Extra-virgin olive oil
1 onion, diced
2 stalks celery, diced
2 cloves garlic, smashed
Salt
2 pounds white fish bones, such as cod
1/2 pound shrimp shells
2 bay leaves
3 thyme sprigs
Extra-virgin olive oil
1 large onion, sliced
1 fennel bulb, sliced thin, reserve fronds for garnish
2 celery stalks, sliced thin on the bias
Kosher salt
3 cloves garlic, sliced thin
Pinch crushed red pepper
2 cups white wine
2 quarts light fish stock
Large pinch saffron
1 (28-ounce) can Italian plum tomatoes, crushed or pureed
1 bundle thyme
3 bay leaves
Extra-virgin olive oil
1 pound cleaned cod fillets, cut into 4 pieces
Kosher salt
16 littleneck clams
4 cups basic tomato broth
1/2 pound large shrimp, shelled and deveined, reserve shells for stock
1 1/2 cups cooked cannellini beans
2 cups escarole leaves
1/2 loaf ciabatta, cut into 4 (3/4-inch) thick slices
1 garlic clove
High quality extra-virgin olive oil

Steps:

  • Heat a stock pot, lightly coated with olive oil, over medium heat. Add the onion, celery, garlic and salt, to taste, and sweat for 3 to 4 minutes. Stir in the fish bones and shrimp shells and fill the pot with water. Add the bay leaves and thyme and bring to a boil. Lower the heat and simmer for 20 minutes. Strain the liquid into a bowl and reserve. Voila! Fishstock!
  • For the tomato broth:
  • Heat a large saucepan, lightly coated with olive oil, over medium heat. Add the onions, fennel, celery and a large pinch of salt. Cook the veggies until soft and very aromatic, about 8 to 10 minutes. Add the garlic and crushed red pepper and cook for another 3 to 4 minutes. Stir in the wine and reduce by half. Season with salt. It's important to season all along the way.
  • Add 2 quarts of fish stock and the saffron. Stir in the pureed tomatoes, thyme and bay leaves. Season with salt and cook for 20 to 30 minutes. The final broth should be a very pretty and flavorful soup. Taste and add salt, if needed. Remove and discard the thyme bundle and bay leaves. Reserve.
  • Heat a straight sided saute pan, lightly coated with olive oil, over high heat. Season the cod with salt, add it to the pan and brown it on all sides. Remove the cod from the pan to a large plate and reserve.
  • Drain the fat from the pan and add the clams and about 4 cups of the tomato broth. Cover and cook until the clams open, about 3 to 4 minutes. Add the shrimp and cod along with the beans and the escarole. Cover and cook until the cod and shrimp are cooked through and the escarole is wilted. If at any point the soup has cooked down too much, add more tomato broth.
  • For the toast:
  • Preheat grill. Place bread slices on grill and toast on both sides. Remove and rub with garlic. Drizzle with olive oil and cut in half.
  • To assemble:
  • Remove the cod, clams and shrimp from the pan and put in a bowl. Spoon the beans and escarole into serving bowls. Ladle in the tomato broth and arrange the cod, clams and shrimp on the beans and escarole. Drizzle with olive oil and sprinkle with fennel fronds. Serve 2 grilled bread slices with each serving.

I can't take credit for creating this recipe but I wanted to share as this dish is unbelievably good. It was created by the Food Dudes who run a Food truck here in Toronto. It is pretty easy to prep and can be sped up even more if you purchase premade components from the grocery store. It really comes down to how much time you have to get it all together.

1/2 cup mayonnaise
1 lime, juice and zest of, finely grated
1/2 teaspoon honey
4 cups packaged coleslaw mix (napa and green or purple napa and green) or 4 cups thinly sliced cabbage (napa and green or purple napa and green)
1 mango, peeled, pitted, julienned
1 carrot, peeled, julienned
1/2 field cucumber, seeded, julienned with skin
1 green onion, thinly sliced
1/2 cup cilantro leaf, chopped
1 avocado, peeled, pitted
4 garlic cloves, minced
1 green onion, thinly sliced
1 lemon, juice of
1 pinch kosher salt
1/2 teaspoon hot sauce (to taste)
1 cup all-purpose flour
1 teaspoon salt
3 large eggs
1/4 cup milk
3 cups Cap'n Crunch cereal
1 1/2 lbs boneless skinless cod, cut in to bitesize strips
vegetable oil (for frying)
12 small corn tortillas, warmed

Steps:

  • For slaw, in small bowl, whisk mayo, lime juice and zest, and honey.
  • In medium bowl, combine slaw or cabbage, mango, carrot, cucumber, onion and cilantro. Toss well. Add mayo mixture. Toss until well-mixed. Refrigerate until ready to use.
  • For guacamole, in bowl, combine avocado, garlic, onion, lemon, salt and hot sauce. Mash roughly with fork. If needed, place plastic wrap directly on surface and refrigerate for up to several hours until ready to use.
  • For cod tacos, put flour in shallow bowl. Season with salt and pepper.
  • In second bowl, whisk eggs and milk.
  • Put cereal in food processor. Process into fine crumbs. Place in shallow bowl.
  • Put cod pieces in flour, tossing to coat. Dip in egg mixture, shaking off excess. Put in cereal crumbs; toss until well-coated. Transfer to clean plate.
  • In large cast-iron skillet, heat 1-inch (2.5-cm) oil over medium-high. Add cod. Cook, turning once, until outside is golden and inside is just cooked through, about 1 to 2 minutes depending on thickness of your pieces. Drain on paper towels.
  • To assemble tacos, lay each tortilla on plate. Top with small pile slaw, dollop guacamole and about 3 pieces cod.

A personal spin on baked cod fish tacos. When beef or chicken gets tiresome, do something fishy! Omitted cilantro due to personal tastes, but feel free to add if desired.

1 pound cod fillets
1 tablespoon olive oil
1 lime, zested and juiced, divided
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon ground black pepper
½ cup sour cream
1 clove garlic, minced
1 pinch salt
1 small head red cabbage, shredded
½ teaspoon white vinegar
6 (7 inch) flour tortillas
1 tomato, diced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place cod fillets in a casserole dish and drizzle with olive oil and 1 tablespoon lime juice. Season with cumin, coriander, smoked paprika, cayenne, 1/2 teaspoon salt, and black pepper.
  • Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes. Remove from the oven and break apart the fish in the baking dish with 2 forks.
  • Meanwhile, combine sour cream, garlic, lime zest, 1/4 teaspoon lime juice, and a pinch of salt for crema in a bowl. Combine cabbage, 1/4 teaspoon lime juice, and vinegar for cabbage slaw in another bowl.
  • Warm tortillas in the microwave on default mode with a dampened paper towel draped over, 30 to 45 seconds.
  • Assemble tacos by layering each tortilla with cod, cabbage slaw, crema, and tomato. Serve hot.

Based on a recipe from Guy Fieri's book, Diners, Drive-ins and Dives: an All-American Road Trip...With Recipes! This celebrates the Blue Moon Café in Baltimore, Maryland. This is absolutely wonderful. My friend Eric, who loaned me this cookbook, slices the berries the night before and coats them with maple sugar and marinates them in the 'fridge overnight -- this makes them quite succulent by morning!

3/4 cup heavy cream
3 large eggs, lightly beaten
2 tablespoons sugar
1 teaspoon pure vanilla extract
3 cups Cap'n Crunch cereal
8 -10 slices bread, such as Texas toast or 8 -10 slices French bread
butter (for cooking)
1 cup heavy cream
2 tablespoons confectioners' sugar
1 teaspoon pure vanilla extract
2 cups fresh seasonal berries, assorted

Steps:

  • In large bowl, mix together cream, eggs, sugar, and vanilla. Whisk until well combined.
  • Crush cereal by placing in plastic storage bag and rolling over it with a rolling pin. Once it resembles cracker meal, transfer to a shallow dish.
  • Moisten a couple pieces of bread in cream mixture until soft but not completely soaked. Allow excess liquid to drip off bread, then press into the cereal crumbs to coat evenly. Set on a sheet pan and repeat with remaining slices.
  • Heat a large skillet or griddle over medium heat. Adding butter as needed, cook bread on both sides until it caramelizes, about 6 to 8 minutes total.
  • TOPPING:.
  • In large bowl using a hand mixer beat the cream, confectioners' sugar, and vanilla until soft peaks form.
  • Dollop on top of the French toast and serve with the berries.
