OLD-FASHIONED RED CANDIED APPLES
These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that. - Put on high heat with candy thermometer positioned in center of fluid level.
- While it is boiling, thoroughly wash and dry your apples, and spear with the sticks.

DONNA'S CANDIED APPLES
Steps:
- In a medium nonstick pan, dissolve the cinnamon candies in water over low heat. Peel, core and cut the apples in 1/2 lengthwise. Once the candy has dissolved arrange the apples, flat side down, in the pan. Cook on low to medium heat until the apples are tender; turning often, about for about 45 minutes. The apples should be the color of the candy. When ready transfer to a serving platter and let cool.
- Once apples have cooled dollop 1 teaspoon of the Cream Cheese Topping on each apple. Garnish with a small piece of fresh parsley or a fresh mint leaf. Refrigerate until serving.
- Add all the ingredients to a small bowl and thoroughly combine with a hand-held mixer. Topping should be stiff. Refrigerate until ready to use.

- Wash and dry the apples and remove the stems. Insert a wooden twig into each apple about halfway through. Line a baking sheet with parchment paper.
- Add the sugar, corn syrup, 1/2 teaspoon of the blue food coloring, 1/2 teaspoon of the red food coloring and 1 cup water to a small saucepot and stir together. Attach a candy thermometer to the pot and bring the mixture to a boil. (Do not stir once the sugar starts to boil.) Boil until the mixture reaches 295 degrees F, 15 to 20 minutes. Immediately remove from the heat and add the remaining 1/2 teaspoon blue food coloring and 1/2 teaspoon red food coloring, using a wooden skewer to swirl a figure eight in the pot and being careful not to blend.
- Immediately dip the apples into the mixture, carefully tilting the pot as necessary to coat. Allow any excess coating to drip back into the pot, then place the apples on the parchment-lined baking sheet to set, about 1 hour.

- Place lollipop sticks or wooden craft sticks into each apple at the stem end. Set aside.
- In a heavy saucepan, mix together the sugar, golden syrup and water. Bring to a boil, then reduce the heat to medium and continue to cook until the mixture reaches 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. This will take a good 45 minutes!
- Remove the sugar mixture from the heat and stir in the black currant syrup. Quickly dip all of the apples, holding them by the stick. You can let them cool by inserting the other end of the stick into a thick sheet of foam board. If that is not available, set the coated apples onto waxed paper or aluminum foil. CANDIED APPLES

- In a small saucepan set over medium heat, combine sugar, corn syrup, and 1/2 cup water. Gently stir with a fork just until sugar is dissolved. Raise heat to medium-high and bring to a boil.
- Add cinnamon candies to pot and continue boiling, washing down the sides of the saucepan with a wet pastry brush occasionally to prevent sugars from crystallizing.
- When mixture registers 302 degrees (hard crack) on a candy thermometer, remove from heat and stir in food coloring. Let stand until candy stops boiling and settles in bottom of saucepan, 1-2 minutes.
- Line a rimmed baking sheet with foil and coat with nonstick cooking spray. Insert candy apple sticks or wooden craft sticks into stem end of apples. Carefully tilt pan and dip apples into candy, swirling to coat all sides. Allow excess candy to fall back into saucepan; transfer apples to prepared baking sheet to cool and harden.
CIDER-POACHED APPLES WITH CANDIED WALNUTS, RUM CREAM, AND CIDER SYRUP

- Poach apples:
- Peel top third of each apple and rub peeled part with lemon half. Put apples in a wide 5-quart heavy pot and add cider and brown sugar. Bring to a boil, covered, over medium heat (this will take 25 to 30 minutes). Remove from heat and cool apples in cider, covered, about 1 hour.
- Make candied walnuts:
- Preheat oven to 450°F with rack in lower third.
- Stir together all ingredients with a pinch of salt, then spread on a small baking sheet into a 10-inch round. Bake, rotating sheet halfway through, until golden, 5 to 6 minutes. Transfer to a rack and loosen nuts, then cool (nuts will crisp as they cool).
- Whip cream and assemble dessert:
- Beat cream with sugar, rum, and vanilla using an electric mixer until it just holds soft peaks.
- Drain apples, reserving poaching liquid for another use. Put an apple on each plate and sprinkle with candied walnuts. Dollop cream next to each apple and drizzle (bottled) boiled cider all over.
AUTUMN SALAD WITH APPLES AND CANDIED WALNUTS
I got this recipe from and friend and it is my favorite salad. I like to use a lot more sugar than the recipe calls for - About 2-3 tablespoons, but I'll leave the recipe as written and you can sweeten to taste. I also like to use pecans in place of the walnuts.

- Combine walnuts and butter in glass baking dish.
- Bake 15 minutes, stirring every 5 minutes.

MARSHMALLOW WEB CANDIED APPLES
Steps:
- Lay a large piece of parchment paper on a work surface. Insert a wooden stick into each apple at the stem end.
- Combine the sugar, corn syrup and 1 cup water in a saucepan fitted with a candy thermometer. Bring to a boil and cook until it registers 302 degrees F. Remove from the heat and allow the bubbles to subside, about 2 minutes. Add 1 drop of soft gel red food coloring and the entire bottle of cinnamon candy flavoring oil, then stir well. Again, allow the bubbles to subside.
- Hold an apple by the stick and tilt the pan so the candy pools to one side. Dip the apple and swirl to fully coat, then transfer to the parchment. Repeat with 3 more apples. Stir in enough soft gel blue food coloring to the remaining candy to create a deep purple. Dip the remaining apples in the same manner. Let the apples stand until the candy is hardened, about 5 minutes.
- For the marshmallow web, microwave the mini marshmallows in a microwave-safe bowl for 30 seconds at 100 percent power. Stir until the marshmallows lose their shape. Let cool slightly, then pick up some of the marshmallow between your thumb and forefinger. Use your other thumb and forefinger to stretch the marshmallow into strands, and quickly wrap the stretchy strands around the apples. Continue with the remaining marshmallows and apples.
CANDIED APPLES I
This recipe produces a very red, shiny candied apple. You can substitute a drop of cinnamon oil for the candies. After the apples are cooled, you can wrap them in colored plastic wrap and tie shut with curling ribbon. Makes a nice Halloween party treat.

CROCK POT CANDIED SWEET POTATOES W/ APPLES
I came up with the recipe as a variation on my mom's recipe (Recipe #399245 ). This one uses fresh sweet potatoes and it is cooked in a crock pot so you have more time to fix other dishes during busy holiday dinners. I also cut back slightly on the maple syrup to cut some sweetness and added pumpkin pie spice for some depth.

- Wash and peel sweet potatoes. Cut into eighths.
- Place sweet potatoes in crock pot.
