EASY SPANISH RICE



Easy Spanish Rice image

Cook a pot of rice using chicken broth, tomato sauce, and a few seasonings to make this quick and easy Spanish Rice. It's the perfect base for rice bowls or a delicious side dish to your favorite Mexican entrees!

1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 cup white rice
1 cup (APPROXIMATELY) chicken broth or stock (see NOTES below)
1 cup (APPROXIMATELY) tomato sauce or puree (see NOTES below)
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 cup diced fresh tomatoes (seeded & drained (optional))

Steps:

  • In a medium saucepan set over medium heat, melt together olive oil and butter. Add rice and stir to coat with oil/butter. Cook, stirring frequently, for about 2 to 3 minutes, until rice is toasted.
  • Stir in chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes (if using). Increase heat to high and bring to a boil, stirring occasionally. Stir well, reduce heat to low, place lid on pot, and cook at a gentle simmer for 20 minutes (or whatever amount of time is directed on your bag of rice; see NOTES below). If rice is not quite tender or liquid is not absorbed after 20 minutes, replace lid and cook for 2 to 4 minutes longer. Remove from heat, leave covered, and allow to rest for a few minutes. Fluff rice with a fork and serve.

3 tbsp unsalted butter
2 cups uncooked long grain white rice
1 medium onion, diced
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp dried oregano
4 cups chicken stock
15.5 ounce can fire roasted diced tomatoes, with juices
1 bay leaf
salt and pepper

Steps:

  • Heat a large skillet over medium high heat and melt butter.
  • Add in rice and cook until lightly browned, stirring frequently, 2-3 minutes. Add in onion and saute for 2-3 more minutes, stirring frequently or until slightly golden brown.
  • Add in garlic, cumin, chili powder and oregano. Saute for one minute. Pour in the chicken stock, fire roasted tomatoes and bay leaf.
  • Bring to a boil then reduce to a simmer. Cover and simmer for 15-20 minutes or until the rice is tender. (Refer to the back of your rice, some cook times are shorter or longer depending on what rice you choose)
  • When the rice is done fluff with a fork and season with salt and pepper to taste. Serve immediately!

2 tablespoons chopped onion
1 ½ cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa

Steps:

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

This is how we Mexicans from California make our rice. We call it Spanish rice, not mexican rice! I didn't hear the term "mexican rice" until I moved to the midwest. This is how all of my family make the rice, aunts and grandmother alike. We don't put in peas or carrots like I have seen from other recipes. I was told by my sons...

1 c raw regular long grain white rice
1/2 can(s) small 8 oz can tomato sauce
1/2 tsp ground cumin
1 tsp garlic salt
1/2 tsp ground oregano
2 c water
1/8 c chopped fine onion
1/8 c cooking oil doesn't matter what kind

Steps:

  • 1. You want to make rice in a heavy bottomed fryin pan and have a tight fitting glass lid. Place cooking oil in pan with raw rice, use a medium heat to brown the rice, then add the onion making sure all rice/onion is coated with oil. When rice has turned white you add the 1/2 can of tomato sauce, it should be sizzling by this time.
  • 2. When the rice and tomato sauce are sizzling, you add the 2 cups of water and all the spices, stirring until well mixed. When rice mixture is bubbling you lower the heat to simmer, covering with glass lid. cook on low heat for 15 minutes. DO NOT LIFT LID!!!
  • 3. When the 15 minutes are completed, turn off heat and let sit for 5 minutes. Remove lid and use spatula to turn rice from bottom to top. Rice is done and ready to eat!
  • 4. As you can see the rice should be dry...not sticky(too much water) or gummy(someone lifted the lid) bright red(too much tomato sauce)or almost white(too little tomato sauce)there is also no brown onions or brown rice(browned too long)

This Spanish Rice recipe is quick, easy and has so much flavor packed into every single bite. It's perfectly fluffy, uses just a few simple ingredients and tastes just like it came from your favorite restaurant.

2 tablespoons Olive Oil (can substitute any cooking oil)
2 cups Long Grain White Rice
1/2 small Yellow Onion (or 1/4 cup diced, can substitute white)
1 tsp Salt
3 cups Chicken Broth (can substitute vegetable broth)
1 cup Salsa (your favorite brand)
1 large Lime (cut into segments)

Steps:

  • In a large frying pan on medium heat, add the oil and the rice. Stirring occasionally, cook the rice until golden brown, or about 3-5 minutes.
  • Add the diced onion and salt and cook for another 1-2 minutes, stirring occasionally.
  • Add the chicken broth and salsa and stir. Bring the mixture up to a boil, then cover with a lid and reduce heat to low. Keep the rice at a low simmer for 20 minutes, without removing the lid if possible. After 20 minutes, lift the lid and check your rice but do not stir. You may need to cook for up to 5 more minutes, or until all of the liquid has absorbed and the rice is cooked.
  • Once cooked completely, turn the heat off and let it sit for 10 minutes, then lightly fluff with a fork and squeeze the fresh lime juice on the rice before serving. Enjoy!

1 pound ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 garlic clove, minced
1 tablespoon chili powder
1 bottle (32 ounces) tomato or vegetable juice
1 cup uncooked long grain rice
1/2 teaspoon salt

Steps:

  • In a skillet, brown ground beef; drain. Stir in the onion, green pepper, garlic and chili powder. Cook and stir until the vegetables are tender. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until the rice is tender and most of the liquid is absorbed.
