1 box Betty Crocker™ Super Moist™ white cake mix
1/2 cup shortening
1/3 cup butter or margarine, softened
1 teaspoon vanilla or 1/2 teaspoon almond extract or lemon extract
1 egg
Sugar
1 cup Betty Crocker™ Rich & Creamy vanilla frosting
Food colors

Steps:

  • Heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, beat cake mix, shortening, butter, vanilla and egg with electric mixer on low speed 30 seconds, then on high speed 1 minute.
  • Divide dough into 4 equal parts. Roll each part 1/8 inch thick on lightly floured cloth-covered surface with cloth-covered rolling pin. Cut with 2 1/2-inch cookie cutters into desired shapes; sprinkle with sugar. On ungreased cookie sheet, place 2 inches apart.
  • Bake 5 to 7 minutes or until light brown. Cool 1 minute; remove from cookie sheet to cooling rack. In microwavable bowl, microwave frosting uncovered on High 20 to 30 seconds or until melted; stir. Frost cookies. Stir together small amounts of water and food color. Paint colors on freshly frosted cookies, using fine-tip brush, then swirl colors with brush or toothpick to create marbled designs. Dry completely before storing.

This tastes like a real cut out cookie and it is easy because it starts with a cake mix. I make these a lot and no one ever guess that it is made with a cake mix. Some times I sprinkle the cookies with cinammon sugar before I bake them. Cooking time does not reflect chill time.

1 (18 ounce) package yellow cake mix
3/4 cup butter, melted and cooled
1 large egg
2 tablespoons milk, i usually use evaporated milk

Steps:

  • In a large bowl mix cake mix, butter, egg and milk.
  • Do not over mix.
  • Shape dough in a ball.
  • Chill for 2 hours.
  • Roll 1/8 inch on a floured surface.
  • Cut out with a floured cookie cutters.
  • Place 2 inchs apart on a cookie sheet that has been very lightly sprayed with cooking spray.
  • Bake at 375 degrees for 6-10 minutes or until edges are lightly browned.
  • Cool slightly.
  • Move to rack to cool fully.
  • Store in airtight container.

I frequently make these cookies for work pitch-ins & family get-togethers. They are always a big hit! I was given the basic recipe several years ago by a lady who showed up at my garage sale-and she wrote it down during our conversation about baking. I have perfected different varieties over the years. Please see my other recipes for how to make the following versions of this cookie: chocolate-chocolate chip, chocolate chip, & lemon cookies. This is a really versatile recipe base-experiment!!

1 (18 ounce) box yellow cake mix (or buttercream flavor if you can find it)
2 eggs
1/2 cup vegetable oil
3 -4 tablespoons raw sugar (plus extra for sprinkling on top)

Steps:

  • Preheat oven to 350 degrees.
  • Stir ingredients in medium mixing bowl until blended (best to do right before you are ready to bake them- they flatten out more if you let the batter set).
  • Spoon onto 2 un-greased cookie sheets (allow some space in between, they spread...a melon baller works great for this step). Sprinkle tops with raw sugar.
  • Bake for 8-10 minutes (depends on which cake mix you use & the oven -- I start looking at them through the glass around 6.5 minutes -- they will get a dull/cracked appearance on top when done).
  • Allow the cookies to cool on the pan, or wait 1-2 minutes before moving to cooling racks. Cookies should be soft & chewy.

Sometimes homemade is really not the best way. Using a cake mix makes the texture for these cookies soft and chewy. Sometimes I add a few sprinkles on top before baking. You could also frost them or add whatever you'd like. I think a lemon cake mix would be good too, even though I've never tried it. White cake mix or any flavor...

1/2 c butter
1 tsp vanilla extract

Steps:

  • 1. Heat oven to 350 degrees. Melt butter in the microwave on high just until melted. Add to the cake mix and vanilla in a large bowl. Mix with a wooden spoon.
  • 2. Drop by large Tablespoonfuls onto a baking sheet. Bake 10-12 minutes.

  • Also, when I make these I am usually in a hurry and don't have time to wait the 2 hours to chill, so I just stick them in the freezer for 30 mins and form dough into 2-3″ balls, place on sprayed cookie sheet and press down with a large flat bottomed cup (use parchment paper under cup to keep from sticking). This makes perfectly round sugar cookies without all the work of rolling them out.
