800 g lamb backstraps, sliced into strips
1/4 cup cajun seasoning (to taste)
3/4 cup light sour cream
1/3 cup ranch dressing
1/2 cup fresh coriander, chopped
2 garlic cloves, crushed

Steps:

  • Brush lamb strips with a little oil then roll in cajun seasoning and thread onto oiled bamboo skewers.
  • Cook skewers on a heated, oiled BBQ plate until browned on all sides and cooked to your liking.
  • While lamb is cooking, combine all remaining ingredients adding a little water to thin if needed.
  • Serve lamb skewers with dressing.

Sweet & Sour salad dressing that tastes excellent on your favorite spinach salad or any big-leaf lettuces.

2/3 cup vegetable oil
1/4 cup red wine vinegar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/3 cup ketchup
1 tablespoon instant minced onion
1/3 cup sugar

Steps:

  • Depending on taste preference, you can use less (or more) than 1/3 cup of sugar - start out with 1/2 the amount and add more accordingly.
  • Place all ingredients in bowl; mix well, place in vinegarette-style container (with lid) and refrigerate for at least one hour before serving.
  • Tastes best after a day or so in the fridge.

PINK TARRAGON CREAM DRESSING



Pink Tarragon Cream Dressing image

This is a pretty, pink colored creamy dressing. It is very rich and quite tasty. The recipe does not call for any salt or pepper - you may add a bit if you wish, but I didn't think it really needed it. I have tried this with dried tarragon and it was lovely - but if you have fresh, I think it is even better. Adapted from "Best of the Best of Georgia." Supposedly from a restaurant called The Olde Pink House. If 3 cups is too much for you, the recipe can be successfully halved. I made only a 1 cup batch and that amount was plenty for about 6-8 guests to have on their dinner salads. This will have you wanting to lick the plate clean.

2 cups mayonnaise (must be full fat)
1 cup sour cream
1/2 cup sherry wine (not cooking sherry)
1 tablespoon dried tarragon, finely crushed or 1 1/2 tablespoons minced fresh tarragon
1 teaspoon garlic powder
1/4 teaspoon Tabasco sauce, to taste
2 -3 drops red food coloring or 2 -3 drops beet juice
milk, to thin dressing (optional)

Steps:

  • Mix mayo, sour cream, sherry, tarragon, garlic powder, and Tabasco until blended well.
  • Add a few drops of food coloring to tint it slightly pink.
  • If the dressing is too thick, you may thin it with a small amount of milk.
  • Chill well before serving.

2 spring onions
3 tablespoons vinegar (4?... to taste)
1/2 teaspoon dry mustard
1/2 teaspoon salt
1 tablespoon sugar
1 red peppers or paprika

Steps:

  • Mash egg yolk, add salt and mustard, sugar and paprika or red pepper.
  • Add sour cream and enough vinegar to make it thick and soupy.
  • Chop and add egg whites and chopped spring onions.
  • Especially good over Spring leaf lettuce.

3/4 cup canola oil
1 medium onion, finely chopped
2 tablespoons Cajun seasoning
6 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon minced fresh rosemary
1 teaspoon minced fresh thyme
2 pounds uncooked large shrimp, peeled and deveined
CAJUN BUTTER:
1 cup butter, cubed
1 teaspoon minced fresh basil
1 teaspoon minced fresh tarragon
1 teaspoon Cajun seasoning
1/2 teaspoon garlic powder
3 drops hot pepper sauce

Steps:

  • In a small bowl, combine the first seven ingredients. Place the shrimp in a large resealable plastic bag; add half of the marinade. Seal bag and turn to coat; refrigerate for 1-2 hours. Cover and refrigerate remaining marinade for basting., In a small saucepan, combine the Cajun butter ingredients; heat until butter is melted. Keep warm. , Drain and discard marinade. Thread shrimp onto eight metal or soaked wooden skewers. Grill, uncovered, over medium heat for 2-4 minutes on each side or until shrimp turn pink, basting once with reserved marinade. Serve with Cajun butter.

This is a Nigella Lawson recipe from her summer collection. However, I had to share it with you. It is really a wonderfully tasty dish especially for those hot summer days. Here is Australia this recipe is a regular on our Christmas Day menu. The colours in the dish are stunning. Preparation time includes peeling the green (raw) prawns/shrimp and the cooling time for the prawns and the cooked black rice.

2 cloves garlic, minced or crushed
2 fresh thai birds eye chiles or 2 other red chilies, finely sliced
4 cm ginger, approx finely minced (I just chopped the heck out of it)
4 tablespoons fish sauce
2 tablespoons lime juice (about 1 lime)
4 tablespoons water
2 tablespoons caster sugar
250 g nanjing black rice
500 g green or raw peeled prawns or 500 g shrimp
salt
1/2 lemon, juice of

Steps:

  • Dressing:.
  • To make the dressing sauce, simply mix all the ingredients together.
  • Black Rice:.
  • Cook as per the instructions on the packet.
  • Usually 25-30 minutes.
  • Prawns:.
  • Poach the prawns for 5 minutes in some simmering salted water to which you have added the juice of half a lemon.
  • Cook the prawns until they are JUST cooked through but still very tender.
  • Let both the rice and the prawns cool.
  • Then give the dressing sauce a quick stir and spoon some over the rice, fork this through.
  • Then tumble the prawns on top, spooning a little the remainder of the sauce over.
  • Serves 2 as a main dish and 4 as a starter.
