2 whole Large Yams, Peeled And Cubed
1/2 teaspoon Ground Cinnamon
1/4 teaspoon Sea Salt
3/4 cup Water
1 tablespoon Butter
1/2 teaspoon Pepper Or To Taste
1 splash Milk, If Yams Are Dry

Steps:

  • In a large saucepan add yams, cinnamon, sea salt and water.
  • Cover and bring to a simmer over medium heat. Turn heat to low. Check yams after 15 minutes to make sure there is liquid still in the bottom of the pan, if not add another 1/4 cup water to prevent burning and check yams for doneness. Recover and continue to cook yams for another 5 minutes or until fork tender. DO NOT DRAIN.
  • Remove lid and allow yams to sit for 3 minutes.
  • Add butter and pepper.
  • Mash yams with a potato masher until smooth and creamy. Add a splash of milk if needed.

Buttery Mashed Yams image

Also spelled foofoo or foufou, fufu in its many variations is a staple in western and central Africa. Traditionally, it would be made by pounding - pounding, not mashing - the boiled tubers or plantains. This version offers a modern shortcut using the food processor. Use whatever proportions of starch suit your taste. Half yam (not sweet potato) and half green plantain might be a good starting point. Serve with soup, stew, or cooked vegetables. 3 lbs yams (or malanga or cocoyam or green plantains)
2 tablespoons butter or 2 tablespoons margarine
salt
pepper

Steps:

  • Peel the yam and malanga. Remove the peel from the plantains.
  • Cut into large (2-3 inch) chunks.
  • In a large pot, boil in water until soft, about half an hour.
  • Drain.
  • Mash slightly.
  • Place in the food processor with the butter, salt and pepper. Blend to a smooth, very thick paste. (If the paste is too thin to hold its shape, stir in a very small amount of dried potato flakes.).
  • Roll into golf-ball sized pieces.

MASHED SWEET POTATOES WITH SAGE BUTTER



Mashed Sweet Potatoes with Sage Butter image

Yield Makes 4 servings

1 1/2 pounds sweet potatoes (2 large), peeled and cut into 1/2-inch pieces
1/2 teaspoon salt
3 tablespoons unsalted butter, softened
2 teaspoons chopped fresh sage

Steps:

  • Cover sweet potatoes with water in a 2-quart heavy saucepan and add salt. Cook, covered, over moderately high heat until tender, 15 to 20 minutes. Reserve 1/4 cup cooking liquid, then drain sweet potatoes in a colander. Transfer sweet potatoes and reserved cooking liquid to a bowl and mash with a potato masher.
  • Mash together butter, sage, and salt and pepper to taste, then stir half of sage butter into sweet potatoes. Serve potatoes topped with remaining sage butter.

I was tired of plain old mashed potatoes. Tried this as an alternative. Now, we eat more yams than white potatoes!

2 -3 medium fresh yams
3 tablespoons butter or 3 tablespoons margarine
1 tablespoon granulated sugar (can substitute brown sugar)
1 teaspoon cinnamon

Steps:

  • peel and cut yams into cubes.
  • boil until tender (about 30 mins).
  • drain.
  • add butter, sugar, cinnamon.
  • mix until smooth (I use the hand mixer but my mom prefers the stand mixer).
