3 1/2-4 lbs pork roast
2 tablespoons brown sugar
1 teaspoon red cayenne pepper
2 teaspoons cumin
1 teaspoon salt
1 (8 ounce) can Coke
1 cup chicken broth
2 garlic, minced
2 small onions, chopped
1 cup brown sugar

Steps:

  • Night before mix first 4 dry ingredients and rub on roast. Cook in crock pot on low over night.
  • Next morning add next 4 ingredients. Keep on low until ready to serve. Exact time is not needed, Fat from pork will do for liquid element for overnight cooking.
  • 1 hour before serving, shred with 2 forks by placing the forks in the pork back to back and then pulling in opposite directions. Repeat until fully shredded. ADD 1 cup of brown sugar.
  • Use on salads, tacos or burritos.

1 bone-in pork shoulder roast (5 to 7 pounds)
2 cans (12 ounces each) cola, divided
1 cup packed brown sugar, divided
1 tablespoon kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon pepper
1-1/2 cups enchilada sauce
1 can (7 ounces) chopped green chiles
Hot cooked rice
Optional toppings: Black beans, chopped red onion, crumbled cotija cheese, salsa

Steps:

  • In a large bowl or shallow dish, combine 1 can cola and 1/2 cup brown sugar. Add pork; turn to coat. Refrigerate 8 hours or overnight., Drain pork, discarding marinade. Place pork in a 5- or 6-qt. slow cooker. Add salt, garlic powder, onion powder, pepper and remaining can of cola. Cook, covered, on low until meat is tender, 8-10 hours., Set meat aside until cool enough to handle. Remove meat from bones; discard bones. Shred meat with 2 forks. Discard cooking juices and return meat to slow cooker. Stir in enchilada sauce, green chiles and remaining 1 cup brown sugar. Cook, covered, on low until heated through, about 2 hours., Serve pork in bowls over rice. If desired, add toppings.

Got this recipe from someone who "claims" it is the recipe they use in the restaurant. I am not sure if it is, but it is definitely tasty!

5 lbs pork loin (approx)
18 ounces Coca-Cola Classic (not diet)
1 cup sugar
1 (7 ounce) can chipotle chiles in adobo
1 teaspoon ground mustard, dry (heaping)
1 teaspoon garlic, minced

Steps:

  • Remove Chilies from the can of adobo sauce.
  • Rinse chilies and can with the coke to get all the sauce. You are using the sauce and not the chilies for this recipe.
  • Discard Chilies or save for another recipe.
  • Put all ingredients except pork in the blender. Blend until smooth.
  • Pour over pork in crock pot.
  • Cook on low for 7-9 hours until it pulls apart easily. After cooking, shred with forks.
