MOM'S CAJUN HUSH PUPPIES
These tasty little delights are sure to be the perfect appetizer! Serve warm with tartar sauce.

Steps:
- Mix flour, cornmeal, sugar, Parmesan cheese, baking powder, salt, black pepper, eggs, bell peppers, onions, cream-style corn, whole kernel corn, and pimento peppers in a large bowl.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Drop 6 to 8 tablespoon-sized balls of batter into the hot oil; fry until each hush puppy is golden brown, about 5 minutes. Remove hush puppies with a slotted spoon and place on a paper towel-lined plate to drain. Repeat with any remaining batter.

This recipe has been submitted for play in ZWT9 - Cajun/Creole. This recipe is from cookbook Cajun Cooking by Better Homes and Gardens. It is said that early settlers hushed their barking dogs by tossing them these bready little morsels. I know I'd stop barking for a few of these....Yum!!

Steps:
- In a small mixing bowl stir the egg, buttermilk, green onions and water together.
- In a medium bowl combine the cornmeal, flour, sugar, baking powder, baking soda, salt and pepper.
- Add the egg mixture to dry ingredients, stirring until just moistened.
- In a heavy saucepan or deep fryer, heat abut 2 inches of oil or shortening to 375 degrees.
- Drop batter by tablespoons into hot fat.
- Fry a few at a time, for 2 minutes, turning once.
- Drain on paper towels, keep warm in a 325 degree oven until they are all fried.
CAJUN HUSH PUPPIES
Steps:
- 1. Prepare a deep fat fryer or a skillet.
- 2. Combine all the ingredients in a medium bowl; stir until batter is well mixed, and thick.
- 3. Let the batter rest on the counter or in the fridge, for 30-40 minutes.
- 4. Heat the oil to 375F in the skillet.
- 5. Remove from the fridge; mix lightly with a spoon.
- 6. With a tablespoon, drop batter into hot oil; fry until golden brown.
- 7. Remove from the fat/oil, and drain the Hush Puppies on paper towels (use several layers of paper towels).
- 8. Serve hot or warm-- delicious!

my dad makes this when he makes fish for us they are good and not to spicy or hot i don't like to hot and spicy but these are great

Steps:
- Combine all ingredients except oil then mix well. Heat 1 inch of oil until hot but not smoking.
- Drop cornmeal mixture by rounded teaspoonfuls into oil to form hush puppies.
- Cook in batches 2-3 minutes, while turning to brown on all sides.
- Remove from oil with a slotted spoon. Drain on paper towels on a platter. Serve immediately while still hot.
