3 pears, peeled,cored and sliced
3 tablespoons unsalted butter
3/4 cup dry white wine
4 thin pork chops
1 cup all-purpose flour
1/2 cup blueberries
salt & freshly ground black pepper
2 tablespoons fresh mint leaves, chiffonade style

Steps:

  • Saute the pears in a large skillet with 2 tablespoons of the butter for 5 minutes over medium-high heat.
  • Add 1/2 cup of the wine and cook an additional 10 minutes.
  • Remove to a blender and puree.
  • Dredge the pork chops in the flour, shaking off excess.
  • Heat the remaining butter in the skillet, add the pork and cook until done, turning once, about 4 minutes per side.
  • Add the remaining wine, blueberries, salt and pepper.
  • Cook until heated through, about 2 minutes.
  • Transfer the pork to 4 serving plates, mound the pear puree next to the pork.
  • Meanwhile, crush half of the blueberries in the skillet and pour the resulting sauce evenly over the pork chops.
  • Garnish with the mint chiffonade and serve immediately.

1/4 cup packed brown sugar
2 tablespoons minced fresh parsley
1 tablespoon balsamic vinegar
2 teaspoons butter
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1 teaspoon fresh sage or 1/4 teaspoon dried sage leaves

Steps:

  • In a small bowl, combine the garlic, pepper, salt and cayenne; sprinkle over pork., In a large ovenproof skillet coated with cooking spray, brown pork chops. 4 pork loin chops, 1 inch thick
salt and pepper, to taste
1/3 cup all-purpose flour
1 tablespoon olive oil
2 tablespoons butter, divided
1 large onion, thinly sliced
1/2 cup dry white vermouth
1/4 cup water
1 chicken bouillon cube
2 tablespoons capers, in brine but drained
2 tablespoons cream
2 tablespoons parsley, chopped

Steps:

  • Pound the chops just a little, to about 3/4 in thick; season with salt and pepper, then dredge lightly in the flour.
  • Heat the oil and 1 TBS of the butter in a large skillet; sear the chops (about 2 minutes on each side), then remove to a plate.
  • Add the remaining butter to the skillet, and when it has melted, add the onions and cook 4 minutes, stirring occasionally.
  • Add the vermouth and the water; reduce heat and simmer for about 4 minutes.
  • Stir in the crushed bouillon cube and the capers; return chops to the pan and pour in any accumulated juices.
  • Reduce heat again to a gentle but steady simmer; cover and cook for about 6 minutes.
  • Turn the chops and cook an additional 5 minutes, covered, then remove them to a plate and cover with foil to keep warm.
  • Increase heat and bring to a boil, cooking until the liquid is reduced by half (1-2 minutes).
  • Remove from heat and stir in the cream and any accumulated juices from the waiting chops; mix well.
  • Serve sauce over chops, with parsley sprinkled over all.

1 ½ quarts water
5 tablespoons kosher salt
2 tablespoons white sugar
6 pork loin chops, 1/2 inch thick
½ cup olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, minced
½ cup balsamic vinegar
1 tablespoon butter
1 tablespoon olive oil
2 Vidalia onions, each cut into 8 wedges
2 pears, cored and each cut into 8 wedges
1 teaspoon salt

Steps:

  • In a large bowl, stir together the water, kosher salt, and sugar. Add pork chops to this brine, and let them soak for no more than one hour. Drain and discard the brine. Pat pork chops dry with paper towels.
  • In a shallow dish, stir together the olive oil, garlic, and rosemary. Place pork chops in the dish, and turn to coat. Cover, and marinate in the refrigerator for at least 1 or 2 hours.
  • Pour the balsamic vinegar into a small saucepan. Bring to a boil, and cook until reduced by 1/2, about 10 minutes. When the vinegar cools, it should be the consistency of syrup.
  • Melt butter with olive oil in a large skillet over medium-high or high heat. Add the onions and pears, and quickly brown being careful to keep the wedges intact. Once the onions and pears are browned, reduce heat to low, and cook for about 7 minutes, or until tender. Stir in the reduced vinegar and salt. The recipe can be prepared up to this point several hours before grilling.
  • Preheat the grill for medium-high heat.
  • Warm pears on a cool section of the grill (in the skillet), while placing the pork chops over the hot part. Cook pork for about 3 minutes per side, or to desired doneness. Remove to a serving plate, cover with aluminum foil and let rest for a few minutes. Uncover, top with the pear onion sauce, and serve.

4 lean center-cut pork chops, each 1 1/4 inches thick
Salt and freshly ground pepper to taste
1 tablespoon vegetable oil
1/2 cup finely chopped onions
2 teaspoons finely chopped garlic
2 teaspoons red-wine vinegar
1 cup fresh or canned chicken broth
4 tablespoons drained capers
1 tablespoon Dijon mustard
1 tablespoon tomato paste
1 tablespoon finely chopped fresh sage or 2 teaspoons dried
1 tablespoon butter
4 tablespoons chopped parsley

Steps:

  • Sprinkle the chops with salt and pepper.
  • In a skillet large enough to hold the chops in one layer, heat the vegetable oil. Add the chops and cook over medium-high heat for 7 minutes or until lightly browned. Turn and cook another 7 minutes or until done. Remove the chops, set aside and keep warm.
  • Pour off the excess fat from the skillet. Add the onions and garlic. Cook and stir until wilted. Add the vinegar and reduce by half. Add the chicken broth, capers, mustard, tomato paste and sage. Cook and reduce by half.
  • Remove the skillet from the heat and add any juices that may have accumulated around the pork chops. Swirl in the butter, check for seasoning.
  • To serve, spoon the sauce over the meat and sprinkle with parsley.

2 tablespoons vegetable oil
4 lean boneless pork chops
1 ½ teaspoons rosemary
¼ teaspoon garlic powder
½ cup water
2 tablespoons white wine vinegar
1 teaspoon sugar
1 bay leaf
2 (11.5 ounce) cans tomato juice
1 ½ tablespoons hot pepper sauce
salt and pepper to taste
2 (14.5 ounce) cans cut green beans, drained
1 (4 ounce) jar sliced mushrooms, drained

Steps:

  • Heat the oil in a large skillet over medium heat, and brown the pork chops on both sides. Season with rosemary and garlic powder. In a bowl, mix the water, vinegar, sugar, and bay leaf. Pour over the pork chops. Reduce heat to low, cover, and cook 10 minutes.
  • Pour the tomato juice into the skillet, and mix in the hot pepper sauce. Season pork chops with salt and pepper. Cover, and continue cooking pork 35 minutes, to an internal temperature of 145 degrees F (63 degrees C).
  • Remove the bay leaf from the skillet. Stir the green beans and mushrooms into the tomato juice mixture, and cook until heated through. Top pork chops with green beans and mushrooms, and cover with the tomato juice mixture to serve.
