MY GRANDMA'S CANDIED YAMS WITH PINEAPPLE



My Grandma's Candied Yams with Pineapple image

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
  • Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.

2 1/2 cups sugar
1/4 cup light corn syrup

Steps:

  • Bring pineapple juice, sugar, and corn syrup to a boil; cook on medium heat 4 minutes. Add pineapple slices; simmer on low heat, turning frequently, 45 minutes or until translucent.
  • Transfer slices to a wire rack set over a baking sheet and bake at 200 degrees until pineapple caramelizes and is less sticky, 60 to 90 minutes. Let cool on rack.

My mom always makes these type of sweet potatoes, regardless what others we have for the Holidays. Yesterday we had them with our Turkey Dinner...Yum!

3 - 4 large sweet potatoes - peeled and sliced 3/4 inch thick
1/2 tsp salt for potatoes
1/2 c + 2 tablespoons butter
1 1/2 c brown sugar
1/4 c sugar
3/4 tsp cinnamon
1/2 tsp nutmeg
pinch salt
1 small can - pineapple chunks - drained- reserving 1/4 cup juice
1 tsp vanilla
pecans - optional- we didn't add them this time

Steps:

  • 1. In a medium saucepan, add potatoes and 1/2 tsp salt, cover with water. Bring to boil, then reduce to simmer. Cook until fork tender and drain. In another saucepan, add the butter, brown sugar, pinch salt, pineapple juice, cinnamon and nutmeg. Bring to a boil and simmer until thickened some - won't be real thick, more like a glaze. If you want a thicker glaze, add a small amount of corn starch to the pineapple juice before adding. Once sauce is to desired thickness and potatoes are cooked. Add the drained pineapple to the glaze and cook until heated through. Stir in the vanilla. Gently toss the sweet potatoes with the glaze, being careful not to break up potatoes too much. Heat through for a few minutes and pour into a serving dish. Sprinkle with pecans if using. Serve immediately.

My family's recipe. I don't remember a holiday as a kid that this dish was not served. It's just not Thanksgiving or Christmas without Candied Sweet Potatoes.

5-6 large sweet potaotes
1 20 oz can, crushed pineapple
1 stick butter, melted
1/2 tsp cinnamon
couple dash(es) nutmeg
1 pinch allspice
1 orange, zested
1 - 1 1/2 c packed, brown sugar
1 large bag, marshmallows (large or minature) just be careful if too many are added to top of sweet potatoes they will overflow into oven.

Steps:

  • 1. Scrub outside skin of sweet potatoes. Place sweet potatoes in large pan, and cover with water. Place pan on med-high heat and cover with lid. Bring potatoes to a boil, turn down to med heat and cook until fork tender. When tender remove from water, set aside until cool enough to handle.
  • 2. In small mixing bowl combine brown sugar, cinnamon, nutmeg, allspice and oranage zest. Set aside.
  • 3. Preheat oven 350 degrees F. Place butter in 9x13 baking dish and place in oven to melt. Remove from oven when melted. Remove skins from sweet potatoes. Slice sweet potatoes into several slices lengthwise; layer potato slices in baking dish with melted butter. Sprinkle brown sugar mixture over sweet potato slices. Spoon crushed pineapple over brown sugar. Place in oven and bake until edges of pineapple begin to brown. Remove from oven and cover top with marshmallows. Return to oven and bake until marshmallows begin to brown. Keep an eye on marshmallows, as they will burn easily.

1 pineapple
4 cups water
6 cups superfine sugar

Steps:

  • Preparing the Pineapple
  • If you are using a small Victoria pineapple, leave the greens attached and remove the skin, but keep the fruit whole. Otherwise, peel the pineapple, taking care to remove all of the eyes, then cut the pineapple crosswise into slices 1/2 inch thick. Remove the center with a round cutter. Place the whole pineapple in a deep bowl or arrange the slices in a single layer in a large, wide nonreactive dish.
  • Soaking in the Syrup
  • In a medium saucepan, combine the water and 3 cups of the sugar and bring to a boil over high heat. Pour the boiling syrup over the pineapple, cover, and set aside overnight.
  • Cooking and Steeping
  • The next day, pour the syrup into a large saucepan, add 1 cup sugar, and bring to a boil. Add the pineapple to the syrup, boil for 3 minutes, then remove from the heat, cover, and set aside overnight. Repeat this process two more times over two more days, adding 1 cup sugar to the syrup each time, then allow the pineapple to steep in the syrup for 1 week at room temperature. Remove from the syrup and enjoy!

1 1/2 cups macadamia nuts (about 6 ounces)
27 store-bought sugar cookies (6 3/4 ounces), such as Pepperidge Farm Bordeaux
1/4 cup (1/2 stick) unsalted butter, melted
1 cup fresh pineapple juice
1/2 teaspoon finely grated orange zest, plus 1/4 cup fresh orange juice
1 1/2 cups plus 1 tablespoon sugar
3 tablespoons cornstarch
1/2 teaspoon coarse salt
1/2 teaspoon pure vanilla extract
4 cups chopped fresh pineapple
1 1/2 cups cold heavy cream

Steps:

  • Preheat oven to 375 degrees. Pulse 3/4 cup macadamia nuts in a food processor until they resemble coarse crumbs; set aside in a small bowl. Pulse cookies in a food processor until they resemble coarse crumbs. Add cookie crumbs and melted butter to nuts; stir to combine. Press mixture into a 9-inch pie plate. Bake until golden, 8 to 10 minutes. Transfer to a wire rack; let cool completely.
  • Put pineapple juice, orange zest and juice, 1/2 cup sugar, cornstarch, salt, 1/4 teaspoon vanilla, and the chopped pineapple into a medium saucepan. Simmer, stirring occasionally, over medium heat until thick and transparent, 5 to 7 minutes. Let cool 5 minutes. Pour into crust. Refrigerate 1 hour (up to overnight).
  • Heat 1 cup sugar and 1/4 cup water in a small saucepan, stirring to dissolve sugar. Cook over medium heat until thickened and golden brown, about 5 minutes. Remove from heat. Stir in remaining 3/4 cup nuts. Spread nuts onto a baking sheet lined with parchment, and let cool completely. Coarsely chop.
  • Beat cream with remaining tablespoon sugar and 1/4 teaspoon vanilla until soft peaks form. Spread whipped cream over pie, and refrigerate 30 minutes. Serve sprinkled with candied nuts.

1/2 teaspoon roasted chili powder or red chili flakes
2 tablespoons agave nectar
2 teaspoons kosher salt
3 cups frozen pineapple chunks, or fresh pineapple cut into 1⁄2-inch chunks and frozen overnight
3⁄4 cup full-fat coconut milk
3 tablespoons agave nectar
2 teaspoons fresh lime juice
1⁄4 teaspoon kosher salt
Dark rum, as a float, if desired

Steps:

  • For the candied coconut: In a dry skillet or saucepan, toast the coconut over medium-low heat, stirring frequently, until the flakes are mostly golden in color. Remove from the heat and immediately add the chili powder, agave nectar and salt. Stir until the mixture is combined, then let the coconut cool completely before transferring to a bowl.
  • For the pineapple soft serve: In a food processor or blender, combine the frozen pineapple, coconut milk, agave, lime juice and salt and pulse until the pineapple is finely chopped. Then process or blend, stopping to scrape down the sides of the bowl/jar as needed, until smooth and airy, 3 to 4 minutes. Serve immediately or transfer to a resealable top plastic bag and freeze until just firm, about 20 minutes. Trim off the corner of the plastic bag and pipe the mixture into serving bowls, soft serve-style. Garnish with the candied coconut and a float of dark rum if desired (and 21+).

This is for 8 serving but go ahead and make it for a crowd. Fattening but YUMMY! This is served on top of a hot slice of pineapple. So it's warm, cold, sweet, crunchy, and creamy good! Or you can chop the grilled pineapple and place it on top.

6 tablespoons orange marmalade

20 chunks fresh pineapple*
3/4 cup packed brown sugar
Ingredients for the Honey-Sriracha Dipping Sauce
1/4 cup honey
2 teaspoons Sriracha**
2 teaspoons soy sauce
4 teaspoons fresh lime juice
1 tablespoon finely sliced fresh cilantro stems***

Steps:

  • Preheat oven to 400˚F. Line a sheet pan with foil. Cut bacon strips in half width-wise.3. Put brown sugar on a large (dinner-size) plate.4. Wrap each pineapple chunk with bacon. Roll each bacon wrapped pineapple in brown sugar to coat. Pat a bit more sugar, if needed, to completely coat. Place rolls, seam side down, on prepared pan. Candied pineapple, according to a quick informal poll of my friends, is typically thought of as dried pineapple that has been sugared. My recipe was about as dry as a Texas summer (for those not from Texas, picture rainforest-like humidity). What makes my candied pineapple different from non-candied pineapple is that the juice is extra sweet and the outside of the pineapple has an irresistible glossy shine. Aside from topping a cupcake, candied pineapple could be: Eaten all on its own Used in or on top of a meat dish Mixed into a fruit salad, Thrown on the grill (I haven't tried it yet)!

1 cup(s) sugar
24 - pineapple rings (i used the kind from the can, but fresh pineapple would also work.)

Steps:

  • In a large, heavy pot, bring water and sugar to a boil.
  • Add pineapple rings.
  • Let the mixture boil for about 5-10 minutes. Be sure that all of the pineapple rings are under water.
  • Reduce the heat to medium and let it continue cooking for about 30 minutes. The liquid will thicken and become a syrup.
  • Remove from heat but let the pineapple remain in the pot as they cool for about 10 minutes.
  • Remove to a sheet of parchment paper to cool completely.
  • The syrup remaining in the pan can be saved and used in other dishes.

SWEET AND CHEWY CANDIED PINEAPPLE RINGS

This Candied Pineapple recipe is a classic that produces sweet, chewy candied pineapple that's perfect for using in baking recipes or for eating on its own.

2 cans sliced pineapple rounds in heavy syrup(20 oz each)
2.5 cups sugar, plus more for coating
1/4 cup light corn syrup

Steps:

  • Drain the pineapple cans and reserve the juice. Measure out 1.5 cups of juice, and if for some reason you're short, add a little water to make 1.5 cups.2. Pour the juice into a large, wide skillet, add the 2.5 cups of sugar and the corn syrup, and turn the heat to medium. Stir until the sugar dissolves and bring the mixture to a slow boil for 4 minutes.3. Turn the heat down to low and add the pineapple rings.
  • Try to fit them in a single layer, but if there isn't enough room, space them out as much as possible.4. Boil the pineapple in the sugar syrup and turn the pieces frequently to make sure they're covered and not sticking together. Cook them for about 45 minutes, or until they are entirely translucent. If it is hard to tell, take the pan off the heat for a moment or two until the bubbles die down and you can see the rings clearly.5. Once translucent, remove the pineapple from the sugar syrup and place them on a drying rack to dry off. The syrup can be discarded, or you can save it to use as a drink mixer or to top pancakes or waffles.6. If you live in a dry climate, the rings can be left out overnight to dry. If you live in a moist climate, or want to speed the process up, place the drying rack in an oven set to 200 degrees F for about 30 minutes, or until the pineapple does not feel sticky to the touch.7. Allow them to cool, then roll the rings in granulated sugar to serve. Store Candied Pineapple in an airtight container at room temperature for up to a week.
  • Depending on the humidity, it might become sticky and need to be re-rolled in sugar before serving.
