Mock Colada image

Turn your favorite coconut-flavored seltzer into a bubbly virgin pina colada.

2 tablespoons freshly squeezed lime juice
1/2 cup pineapple juice
2 tablespoons coconut milk
1 tablespoon honey
1/4 cup coconut-flavor seltzer
2 maraschino cherries
2 small wedges fresh pineapple

Steps:

  • Add 3 to 4 ice cubes to a cocktail shaker, plus the lime juice, pineapple juice, coconut milk and honey. Cover and shake to dissolve the honey and chill the drink. Strain into a 15- to 20-ounce hurricane glass filled with crushed ice. Top off with the seltzer. Spear the maraschino cherries and pineapple wedges on a cocktail pick for the garnish.

1 liter cachaça
1/2 cup dried butterfly pea flowers
1 14-ounce can sweetened condensed coconut milk
1 14-ounce can coconut milk
3 ounces orange juice
3 ounces white rum
1/2 ounce white rum
1/4 ounce orange curaçao
3/4 ounce orange juice
1/2 ounce lime juice
1/2 ounce cinnamon syrup
Mint sprig, for garnish

Steps:

  • Make the butterfly pea cachaça: Pour the cachaça into a large container; add the butterfly pea flowers and stir vigorously. Let steep, stirring occasionally, until the cachaça turns deep purple, about 24 hours. Strain.
  • Make the coconut magic: Combine both coconut milks, the orange juice and rum in a blender. Process until smooth.
  • Make the cocktail: Combine 1 ounce butterfly pea cachaça, 1/2 ounce coconut magic, the rum, curaçao, orange juice, lime juice and cinnamon syrup in a cocktail shaker with ice. Shake well.
  • Strain the drink into a glass filled with crushed ice. Garnish with a mint sprig and decorate with a plastic king cake baby.

3 cups cooked rice

1 cup sliced green bell pepper
1 cup sliced onion

2 tablespoons freshly squeezed lemon juice
1 tablespoon chili powder
2 teaspoons fine salt
1/2 teaspoon garlic powder
1/2 teaspoon hot sauce
3 tomatoes, cut into wedges
1 1/2 cup corn chips, crushed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately.

2 ounces of crushed pineapple
1/2 cup of BACARDI® Rum
5 cups of ice

  • 1. Blend together BACARDI® Mixers Pina Colada mix, BACARDI® Rum, strawberries and pineapple.
  • 2. Add ice and blend for 45 to 60 seconds or until uniform.
