Bow Ties With Bacon image

This is a simple but flavorful pasta with just a hint of cream in the tomato-based sauce. It's great for those nights when you're pressed for time.

6 slices bacon, diced
1 medium onion, finely chopped
2 (14 ounce) cans diced tomatoes
1 lb bow tie pasta
1/4 cup heavy cream
1 tablespoon dried parsley
1 1/2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 12" skillet over medium heat, cook bacon until browned. Remove bacon to paper towels to drain. Drain all but 2 tablespoons of the bacon fat and cook until tender.
  • Add tomatoes and liquid, sugar, salt, & pepper. Over high heat, bring to a boil. Reduce heat to low; cover and simmer for 15 minutes to blend flavors.
  • Meanwhile, cook bowtie pasta according to package directions; drain. Stir cream and parsley into tomato mixture; heat through (do not boil or mixture may curdle).
  • To serve, spoon sauce over pasta, sprinkle with bacon and toss.

1 pkg center cut bacon
1 pkg club crackers,
kraft grated parmesan cheese
cooking spray

Steps:

  • 1. Wrap tightly 1 slice bacon around cracker. NOTE: May cut center cut bacon in half or use regular sized bacon cut in half or thirds. (Less fat/makes more)
  • 2. Place on lightly sprayed cookie sheet.
  • 3. Bake @ 375 degrees for 20-25 minutes or until bacon is done. (Watch carefully to prevent burning) Remove from pan and place on absorbent paper towels.
  • 4. While still hot, sprinkle with Parmesan cheese.

4 slices of bacon, chopped fine
2 tablespoons olive oil
1 large onion, chopped
1/2 pound large farfalle (bow tie pasta)
1 tomato (about 1/2 pound), chopped
1/4 cup water
1/4 teaspoon dried hot red pepper flakes, or to taste
1/3 cup finely chopped fresh parsley leaves
1/4 cup freshly grated Parmesan

Steps:

  • In a deep skillet cook the bacon over moderate heat, stirring, until it is crisp and transfer it with a slotted spoon to a bowl. Pour off all but 1 tablespoon of fat from the skillet, add the oil, and in the fat cook the onion over moderate heat, stirring, until it is golden brown. In a kettle of salted boiling water cook the pasta until it is al dente. While the pasta is cooking, stir the tomato into the onion mixture with the 1/4 cup water, the red pepper flakes, and salt to taste, simmer the sauce, stirring, for 5 minutes, and stir in the parsley and the bacon. Drain the pasta well, add it to the sauce, and toss it well. Add the Parmesan and toss the pasta well.
