CRANBERRY SQUARES ~ FLAVORS OF CAPE COD
This recipe came from Cape Cod, in the cookbook "Flavors of Cape Cod" they have a streusel topping. To prepare Cranberry Squares using cranberry sauce, substitute one 8oz. can whole cranberry sauce for fresh cranberries, reduce sugar to 1/2 cup and orange juice to 1/2 cup.

Steps:
- Preheat oven to 350 degrees. In a bowl mix together flour, sugar, baking powder, salt and baking soda. Stir in orange juice, shortening and egg. Mix until well blended. Carefully fold in cranberries and nuts. Turn into greased 9 X 13 X 2" pan. Sprinkle with streusel topping. Bake 30-35 minutes. Serve warm.
- STREUSEL TOPPING: Mix together until crumbly 1/4 cup flour, 2 tablespoons butter or margarine, 1/3 cup sugar and 3/4 teaspoon cinnamon. Sprinkle over top of cooled bars.

CAPE COD (VODKA CRANBERRY) COCKTAIL
Steps:
- Gather the ingredients.
- In a highball glass with ice cubes, pour the vodka and cranberry juice.
- Stir well .
- Garnish with a lime wedge. Serve and enjoy.

CRANBERRY COOKIE BARS ~
Always looking for more recipes for Cranberries !!! Found this one in my Cape Cod cookbook. It is very good ! I only had a 13 1/2 by 9 1/2 inch glass baking pan, sooo they would be thicker in a regular 13x9" pan. Hope you enjoy ~ could try using other fruits, such as blueberries which is what I am going to try next time I make this !

- Preheat oven to 350 degrees Grease a 9 X 13 inch pan.
- In a bowl sift together sifted flour, baking powder and salt. (Yes sift the flour before measuring it)
- In a second bowl , cream butter and both sugars. Add eggs one at a time, beating until fluffy. Add vanilla. (or almond flavoring)
- Blend in dry ingredients. Stir in chopped cranberries and nuts. Spread in greased pan.
- Bake 30 minutes. When cool, cut into bars. Do not overbake ( Mine only took 24 minutes) because of the amount of sugar, cookie dough tends to become hard and stick to the pan if overbaked.

- Preheat oven to 350. Lightly grease a 9 X 13 or 11 X 11 pan.
- For crust, in a medium bowl, whisk together flour, sugars, and salt. Add the flavorings, then use your fingers, a pastry blender, or a mixer to cut in the butter, mixing until everything is crumbly. Stir in the nuts. Set aside about 1 1/2 cups of crumbs, then press the remaining crumbs into the bottom of the prepared pan. Bake the crust for 15 minutes.
- To make the filling, in a food processor, combine the cranberries, apples, raspberries and sugar and pulse a few times to chop the cranberries. Add the flour and melted butter, pulsing briefly to combine.
- Spread the filling over the crust. Crumble the reserved crust mixture over the filling. Bake for 35 to 40 minutes, until the mixture bubbles and the crumbs on top are golden. Remove from oven and cool completely. Dust with powdered sugar and cut into bars.

CAPE COD CRANBERRY COFFEE CAKE RECIPE - (4.3/5)

- Cream butter; add sugar gradually and beat well. Add eggs, one at a time and beat well after each addition. Mix dry ingredients together. Add to butter mixture alternately with sour cream, beginning and ending with dry ingredients. Add almond flavoring and 1/2 cup of nuts. Grease and flour tube or bundt pan. Pour 1/2 of batter in pan. Add 1/2 can of cranberries and spread evenly over batter. Add remaining batter, then remaining sauce and sprinkle with 1/2 cup nuts. Bake in 325 degree oven for 55 minutes or until cake tests done. Cool 5 minutes and remove from pan. Mix together topping ingredients and drizzle over warm cake. Note on cranberry sauce: cranberry sauce should be removed from can and placed in a small bowl and allowed to set while mixing cake. Stir sauce well before using.
CAPE COD CRANBERRY COOKIES
These cookies are made with dried sweetened cranberries and grated orange zest great combo. Hope you like them. I of course add some walnuts to em as well. Original recipe came from my Cookbook ~ Savoring Cape Cod and was submitted by Francine Kreisberg.

- 1. 1. Sift flour, baking soda, and cream of tartar. Set aside. 2. Beat Butter and sugar. Add extract, egg, orange juice and grated zest. Blend in four mixture. Add cranberries.
- 2. 3. If dough is too sticky, chill until easier to handle. Divide into 3 parts. Shape into long rolls. Wrap in wax paper or plastic. Chill or freeze. 4. When ready to bake, heat oven to 350 degrees. Slice cookie rolls and place slices on greased cookie sheets about 1 inch apart. Bake 10-12 minutes. Yield: 20-30 cookies per roll.
- 3. The first time I made these I sliced them to thin ~ also made the rolls to small width wise , sooo make a thicker roll cause guess what? They don't spread !!!! Carol's helpful hint for today ! haha
