INSTANT POT® CABBAGE ROLL CASSEROLE

Instant Pot® Cabbage Roll Casserole image

This Instant Pot® cabbage roll casserole is a variation of my "tried and true" stuffed peppers recipe. Serve with additional cooked rice, if desired.

Provided by hrsping

Categories     Main Dish Recipes     Stuffed Main Dish Recipes     Stuffed Cabbage

Time 1h15m

Yield 8

Number Of Ingredients 14

1 pound ground turkey
⅔ cup chopped onion
1 large head cabbage, cut into 1-inch chunks
1 (28 ounce) can Italian-style diced tomatoes
1 (14.5 ounce) can chicken broth
¾ cup water
¾ cup uncooked long grain white rice
2 tablespoons Worcestershire sauce
1 ½ teaspoons dried basil, divided
½ teaspoon salt
½ teaspoon ground black pepper
2 cups shredded Cheddar cheese, divided
1 (15 ounce) can tomato sauce
1 teaspoon white sugar

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add turkey and onion; cook and stir until turkey is browned and crumbly and onion is translucent, 5 to 7 minutes.
  • Add cabbage, diced tomatoes, chicken broth, water, rice, Worcestershire sauce, 1 teaspoon basil, salt, and pepper. Stir occasionally until mixture starts to boil, 5 to 7 minutes. Make sure the mixture does not exceed the max fill line.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • While the cabbage-rice mixture is cooking, preheat the oven to 350 degrees F (175 degrees C).
  • Release pressure using the natural-release method according to manufacturer's instructions, about 8 minutes. Then use the quick-release method by gently pushing the steam release knob towards the venting position without pushing it fully into position; release remaining pressure in short bursts.
  • Remove the Instant Pot® lid and stir in 1 cup of Cheddar cheese.
  • Combine tomato sauce, sugar, and remaining basil in a bowl. Pour 1/2 of the sauce into a 9x13-inch baking dish. Spoon cabbage-rice mixture over the sauce, then spoon remaining sauce over top. Sprinkle with remaining Cheddar.
  • Bake in the preheated oven until heated through, 25 to 30 minutes.

CABBAGE ROLL CASSEROLE

Cabbage Roll Casserole image

A friend gave me the original recipe for this and I added a few spices to give it a little more flavor. I've made it "my way" ever since and everyone who has it seems to enjoy it very much. One other way I did this was to eliminate the tomato sauce (didn't have any that day) and use a can of Rotel diced tomatoes with chiles. Because they have juice I lowered the amount of water a bit. It turned out delicious that way too! I have also put the sauce together earlier in the day and let it sit to make sure the flavors went through really well.

Categories     One Dish Meal

Time 1h20m

Yield 1 casserole, 6 serving(s)

Number Of Ingredients 12

1 lb ground beef
1/2 cup chopped onion (or more)
1/2 cup uncooked longrain rice
1/2 head chopped cabbage (at least 6-8 cups worth)
1 (10 1/2 ounce) can tomato soup
8 ounces tomato sauce
1/2 cup water
1/4 teaspoon marjoram (if you don't have marjoram use a little extra oregano....they are very similar in flavor)
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
2 teaspoons brown sugar

Steps:

  • Brown the ground beef and onion. Drain. Mix the rice into that. Set aside. Chop the cabbage and spread over the bottom of a 13x9 pan. Spread the meat/onion mixture over that. In a saucepan combine the rest of the ingredients and bring them to a light boil. Pour this over the meat and cabbage. Cover tightly with foil and bake at 350 degrees for 1 1/4-1 1/2 hours. NOTE: Recently I have reversed the way I layer the ingredients in the baking dish. I put the meat/rice mix in first and top with the cabbage. I then pour the liquid over that. I find it works better as far as not ending up with hard bits of uncooked or dried up rice.
  • I like to sometimes sprinkle my serving with parmesan cheese just for a little extra flavor, too.
  • Note: If you don't have marjoram use extra oregano -- or -- if you have no oregano use extra marjoram -- they are very similar. I notice people saying they used garlic. Why didn't I think of that?! Love using garlic. I will be adding some next time I make this myself!

Number Of Ingredients 9

1 medium head of cabbage shredded (I use about half of it)
1 large onion chopped
1 medium bell pepper chopped
1 can(s) Rotel tomatoes, 10 oz.
2 can(s) tomato sauce, 8 oz. each
2 lb ground beef
5-6 c cooked rice
1 can(s) water (use tomato sauce can), if needed
salt and pepper, to taste

Steps:

  • 1. Prep: Shred cabbage. Chop onions and bell pepper. Cook rice.
  • 2. In a large Dutch oven, add ground beef, onion, bell pepper and Rotel (cooks into meat for extraordinary flavor, didn't believe it till I did it).
  • 3. Cook until meat is done.
  • 4. Then add cabbage and tomato sauces. Allow to cook until cabbage is done almost clear.
  • 5. If it needs water, add it so it stays juicy for rice. One 8 oz can of water is usually enough.
  • 6. Add rice one cup at a time until you feel it's enough. Salt and pepper to taste.
  • 7. Mix well. It is so tasty!
