I love the icing even more than the cake itself, and I think next time I will try it with a standard butter cake. Caramel icing is a wonderful treat and another one of those old things that fell out of favor but now is making a comeback.

2 cups brown sugar
½ cup unsalted butter, softened
1 teaspoon vanilla extract
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup buttermilk
1 ½ cups brown sugar
¼ cup unsalted butter
¼ cup milk
1 tablespoon all-purpose flour
2 tablespoons unsalted butter
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans, or line with parchment paper.
  • Combine brown sugar and butter for cake in a bowl; cream with an electric mixer on medium speed until fluffy. Add vanilla extract, then add eggs, one at a time, beating on low speed just until they are mixed in.
  • Sift flour, baking soda, baking powder, and salt together in a separate bowl. Add flour mixture in 2 batches, alternating with buttermilk, beating batter on low speed until well mixed, scraping down the bowl by hand as needed. Pour batter evenly into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center of each layer comes out clean, 25 to 30 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • While cake cools, combine brown sugar, 1/4 cup butter, milk, and flour for icing in a small saucepan over medium heat; bring to a boil. Continue to boil, stirring frequently to prevent burning, for 1 minute. Remove from heat and stir in 2 tablespoons butter and vanilla extract. Cool the mixture, stirring occasionally, until it is still warm (but not hot) and has thickened enough to spread.
  • Spread icing over the cake, moving fairly quickly because it will set as it cools. It will be a thin coating, not a thick layer. Let set completely before cutting into the cake.

Icing:
4 tbsp cocoa
1 cup hot coffee or boiling H20
1/2 cup crisco oil
2 cups sugar
2 eggs
1 tsp vanilla
1/4 tsp baking powder
1/4 tsp salt
2 cups flour
1/2 cup sour cream or buttermilk
1 tsp baking soda
1/4 cup butter
1 cup brown sugar
5 tbsp whipping cream
2 cups icing sugar
1 tsp vanilla

Steps:

  • Preheat oven to 350 and use 9x13 pan. (a) Dissolve cocoa in boiling H20 or coffee. Set aside. (b) Mix together sour cream or buttermilk with baking soda set aside. (Will rise) (c) In separate bowl, beat eggs then add oil, sugar, vanilla. Add cocoa mixture from above. (d) In separate bowl mix baking powder, salt and flour. Add slowly to the egg mixture above. Once (a)(c) and (d) are mixed, lastly add (b) sour cream and baking soda to the mix. Bake for 1/2 hour and check. Icing: On stove, bring butter, brown sugar and cream to a boil. Boil 3 minutes or until the candy forms a soft ball (test) in ice water. Remove from heat, let cool for 10 minutes. Add icing sugar and vanilla, mix and add cream to make it a creamy texture (will be easy to spread). Add to cake when cooled.

I am a baker and cake decorator, I am always looking for a way to alter mixes to make them my own! Here is one that is a favorite in my business. The meringue powder is optional, however if you plan on spliting the layers I strongly suggest using it, as it adds body to the mix. Enjoy!

1 box duncan hines yellow cake mix
1 box 3.4 oz box jello instant butterscotch pudding mix
4 eggs
1 tsp vanilla
1 c canola oil
1 c water
2 Tbsp meringue powder, optional
CARAMEL ICING
1 c brown sugar, firmly packed
5 Tbsp butter, unsalted
1/4 tsp salt
1/4 c heavy cream or half and half
1 1/2 c sifted powdered sugar

Steps:

  • 1. Combines first 7 ingreadents and mix on medium speed for 2 minutes, do not over mix. Over mixing can cause air bubbles in your cake.
  • 2. Divide mixture into 2 greased and floured 9" round cake pans, or one 9"x13" pan.
  • 3. Bake at 350 for 30-40 minutes or until a tooth pick comes out clean.
  • 4. Turn out cakes on cooling rack and cool.
  • 5. Combine brown sugar, butter and salt in sauce pan and bring to a boil stirring constantly. Add half and half or cream and continue to cook over low heat for 3 to 4 minutes. Add powdered sugar and beat till spreadable, you may need to add more half and half or powdered sugar depending on the consistancy. If you split you cake to make 4 layers you will want to double this recipe. Frost and enjoy!
