HERBED CHICKEN CAESAR SALAD PIZZA

1 tablespoon olive oil, plus more for oiling the baking sheet
1 disc Pizza Dough, recipe follows
All-purpose flour, for dusting
1 cup freshly grated Parmesan, plus one 3-ounce chunk Parmesan, for shaving
Pinch kosher salt
Pinch freshly ground black pepper
1 head romaine lettuce, sliced into small pieces
Roasted Chicken Breast, recipe follows, sliced on the bias
Green Herb Dressing, recipe follows
1 teaspoon active dry yeast
4 cups all-purpose flour
1 teaspoon kosher salt
1/3 cup olive oil, plus more for oiling the bowl
4 chicken breasts
1 tablespoon olive oil
1 scant teaspoon ground thyme
1 scant teaspoon ground oregano
1 scant teaspoon paprika
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons Dijon mustard
1 tablespoon red wine vinegar
1 teaspoon Worcestershire sauce
4 anchovy fillets
2 cloves garlic
Juice of 1/2 lemon
1/2 cup extra-virgin olive oil
1/2 cup fresh basil, chopped
1/2 cup fresh parsley, chopped
1/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper, as needed

Steps:

  • Position an oven rack in the lower third of the oven and preheat to 500 degrees F. Oil a baking sheet.
  • Roll out one disc of the Pizza Dough on a floured surface as thinly as possible and place on the prepared baking sheet. Brush with the olive oil and sprinkle with the grated Parmesan, salt and pepper.
  • Bake on the lowest oven rack until the crust is cooked through and the cheese is melted, 12 to 15 minutes.
  • Meanwhile, put the lettuce in a large bowl and add the Roasted Chicken Breast slices. Use a vegetable peeler to shave off large, thin slices of Parmesan over the leaves. Drizzle about half of the Green Herb Dressing over the top and toss gently to coat. Add more dressing if needed.
  • Remove the pizza crust from the oven, place a generous amount of the salad on top, shave over extra Parmesan and serve.
  • Sprinkle the yeast over 1 1/2 cups of warm--not lukewarm--water.
  • In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Pour in the yeast mixture and mix until combined.
  • Coat a separate mixing bowl with a light drizzle of olive oil and tip the dough in. Form a ball and toss to coat the dough ball in the olive oil. Divide into 2 balls. Cover tightly with plastic wrap and allow to rise for at least 1 hour, or up to 3 or 4 days refrigerated.
  • Preheat the oven to 375 degrees F. Line a roasting pan with foil.
  • Put the chicken breasts on the prepared roasting pan, drizzle with the olive oil and sprinkle with the thyme, oregano, paprika, salt and pepper. Roast until cooked through, 30 to 40 minutes. Let cool.
  • Add the mustard, vinegar, Worcestershire, anchovies, garlic and lemon juice to a blender or food processor. Pulse the processor or blend on low speed for several seconds. Scrape the sides and pulse again until everything is fairly smooth. With the food processor or blender running, drizzle in the olive oil in a small stream. Scrape the sides and mix again to thoroughly combine. Add the basil, parsley, Parmesan and some salt and pepper and blend until the herbs are chopped and the Parmesan is combined. The dressing will go green at this stage. Refrigerate the dressing for a few hours before using it on the salad.

1 recipe pizza dough (I use Nonfat Pizza Dough (Bread Machine))
1/4-1/2 cup grated parmesan cheese (the real stuff)
8 ounces monterey jack cheese, grated
16 ounces creamy caesar salad dressing
8 ounces boneless chicken breasts
2 roma tomatoes, diced
3 garlic cloves, minced
4 green onions, sliced
2 heads romaine lettuce, torn into pieces

Steps:

  • Preheat oven to 500º.
  • Cut chicken into chunks and stir fry with 1-2 Tablespoons of dressing.
  • Add one clove garlic to pan and stir.
  • Prepare dough on pizza pan or stone.
  • Brush dough with olive oil.
  • Spread 1/2 cup salad dressing over crust.
  • Top with remaining clove garlic, spread evenly.
  • Sprinkle parmesan over crust to lightly cover.
  • Put 1/2 jack cheese on top.
  • Chop chicken into small pieces and place on top.
  • Top with remaining Jack cheese and more Parmesan, if desired.
  • Bake 10 minutes or until golden brown and bubbly.
  • Meanwhile, Toss tomatoes, lettuce and green onions in large bowl.
  • Mix with additional salad dressing.
  • Serve each pizza slice with a serving of caesar salad on top!
  • NOTE: you can use a Boboli pizza crust if you prefer, just bake according to package instructions.

Olive oil, for brushing crust
8 ounces mozzarella, sliced
1/2 cup grated Parmesan, plus small chunk for shavingw
1 chicken breast, grilled and sliced thinly
2 romaine hearts, washed and dried, cut into 1/2-inch pieces
1/2 cup Caesar Salad Dressing, recipe follows
Kosher salt and freshly cracked black pepper
1/2 cup grated Parmesan
1/3 cup mayonnaise
1/4 cup lemon juice
2 tablespoons olive oil
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper

1 anchovy fillet, rinsed and dried

Steps:

  • Prepare the Simple Pizza Dough according to recipe.
  • Preheat the oven to 500 degrees F.
  • On a baking sheet brushed liberally with olive oil, stretch the dough to desired shape and thickness. Brush the crust with olive oil and top with the mozzarella slices. Bake the pizza until the dough crisps up and cheese is melted, about 15 minutes.
  • Remove the pizza from oven. Top the melted mozzarella with the grated Parmesan and sliced chicken. Toss the romaine hearts with the Caesar Salad Dressing and season with salt and pepper. Top the pizza with the Caesar salad and shave over some Parmesan. Serve and enjoy!
  • Cook's Note: If you don't have a pizza stone at home, no worries, use a well-oiled sheet tray and a hot oven to achieve a crisp bottom on your pizza! Also place the dough on the very bottom rack of your oven. It will help to create that crispy crust.
  • In a blender or food processor, process the Parmesan, mayonnaise, lemon juice, olive oil, mustard, Worcestershire, salt, pepper, garlic and anchovy until emulsified and smooth. Refrigerate until ready to use.;
  • In a liquid measuring cup, combine the warm water, yeast and sugar. Allow the yeast to dissolve and bloom, about 5 minutes. Once bloomed, add the olive oil.
  • Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, combine the flour and salt.   • Sugar is used to feed the yeast which will help the dough to grow. Bread flour will give you a chewier texture because the flour has more gluten. You don't need to use a thermometer to get the water temperature, it should just feel warm to the touch.

4 cups hearts of romaine, shredded (recommended: Ready Pac)

Steps:

  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
  • In a bowl, combine chicken tenders with 1/2 cup salad dressing; set aside. Brush pizza crust with remaining 2 tablespoons of dressing and top with cheeses; set aside.

1 (8 ounce) package cream cheese, room temperature
3 cups chicken breasts, cooked diced and cooled
4 cups romaine lettuce, finely chopped
1/2 cup red bell pepper, diced
1 (3 1/4 ounce) can black olives, pitted drained and sliced (or sub pitted kalamata olives for even more zip!)

1 1/2 teaspoons salt, plus more for sprinkling
3 teaspoons olive oil, divided, plus more for brushing dough
1 tablespoon ancho chili powder
White Anchovy Caesar Salad, recipe follows
1 head romaine lettuce, chopped
1 small red onion, peeled, halved and thinly sliced
Spicy Caesar Dressing, recipe follows
12 white anchovies in brine
Chopped cilantro leaves, for garnish
1 tablespoon prepared mayonnaise
1 tablespoon Dijon mustard
2 teaspoons pureed canned chipotles
Few dashes Worcestershire sauce
Few dashes hot pepper sauce
1 lime, juiced

Steps:

  • In a small bowl, whisk together the yeast and 1/4 cup of the warm water. Let sit for 5 minutes to proof. Place 1 3/4 cups of the flour in large bowl with the salt. Add the yeast mixture, the remaining water, and 2 teaspoons oil, and stir until combined. Transfer the dough to a floured surface and knead until smooth. Grease a large bowl with the remaining 1 teaspoon oil, add the dough and turn to coat. Cover and put in a warm place until doubled in volume, about 1 to 1 1/2 hours.
  • Preheat the grill to medium-high. Once the dough has risen, divide it in half, and set aside half for another use or for the Grilled Shrimp and Cilantro Pesto Pizza. Then divide the half into 4 balls. Roll each ball into 8-inch circles. Brush 1 side of each circle with oil and then sprinkle with ancho chile powder and salt. Grill on both sides until golden brown. Make the salad and assemble as directed in the salad recipe.
  • Place romaine and onions in a large bowl. Add 1/4 cup of the dressing and toss to coat. Mound the lettuce mixture onto each pizza and top with the anchovies and chopped cilantro. Serve immediately.
  • Put all the ingredients, except the salt, pepper, and oil, in a food processor or blender. Pulse until blended, and then season with salt and pepper, to taste. With the motor running, slowly add in the oil. If the dressing is too thick, add a little water.

  • Preheat the oven to 450 degrees F.
  • Drizzle 1 tablespoon of the oil in a 10- by 15-inch baking dish or on a rimmed baking sheet. Sugar or sweetener, optional
2/3 cup extra-virgin olive oil, plus more for brushing
6 cloves garlic, finely chopped

1 1/3 cups warm water (105 degrees F)

One 1/4-ounce packet (2 1/4 teaspoons) active dry yeast
3 3/4 cups all-purpose flour, plus more for dusting

2 large ripe beefsteak tomatoes, each cut into 6 to 8 thin slices
3/4 cup finely grated Parmesan
1/4 teaspoon honey
2 oil-packed anchovies, finely chopped
1 clove garlic, finely grated
Zest and juice of 1 lemon
1 large egg yolk1/4 cup extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
2 romaine hearts, cut into 1/2-inch thick and 1-inch wide pieces (about 8 cups)
A hunk of Parmesan, for topping

Steps:

  • For the iced tea: Pour 4 cups boiling water over teabags in a heatproof pitcher and allow to brew, 3 to 5 minutes. Remove teabags and add sweetener to taste. Stir in 6 cups ice cubes until melted. Keep refrigerated until ready to use. Makes two quarts. For the pizza dough: Heat 1/4 cup of the olive oil and the garlic in a small saucepan over medium-low heat until the garlic is softened but not browned, about 5 minutes. Stir in 1/2 teaspoon pepper. Cool slightly.
  • Whisk the water and sugar together in a bowl; sprinkle the yeast over top. Set aside until foamy, about 10 minutes. Stir in the olive oil-garlic mixture.
  • Whisk the flour and 2 teaspoons salt in a large bowl. Make a well in the center of the flour and pour in the yeast mixture. Gradually stir with a wooden spoon to make a rough dough.
  • Turn the dough out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes, dusting with more flour as necessary. Form into a large ball. Brush a large bowl with olive oil, add the dough and turn to coat. Cover tightly with plastic wrap and set aside at room temperature until doubled in size, about 1 hour.
  • Meanwhile, adjust an oven rack to the lowest position and preheat to 450 degrees F. Put a baking sheet on the rack to heat up while the dough rises. (The baking sheet should be the same size or slightly larger than the baking sheet that you will later form the dough on.)
  • Once the dough has doubled in size, brush a rimmed baking sheet generously with half of the remaining olive oil. Put the dough onto the oiled baking sheet and stretch and pat evenly into the pan, making sure that it reaches the edges. Use your fingertips to make dimples all over the dough. Brush with the remaining olive oil and sprinkle lightly with salt. Arrange the tomato slices on the pizza in a single layer, making sure that each bite will have a piece of tomato. Sprinkle the tomatoes lightly with salt. Place the baking sheet with the dough directly on top of the preheated baking sheet in the oven (this helps with a crispy crust). Bake for 15 minutes. Remove the baking sheets and sprinkle the Parmesan over the dough. Continue to bake until the dough is golden brown and the cheese is melted, 10 to 15 minutes.
  • For the Caesar salad: Meanwhile, whisk together the honey, anchovies, garlic, lemon zest and juice and egg yolk in a large bowl. Slowly whisk in the olive oil, then season with 1/4 teaspoon salt and a few grinds of pepper.
  • Remove the pizza from the oven and transfer to a large platter or cutting board. Toss the romaine with the dressing. Season with additional salt and pepper if needed. Top the pizza with the salad. Use a vegetable peeler to shave ribbons of Parmesan over the salad. Drizzle with olive oil, cut into pieces and serve.

1/2 recipe Simple Pizza Dough, recipe follows
Olive oil, for brushing crust
8 ounces mozzarella, sliced
1/2 cup grated Parmesan, plus small chunk for shaving
1 chicken breast, grilled and sliced thinly
2 romaine hearts, washed and dried, cut into 1/2-inch pieces
CAESAR SALAD DRESSING:
1/2 cup grated Parmesan
1/3 cup mayonnaise
1/4 cup lemon juice
2 Tablespoons olive oil
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
2 cloves garlic, minced or grated
SIMPLE PIZZA DOUGH:
1 3/4 cups warm water (105 to 110 degrees F)
1 envelope active dry yeast (2 1/4 teaspoons)
2 teaspoons sugar
3 Tablespoons olive oil
4 cups bread flour, plus more for dusting
2 teaspoons salt
Nonstick spray

Steps:

  • Prepare the Simple Pizza Dough according to recipe.
  • Preheat the oven to 500 degrees F.
  • On a baking sheet brushed liberally with olive oil, stretch the dough to desired shape and thickness. Brush the crust with olive oil and top with the mozzarella slices. Bake the pizza until the dough crisps up and cheese is melted, about 15 minutes.
  • Remove the pizza from oven. Top the melted mozzarella with the grated Parmesan and sliced chicken. Toss the romaine hearts with the Caesar Salad Dressing and season with salt and pepper. Top the pizza with the Caesar salad and shave over some Parmesan. Serve and enjoy!
  • Cook's Note: If you don't have a pizza stone at home, no worries, use a well-oiled sheet tray and a hot oven to achieve a crisp bottom on your pizza! Also place the dough on the very bottom rack of your oven. It will help to create that crispy crust.
  • In a blender or food processor, process the Parmesan, mayonnaise, lemon juice, olive oil, mustard, Worcestershire, salt, pepper, garlic and anchovy until emulsified and smooth. Refrigerate until ready to use.
  • In a liquid measuring cup, combine the warm water, yeast and sugar. Allow the yeast to dissolve and bloom, about 5 minutes. Once bloomed, add the olive oil.
  • Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, combine the flour and salt. Stream in the water/yeast mixture and as the dough begins to come together, switch to a dough hook attachment. Allow the dough to knead, adding a bit more flour if needed, so that the dough releases from the sides of the bowl, 1 to 3 minutes. You should be able to touch the dough and not have the dough stick to your fingers. Once the dough has kneaded and has pulled away from the sides of the bowl, remove the dough from bowl to a floured work surface and, with floured hands, continue to knead it by hand for 1 to 2 minutes. Then form the dough into a round ball and place it into a large bowl sprayed with nonstick spray. Cover the bowl with plastic wrap or a clean dish towel and let the dough rise in a warm area of your kitchen until it doubles in size, 1 1/2 to 2 hours. After the dough has risen it is ready to be cooked however you'd like!
  • Cook's Notes: This dough is wet dough, keep bench flour at the ready and make sure to flour your hands when working with the dough. Trust your gut as a chef, if the dough is to wet, add more flour, if it is too stiff, add a little water. Sugar is used to feed the yeast which will help the dough to grow. Bread flour will give you a chewier texture because the flour has more gluten. You don't need to use a thermometer to get the water temperature, it should just feel warm to the touch.
