Slow Cooker Candied Yams image

An easy and straightforward recipe for candied yams. Cooking in the slow cooker frees up your oven, especially during the holidays when you can't decide what to put in the oven first. Can be made 2 to 3 days in advance and reheated in the microwave.

5 cups Yam, raw
1 ¼ cups water
¾ cup pineapple juice
1 cup brown sugar
¼ cup salted butter, cubed
2 tablespoons vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Line a slow cooker with a slow cooker liner or spray with cooking spray.
  • Place yams in the bottom of the slow cooker. Top with water, pineapple juice, brown sugar, butter, vanilla, cinnamon, and nutmeg. Stir to evenly distribute sauce.
  • Cook on Low for 2 hours. Stir. Stir cornstarch and water together in a small bowl to make a slurry. Add to slow cooker and stir to incorporate. Cook until yams are fork-tender and sauce has thickened, about 1 more hour.

1 cup packed brown sugar
1 cup sugar
8 medium sweet potatoes, peeled and cut into 1/2-inch slices
1/4 cup butter, melted
2 teaspoons vanilla extract
1/4 teaspoon salt
2 tablespoons cornstarch
2 tablespoons cold water
Minced fresh parsley, optional

Steps:

  • In a small bowl, combine sugars. In a greased 5-qt. slow cooker, layer a third of the sweet potatoes; sprinkle with a third of the sugar mixture. Repeat layers twice. In a small bowl, combine the butter, vanilla and salt; drizzle over potatoes. Cover and cook on low for 5-6 hours or until sweet potatoes are tender., Using a slotted spoon, transfer potatoes to a serving dish; keep warm. Pour cooking juices into a small saucepan; bring to a boil. In a small bowl, combine cornstarch and water until smooth; stir into pan. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Spoon over sweet potatoes. , Sprinkle with parsley if desired.

6 to 7 sweet potatoes, peeled and cut into chunks
1 1/2 tablespoons cornstarch
4 tablespoons salted butter
1 cup packed brown sugar
1 teaspoon pumpkin pie spice
1/4 teaspoon cayenne
1 teaspoon vanilla extract
Juice of 1 orange
Pinch of kosher salt
Chopped walnuts, toasted, for serving
Chopped fresh parsley, for serving

Steps:

  • Toss the sweet potatoes with the cornstarch in a bowl to coat well. Add the mixture to a slow cooker and dot with the butter. Sprinkle over the brown sugar, pumpkin pie spice and cayenne. Pour in the vanilla, orange juice and 1/4 cup water. Season with salt. Place the lid on the slow cooker and cook on low, stirring once or twice, until the potatoes are tender, about 3 hours.
  • Toss the potatoes once more and transfer to a serving dish. Sprinkle with the walnuts and parsley and serve.

¼ cup unsalted butter, melted
2 teaspoons vanilla extract
¼ teaspoon salt
1 cup brown sugar
1 cup white sugar
4 pounds sweet potatoes, peeled and sliced
2 tablespoons cornstarch

Steps:

  • Combine butter, vanilla extract, and salt in a bowl. Mix brown sugar and white sugar together in another bowl.
  • Layer potatoes and sugar mixture in the bottom of a slow cooker. Pour the butter mixture over the top.
  • Cover and cook on Low until tender, about 6 hours.
  • Remove 1/3 of the cooking liquid from the slow cooker and pour into a saucepan; whisk in cornstarch. Bring to a boil and cook until thick, about 5 minutes. Pour over potatoes and serve.

6 sweet potatoes (peeled and sliced )
½ cup orange juice
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon salt
¾ cup brown sugar
2 cups mini marshmallows

Steps:

  • Spray slow cooker with nonstick cooking spray.
  • Spread chopped sweet potatoes in the bottom of the slow cooker.
  • In a medium mixing bowl, combine orange juice, vanilla, cinnamon, nutmeg, salt and brown sugar.
  • Pour over the top of the sweet potatoes and place lid on the slow cooker.
  • Cook on low for 4-6 hours or high for 2-3.
  • Once cooked, pour all the contents from your slow cooker into a baking dish.
  • Top with marshmallows and broil in oven until marshmallows are golden brown (mine took about 45 seconds!).
