If you like something sweet with your morning coffee, try this cherry coffee cake for a real treat. This would be good as a dessert with ice cream, too. The recipe is versatile in that you could use different pie fillings such as blackberry, blueberry, apple, pineapple or whatever you like.

1 1/4 cups all-purpose flour
1/2 cup white granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
8 tablespoons butter or 1 stick or 1/2 cup (melted)
1/2 cup milk
1 egg
1 teaspoon vanilla extract
1 20 ounce can cherry pie filling
1 teaspoon lemon extract
1/2 cup all-purpose flour
2 tablespoons butter (melted)

Steps:

  • Whisk together the flour, sugar, baking powder and baking soda. Stir in melted butter, milk, egg and vanilla extract.
  • Spray a 9 x 9 baking dish with cooking spray and spread the flour mixture in bottom of the dish evenly. Mix the lemon extract with the cherry pie filling and spread over flour mixture.

2 c flour
2 tsp baking powder
1/2 c butter, melted
1/2 c milk
1/2 - 3/4 c sugar........amount your choice
1/2 tsp salt
2 eggs
1 can(s) cherry pie filling

Steps:

  • 1. Gather all ingredients. pre-heat oven to 325F. Butter or spray baking pan.
  • 2. Mix flour,sugar,baking poeder,salt and melted butter with a FORK!
  • 3. Mix with the fork.. till crumbly.
  • 4. Take out 1/2 cup of crumbs... for topping later.
  • 5. Beat eggs and milk together and add to the the remaining crumbs. Spread this batter in a 9x13 baking pan.
  • 6. Cover all over with cherry pie filling from the can. Sprinkle with the 1/2 cup of reserved crumbs. Bake for 45 minutes... Thats it!...INDULGE ...

1 cup firm yogurt (like Greek yogurt, 270 g)
3/4 cup sunflower oil (185 ml)
2 large eggs
1 1/4 cups caster sugar (280 g)
1/4 teaspoon salt
2 tablespoons lemon juice
1/2 tsp lemon zest
2 cups flour (300 g)
3 tsp baking powder
2 cups fresh or frozen or canned cherries (pitted, 280 g)
powdered sugar for sprinkling

Steps:

  • Preheat oven to 320 F (160 C). Grease a round cake pan, 10 inches (24 cm) diameter, and line it with baking paper.
  • In a large bowl, mix Greek yogurt, oil, eggs, sugar, salt, lemon juice and lemon zest. Add flour and baking powder and whisk just until incorporated. Fold in cheerries and mix gently with a spoon. Pour mixture into the prepared cake pan.
  • Bake cake for about 30 minutes (or longer if using frozen cherries). Check whether the cake is done by inserting a wooden skewer or toothpick into the center of the cake - it should come out clean.
  • Let cool to room temperature before cutting. Serve sprinkled with powdered sugar.

For the Cake:
3/4 cup butter (salted, softened)
1 1/4 cups sugar (granulated)
4 eggs
1 tablespoon vanilla extract
1/2 cup sour cream
3/4 cup milk
3 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 (21 ounce) cans cherry pie filling
For the Streusel:
1/2 cup butter (melted)
1 teaspoon ground cinnamon
1 cup flour
3/4 cup brown sugar
1 teaspoon vanilla extract
For the Icing:
1/4 cup butter (salted, melted)
1 teaspoon vanilla extract
3 tablespoons milk
2 cups powdered sugar

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Combine the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Alternatively, use a large bowl and a hand mixer. Beat on medium-high speed until light and fluffy.
  • Beat the eggs in, one at a time, until each is incorporated.
  • Mix in the vanilla extract, sour cream, and milk until just combined.
  • Add the flour, baking powder, baking soda, and salt to the bowl, then beat on medium-low until completely combined. Be careful to not overmix-you can stop mixing once there are just a few streaks of dry ingredients. Switch to a silicone spatula, scraping down the bowl and folding until the ingredients are well combined.
  • Spray a 9-x 13-inch baking dish with cooking spray. Make sure to generously grease the sides as well as the bottom.
  • Pour the batter into the prepared baking dish, spreading into an even layer.
  • Pour the cherry pie filling across the top of the cake to evenly cover the top.
  • Gather the ingredients.
  • In a medium bowl, combine the flour, brown sugar, butter, cinnamon, and vanilla extract. With a rubber spatula or your hands, fold the ingredients together until a crumbly mixture forms.
  • Evenly distribute the streusel over the top of the cherry pie filling.
  • Bake until the streusel is browned and the cherry juices are bubbling, and a toothpick inserted in the middle of the cake comes out with a few moist crumbs clinging to it, 50 minutes to 1 hour.

1 ½ cups cherries, pitted and halved
2 tablespoons all-purpose flour
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
⅔ cup vegetable oil
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and lightly flour a 10 inch tube pan. Place cherries in a bowl and toss gently with 2 tablespoons flour. Set aside.
  • Stir together the flour, salt, baking powder, and cinnamon in a medium bowl. Beat together the oil, eggs, sugar, vanilla extract, and milk until smooth in a large mixing bowl. Stir in the flour mixture until smooth. Fold in the cherries. Pour batter into prepared pan.

1 cup sour cream
1/2 21-ounce can cherry pie filling
1/2 cup thinly sliced almonds (about 2 ounces)

Steps:

  • Preheat oven to 350°F. Butter 10-inch-diameter springform pan. Beat sugar and butter in large bowl until light. Add eggs, vanilla extract and almond extract and beat well. Sift flour, baking powder, baking soda and salt into medium bowl. Mix half of dry ingredients into butter mixture. Mix in sour cream, then remaining dry ingredients.
