Spicy Cajun Roasted Cauliflower with Rémoulade image

A healthy cauliflower dish with a kick! Seasoned roasted cauliflower served with a popular cajun dipping sauce. Even self proclaimed cauliflower haters love it!

4-5 cups cauliflower florets
2 tablespoons olive oil (more if necessary)
3 tablespoons Cajun seasoning (see below, or more to taste)
1 tablespoon paprika
2 tablespoons smoked paprika
2 tablespoons garlic powder
2 tablespoons salt or to taste
1 tablespoon cayenne pepper
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon fresh ground black pepper
1 cup mayonnaise (or vegan mayo)
2 tablespoons Creole mustard or spicy
1 small dill pickle (diced (or use relish))
1 tablespoon lemon juice
1 tablespoon Cajun seasoning
1 tablespoon prepared horseradish
1 clove garlic crushed (or garlic powder to taste)
1 teaspoon Worcestershire sauce ((vegan option if necessary))
1 teaspoon hot sauce such as Tabasco or Frank's

Steps:

  • Preheat oven to 400ºF. Line a baking sheet with baking paper.
  • Cut the cauliflower in half lengthwise.
  • Toss cauliflower, olive oil, and Cajun seasoning in a bowl until fully coated.
  • Tip onto the prepared baking sheet and roast for 20 minutes.
  • Stir cauliflower and place back in the oven for another 5 to 10 minutes until tender and crispy around the edges.
  • Serve hot with remoulade sauce.
  • Mix together in a bowl and store in an airtight container.
  • Combine all ingredients in a bowl and let sit so flavours meld.

Cajun Cauliflower Fries with Smoky Remoulade image

Cut carbs by making fries with cauliflower instead of potatoes. You'll need to plan ahead for this, but they are so flavorful you'll be glad you did.

½ cup mayonnaise
1 tablespoon minced dill pickle
2 teaspoons spicy brown mustard
1 teaspoon Louisiana-style hot pepper sauce
½ teaspoon garlic powder
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper
1 medium head cauliflower, cut into florets
½ cup shredded Cheddar cheese
2 ounces cream cheese
1 large egg
3 tablespoons grated Parmesan cheese
2 tablespoons all-purpose flour
1 tablespoon dried parsley
2 teaspoons seafood seasoning (such as Old Bay®)
cooking spray

Steps:

  • Combine mayonnaise, pickle, mustard, hot sauce, garlic powder, paprika, and cayenne pepper in a small bowl. Mix well and refrigerate remoulade until ready to use.
  • Place cauliflower in a microwave-safe bowl. Microwave for 6 minutes. Transfer to a food processor in batches and process to the consistency of rice. Place riced cauliflower in the center of a clean dish towel and squeeze out as much liquid as possible.
  • Combine Cheddar cheese and cream cheese in a large microwave-safe bowl. Heat for 30 seconds. Stir and heat 30 seconds more. Add riced cauliflower, egg, Parmesan cheese, flour, parsley, and seafood seasoning and stir until evenly combined. Cover and refrigerate dough for 1 hour.
  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Use clean hands to form cauliflower dough into wedge shapes and place on the prepared baking sheet. Lightly spray the top of each wedge with cooking spray.
  • Bake in the preheated oven until crispy, 35 to 40 minutes. Serve with remoulade for dipping.

This recipe originally came from my Cajun great grandmother. She didn't speak any English, but her cooking always received that universally understood "Mmmm!" I have modernized the recipe, by using purchased crab-boil and Cajun seasoning, instead of her multitude of mixed spices. (Prep. and cook times are a "guesstimate").

1 head cauliflower
3 ounces crab boil seasoning (net-bag kind)
1/2 tablespoon salt
4 eggs (well beaten)
1/3 cup lemon juice
4 cups dry breadcrumbs
1 1/2 tablespoons cajun seasoning (Tony Chachere's or Emeril's Essence)
24 ounces cooking oil

Steps:

  • Wash head of cauliflower.
  • Place cauliflower in a large pot with enough water to cover.
  • Add the bag of crab-boil, and the salt to the water.
  • Bring to a boil; cook for about 8-10 minutes, or until cauliflower becomes "fork tender".
  • When cauliflower becomes tender, remove from heat and allow cauliflower to "soak" in the spice for about 3-5 minutes (the longer it soaks, the spicier it gets).
  • Remove cauliflower from the water and drain.
  • Cut cauliflower into florets.
  • Place breadcrumbs in a large bowl and mix in the Cajun seasoning.
  • Mix together the beaten eggs and the 1/3 cup lemon juice.
  • Heat enough oil to deep fry the cauliflower to 350°F.
  • Coat each floret in the egg mixture, and then dredge in the breadcrumbs.
  • Deep fry until breadcrumbs turn golden brown, about 2-3 minutes.
  • Drain well on paper towels.
  • Serve with your favorite dipping sauces if desired.

1 head cauliflower, washed and broken into bite-size flowerets
2 eggs, beaten
1 tablespoon milk
1/4 teaspoon salt
1 1/2 cups flour
2 tablespoons shredded parmesan cheese
1/4 teaspoon garlic powder
1/2 teaspoon dried thyme
1 teaspoon dried oregano
1/8 teaspoon paprika
1 dash cayenne pepper (use more if you like spicy stuff)
1/4 teaspoon black pepper
oil (for deep frying)

Steps:

  • Preheat fryer oil to 375.
  • Place the beaten eggs, milk and salt in a shallow bowl (or a large baggie).
  • In a separate shallow bowl (or another large baggie), mix together flour, cheese, garlic powder, thyme, oregano, paprika, cayenne, and pepper.
  • Place flowerets into egg mixture and toss (or shake baggie) to coat well.
  • Remove and place into flour mixture and toss (or shake baggie) to coat well.
  • Fry in batches for 4 - 6 minutes or until golden brown.
  • Drain on paper towels and lightly salt.
  • *Serve w/ dipping sauces such as marinara, ranch or blue cheese.

1/2 cup buttermilk
3 tablespoons hot sauce, plus more to serve

1 1/2 cups cornmeal
1/2 teaspoon salt
1 -2 egg
splash water

Steps:

  • Cut up head of cauliflower into bite size chunks.
  • Break eggs into small bowl and mix with small amount of water.
  • In another bowl mix cornmeal and salt.
  • Heat oil to medium heat.
  • Place a few pieces of cauliflower in egg mix and drip off excess.
  • Place egg dipped cauliflower into cornmeal.
  • Shake off excess cornmeal.
  • Place breaded cauliflower into hot oil.
  • Fry until light golden brown.
  • Enjoy.
