CAJUN BUTTERED CORN ON THE COB
Steps:
- In a large pot, bring water to a boil.
- Place ears of corn in the pot and boil for an additional 5-6 minutes.
- Turn off and let corn sit for 2-3 minutes.
- Melt butter in a small saucepan over medium heat.
- Add Cajun seasoning, garlic salt, and lime juice. Stir and cook for approximately 2 minutes.
- Drain corn and place in a serving dish then pour the Cajun butter over the corn.
- Roll corn to coat all sides and enjoy.

- Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Rewrap corn in husks; secure with kitchen string. Place in a stockpot; cover with cold water. Soak 20 minutes; drain., Meanwhile, in a small bowl, mix butter and lemon pepper. Grill corn, covered, over medium heat 20-25 minutes or until tender, turning often., Cut string and peel back husks. Serve corn with butter mixture.

- In a square metal bread pan add corn, lemon juice, garlic and cayenne.
- Slice butter into pats and place over the top of each corn.
- Sprinkle with garlic salt and a little more cayenne.
- Heat on the BBQ or oven at 350°F until simmering and cook for 20 minutes or until tender, turning 3 times.

- In a small bowl combine the butter, parsley, chili powder, garlic salt, and cumin; set aside.
- To pot of boiling water add 1 tablespoons granulated sugar, and 1 tablespoons lemon juice. Add corn. Boil for 3 to 5 minutes, uncovered. Remove from heat, cover and let stand for 15 minutes. Remove from hot water, spread ears of corn with seasoned butter.
