  • Preheat oven to 350°F.
  • Spray cookie sheets lightly with vegetable spray (Pam).
  • In a large bowl, mix together the cake mix and pumpkin with a fork or mixer until well blended; stir in nuts or raisins, if desired.

I have tried several variations including using a carrot cake mix with white chocolate chips and chocolate cake mix with butterscotch chips - the variety is endless! Note: I haven't had a great deal of success in storing these cookies more than one or two days. They seem to toughen up rather quickly.

1 (18.25 ounce) package yellow cake mix
⅓ cup vegetable oil
2 eggs
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Pour cake mix into a large bowl. Stir in the oil and eggs until well blended. Mix in chocolate chips. Drop dough by teaspoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Remove from pan to cool on wire racks.

Using Betty Crocker™ Super Moist™ yellow cake mix, these gooey butter cookies can be melting in your mouth in under an hour.

1 package (8 oz) cream cheese, softened
1/2 cup butter, softened
1/4 teaspoon vanilla
1 egg
1 box Betty Crocker™ Super Moist™ yellow cake mix

Steps:

  • Heat oven to 375°F.
  • In medium bowl, beat cream cheese and butter with spoon until well blended. Stir in vanilla and egg. Add cake mix; stir until well combined.
  • Shape dough into 1-inch balls; roll in powdered sugar to coat. Place 1 inch apart on ungreased cookie sheets.
  • Bake 11 to 15 minutes or until set. Remove from cookie sheets to cooling racks.
