I clipped this recipe 20 years ago. It's a great substitute for candied sweet potatoes.

Number Of Ingredients 7

2 tablespoons butter
2 tablespoons brown sugar
3 tablespoons orange juice
2 teaspoons honey
1/8 teaspoon salt
2 medium parsnips, peeled and sliced
1/2 teaspoon grated orange zest

Steps:

  • In a skillet, melt butter over medium heat. Stir in the brown sugar, orange juice, honey and salt until smooth. Add parsnips. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until parsnips are tender. Add orange zest.

Number Of Ingredients 5

2 pounds parsnips, trimmed
1/4 pound butter
2 tablespoons honey
1/4 teaspoon ground nutmeg
Minced fresh parsley

Steps:

  • With a vegetable peeler, peel parsnip. In a Dutch oven cook parsnips in a small amount of salted boiling water for 25 minutes or until tender; drain. Let stand until cool enough to handle., Cut parsnips into slices or julienned strips. In the same pan, melt butter. Stir in honey and nutmeg. Add parsnips and stir to coat. Cook until lightly browned. Sprinkle with parsley.
