Easy lime cake recipe, which starts off with cake mix. This pound cake is homemade with simple ingredients. Soft, moist, rich, firm and better than scratch!

1 box Yellow cake mix (Or lemon cake mix)
1 box Instant lime pudding mix (3.4 oz. box)
4 Eggs (Large)
3/4 cup Oil
1/2 cup Water (Warm)
1 cup Sour cream (Full fat)
1 tbsp Lime zest
1 tsp Lime extract (Optional )

Steps:

  • In a large mixing bowl, whisk together cake mix and pudding mix. Keep aside.
  • In another mixing bowl, add eggs, oil, water, sour cream, lime zest, lime extract and mix until smooth.
  • Dump the dry mixture into the wet mixture and mix until just combined.
  • Pour batter in a greased and floured loaf pan (Dimensions: 9×5). You can also use 2 smaller loaf pans or even a 10-12 cup bundt pan.
  • Spread batter evenly with a spatula.
  • Bake at 350 degrees for 50-55 minutes or until an inserted toothpick in the center comes out clean. Enjoy!

1 box Betty Crocker™ Super Moist™ white cake mix
1 1/4 cups water
1 tablespoon vegetable oil
4 eggs
1 can (14 oz) sweetened condensed milk (not evaporated)
3/4 cup whipping cream
1/2 cup Key lime juice or regular lime juice
1 teaspoon grated lime peel
4 drops yellow food color
1 drop green food color
1 container (12 oz) Betty Crocker™ Whipped vanilla frosting
2 teaspoons grated lime peel
Fresh strawberries
Key lime slices
Lemon leaves

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
  • In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 27 to 33 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. With handle of wooden spoon (1/4 to 1/2 inch in diameter), poke holes almost to bottom of cake every 1/2 inch, wiping spoon handle occasionally to reduce sticking.
  • In medium bowl, stir together filling ingredients (mixture will thicken). Pour over cake; spread evenly over surface, working back and forth to fill holes. (Some filling should remain on top of cake.) Refrigerate 1 hour.
  • Spread frosting over cake; sprinkle with lime peel. Garnish as desired. Store loosely covered in refrigerator.

1 (18 1/4 ounce) package lemon cake mix
1/2 cup water
1/2 cup key lime juice or 1/2 cup lime juice
2 key limes, zest of or 1/2 regular lime, zest of
1 (3 ounce) package lime gelatin
1/2 cup canola oil
4 large eggs, slightly beaten
1/4 lb butter, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
4 cups confectioners' sugar
1 -2 tablespoon milk
1 key limes, zest of or 1 regular lime, zest of

Steps:

  • Preheat oven to 325°.
  • Spray a 9 x 13-inch baking pan with non-stick cooking spray or grease and flour lightly.
  • In a large mixing bowl, add the cake mix, water, lime juice, lime zest, jello, vegetable oil and eggs.
  • With an electric mixer, blend ingredients together until well combined, about 3 minutes.
  • Pour into prepared pan and bake in preheated oven for 30 to 35 minutes or until a toothpick inserted off center comes out clean.
  • For the frosting, combine the butter, cream cheese and vanilla with electric mixer.
  • Add confectioners sugar and blend until smooth and creamy.
  • Add milk to reach the desired spreading consistency.
  • Spread frosting over cooled cake and garnish with lime zest.
