SPICY CAJUN SWEET POTATO FRIES WITH BLUE CHEESE YOGURT



Spicy Cajun Sweet Potato Fries with Blue Cheese Yogurt image

Sweet, smoky and slightly spicy Cajun Sweet Potato Fries make a super delicious and healthy side. The easy to make blue cheese yogurt calms down the spice and makes the fries extra tasty.

Number Of Ingredients 10

1 teaspoon each: smoked paprika, chili powder, oregano, and garlic powder
½ teaspoon sea salt
¼ teaspoon cayenne powder (less if you're really sensitive to heat)
2 medium sweet potatoes (cut into ¼-inch strips)
2 teaspoons olive oil
Chopped parsley (to serve)
6 tablespoons Greek yogurt
3 tablespoons blue cheese (crumbled)
½ teaspoon dijon mustard
A pinch of sea salt and a few cranks of pepper

Steps:

  • Preheat your oven to 425 degrees. Line 2 baking sheets with parchment paper.
  • In a small bowl mix together the smoked paprika, chili powder, oregano, garlic powder, sea salt and cayenne powder.
  • Place the sweet potato strips in a large bowl, drizzle with the olive oil and mix well. Sprinkle the spice mix over the sweet potatoes and mix them together so that each fry is well coated in spices.
  • Divide the fries between the two baking sheets, making sure none of the fries are touching. Bake in the oven for 30-40 mins, turning halfway. They are ready when they start to brown.
  • While the fries are in the oven, make the blue cheese yogurt. In a small bowl mix together all the blue cheese yogurt ingredients and set aside.
  • Serve the fries with a little chopped parsley on top and the blue cheese yogurt on the side.

Steps:

  • Preheat oven to 425°F (220°C).
  • Cut sweet potato into fries and combine in a large bowl with olive oil, rosemary, salt, and pepper.
  • Place in a single layer on a baking sheet lined in parchment paper. Bake for 20 to 25 minutes, flipping halfway through.

3 tablespoons olive oil, or more to taste
1 tablespoon hot sauce, or to taste
1 teaspoon ground cumin
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon seasoned salt (such as LAWRY'S®)
½ teaspoon garlic powder
½ teaspoon onion powder
ground black pepper to taste
2 large sweet potatoes, cut into thick French fries

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Whisk olive oil, hot sauce, cumin, thyme, paprika, seasoned salt, garlic powder, onion powder, and black pepper together in a large bowl. Add sweet potatoes and toss until evenly coated. Transfer coated fries to a stoneware sheet or baking sheet.

I also belong to the Betty Crocker recipe club and this is one of the recipes that I received. I have made this and it is very good. My husband even liked it, which is unusual because he doesn't like sweet potatoes. The dip is an extra bonus that is good on regular fried as well.

3 large sweet potatoes, about 3 lbs.
2 tsp cajun seasoning
1 tsp ground cumin
DIPPING SAUCE
2/3 c yoplait, fat free, plain yogurt
1/4 c chili sauce
1 tsp soy sauce

Steps:

  • 1. Heat oven to 425°F. Cut each potato crosswise into about 4-inch chunks, then cut lengthwise into 1/2x1/2-inch strips. 2 In large resealable food-storage plastic bag, mix Cajun seasoning and cumin. Add potatoes; toss until evenly coated. In ungreased 15x10x1-inch pan, arrange potatoes in single layer. 3 Bake 35 to 40 minutes, turning once, until potatoes are lightly browned and tender. Meanwhile, in small bowl, mix all sauce ingredients. Serve sauce with fries.
