BUTTERSCOTCH SHAKE
This creamy delicious butterscotch shake is the perfect sweet treat for breakfast, brunch or lunch. It gets its flavor from a homemade butterscotch sauce and comes together in no time. You can substitute frozen yogurt or sliced banana for the ice cream. So good!

Steps:
- In a medium saucepan, melt the butter over medium heat.
- Add the brown sugar and stir to combine.Bring to a boil then reduce to a slow and steady boil and continue cooking, stirring frequently, for 2-3 minutes.
- Carefully add the heavy cream and salt. Stir to combine. Bring mixture back to a slow boil. While stirring, cook another 3-4 minutes.
- Remove from heat and stir in vanilla extract and Scotch, if using.
- Set aside and allow to cool. Sauce will thicken as it cools.
- In a large blender, add all ingredients in this order: milk, ice cream, butterscotch sauce.
- Blend until smooth and creamy.
- Pour into a chilled glass and top with whipped cream, chopped butterscotch chips, and extra butterscotch sauce, if desired.

"LOLOCCINO" AKA STRAWBERRY VANILLA SHAKE UP

Steps:
- In a large glass, add the Strawberry-Vanilla Simple Syrup and freeze-dried strawberries. Muddle until the strawberries are macerated (this is how you get that pink color!). Pour in enough sparkling water to fill the glass halfway up. Give it a stir, then pour into a rocks glass over ice. Top off with the remaining seltzer and give it another stir. Garnish with more sliced strawberries and more syrup if desired.
- In a small saucepan, bring the sugar, strawberries and 1 cup water to a boil, stirring the whole time. Reduce the heat to maintain a simmer, then add the vanilla and continue to simmer for 1 minute. Remove from the heat and let cool completely, then strain. Store in the refrigerator for up to 2 weeks.
BUTTERSCOTCH MUDSLIDE SHAKE
This can be made into a shake or is good unblended and served over the rocks. The original recipe is for one shake, but if not blending, would make 2 servings over ice.
