2 tablespoons bacon drippings or 2 tablespoons olive oil
1/4 cup onion, diced
1/4 cup green sweet pepper, diced
1 lb russet potato, thinly sliced
3/4 lb sweet potato, peeled and thinly sliced
2 tablespoons water
1 teaspoon seasoning salt (I like a cajun seasoned salt)
1 lb smoked sausage, cut into 1-inch slices

Steps:

  • Add the bacon drippings or olive oil to a large skillet. Preheat over medium heat until the drippings or oil is just hot. Add the diced onion and diced green sweet pepper. Cook the onion and pepper until they're tender.
  • Add the unpeeled, sliced russet potatoes, the sliced sweet potatoes and water to the vegetables in the skillet. If adding sausage, stir it in now. Sprinkle the mixture with the seasoning or seasoned salt.
  • Cover and cook over medium heat for 12 to 15 minutes or until potatoes are tender, turning potatoes once or twice.

3 slices bacon, chopped
1 small red bell pepper, chopped (1/2 cup)
1 bag (1 lb 4 oz) refrigerated cooked diced potatoes with onions
1 teaspoon seasoned salt
2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 cup shredded Cheddar cheese (4 oz)
2 medium green onions, chopped (2 tablespoons)

Steps:

  • In 12-inch nonstick skillet, cook bacon over medium heat 3 to 4 minutes, stirring occasionally, until crisp. Remove bacon with slotted spoon, reserving drippings in skillet. Drain bacon on paper towels.
  • Stir bell pepper, potatoes and seasoned salt into drippings. Cover; cook over medium heat 14 to 16 minutes, stirring occasionally, until potatoes are golden brown.
  • Stir in chicken. Cover; cook 2 to 3 minutes or until hot. Top with cheese, bacon and onions. Cover; cook 1 to 2 minutes or until cheese is melted.

One time when we went to Silver Dollar City they had something similar to this there, but it had sausage in it. I came up with my version minus the sausage to be used as a side dish.

Number Of Ingredients 7

2 large sweet potatoes
2 or 3 large baking potatoes (you want about an equal amount of each type of potato)
1 med or large green pepper/red pepper
1 large sweet onion
1 stick butter or marjarine
4 tsp salt (more if needed)
1 tsp pepper

Steps:

  • 1. Peel all potatoes. In large pan fitted with a lid, melt the stick of butter/marjarine on low heat. While butter is melting, cut all potatoes into chunks (whatever your size preference, but the larger the longer to cook).
  • 2. Add potatoes to melted butter and mix well to coat. Cut peppers and onion into chunks as well and add to potatoes. Again, mix to coat.
  • 3. Cover pot over med/low heat to prevent scorching and stir occasionally. Test for tenderness of potatoes. Remove lid when tender to brown slightly if you wish.

Whole family loves this recipe. Yum. I made this for a dinner (using only butter) serving 80,(of course had to adjust the amounts) and had lots of compliments. Don't be afraid to try it different ways with the optional ingredients, only gets richer tasting.

2 large redskin potatoes
2 large yellow (yukon gold) potatoes
2 large carrots,chunked
2 large stalks of celery, cut up
2 c water
1 tsp garlic powder
1 tsp parsley flakes
4 Tbsp butter, melted
1 c velveeta cheese shreds (optional)
2 Tbsp real bacon bits (optional)
1/4 c helman's mayonaise (optional)
salt and pepper to taste

Steps:

  • 1. Wash Vegetables, cut and place in 1 qt. saucepan. Bring to boil and boil until fork tender. (approx. 10 min.)Drain.
  • 2. With potato masher or fork mashed this all together roughly, leaving it in large lumpy pieces.
  • 3. Sprinkle remaining ingredients on top and then stir in, stir as little as possible so that large lumps remain.

This rich, creamy, and cheesy potato recipe came from a friend at church several years ago. Everyone seems to love it. When you want a special potato dish this one is a great choice. Best of all it is not hard to make.

3-4 pound(s) red potatoes, quartered but not peeled
6 ounce(s) cream cheese, at room temperature
1/2 cup(s) butter, room temperature
1/2 cup(s) half and half or heavy cream
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
4 - chopped green onions (use both green and white parts)
1/2 teaspoon(s) sea salt (or to taste)
1/4 teaspoon(s) freshly ground black pepper (or to taste)
3/4 cup(s) shredded sharp cheddar cheese, divided
1/2 cup(s) grated parmesan cheese, divided

Steps:

  • Place potatoes in a large saucepan. Cover with water. Bring to a boil. Reduce heat to a simmer. Cover and cook for 10-15 minutes or until tender. Drain. In a large bowl, mash the potatoes.
  • Add the cream cheese, butter and cream. Beat until blended. Stir in the green pepper, red pepper, onions, salt and pepper. Stir in 1/2 cup cheddar cheese and 1/4 cup Parmesan cheese.
  • Spoon into a greased 11 by 7 inch baking dish. Sprinkle with remaining cheeses. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.

An experiment with what I had, that needed used. Family loved these creamy potatoes. I loved the addition of pimentos. Enjoy!

2 tablespoon(s) butter, softened
1/4 - red onion, chopped
1 clove(s) garlic, minced
3 tablespoon(s) flour
Pinch - nutmeg
1 1/4 teaspoon(s) salt
3 cup(s) cooked, cubed potatoes
2 tablespoon(s) pimento
1 1/2 tablespoon(s) fresh chopped parsley or 1 tablespoon dried
1/2 cup(s) shredded cheese - your choice, i used swiss
CRUMBS
1/2 cup(s) panko bread crumbs
2 tablespoon(s) melted butter
Season - if you wish

Steps:

  • Cook potatoes in lightly salted water to cover, drain. Lightly toss with parsley and pimento, set aside.
  • In a medium saucepan, melt butter, add onion and garlic, salute until onion is tender.
  • Blend in salt, pepper, nutmeg and milk and cook until thickened, stirring constantly.
  • Preheat oven to 400 degree F. Carefully combine cream sauce with the potatoes, trying not to break up potatoes. Mix melted butter with panko crumbs and season if you like.
  • Grease a 1 1/2 quart casserole dish. Pour the potato mixture into dish and spread evenly. Top with cheese and then crumbs. Bake for 25 - 30 minutes or until bubbly and golden.
  • Serve hot as an accompaniment to just about any meat, I served with ham steak.
