little gems taste like apple pie, but in pancake form. They're jam-packed with apples and spices. Don't let the bourbon scare you. It's not overpowering in the sauce. The warm caramel glaze is the perfect complement to the pancake.

1 c Bisquick
1/2 c milk
1 egg
1 large granny smith apple; sliced, seeded & cut into chunks
1 Tbsp apple pie spice
1 Tbsp sugar
1/2 c caramel syrup or ice cream topping
3 Tbsp bourbon
butter

Steps:

  • 1. In a small saucepan, heat 1/2 cup of caramel topping and 3 Tbsp of bourbon.
  • 2. Simmer on low heat while preparing pancake batter and pancakes.
  • 3. In a large mixing bowl, combine Bisquick, egg, milk, apple pie spice and sugar.
  • 4. Using a wire whisk, beat until batter is somewhat smooth.
  • 5. Gently fold in the apples.
  • 6. On a heated griddle or non-stick skillet, spray non-stick cooking spray. Pour just under 1/3 cup of the batter into the skillet. If using a large skillet, you should be able to get about 2 pancakes per batch. Don't overcrowd the skillet.
  • 7. Cook until edges are dry and batter starts to bubble a little in the middle. Carefully turn the pancake over using a spatula. Once you have flipped the pancake, take a basting brush and dip into butter. Carefully spread the butter over the pancakes while they are in the skillet.
  • 8. Place one pancake on a plate, add about 1 tablespoon of the bourbon glaze, top with another pancake and additional bourbon glaze.
  • 9. Garnish with fried apple slices with cinnamon, if desired. Sprinkle with additional apple pie spice, if desired.
