4 tablespoons butter, divided, melted
2 tablespoons maple syrup
Dash pepper
1 medium butternut squash (about 2-1/2 pounds), peeled and cubed
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1-1/4 pounds ground beef
1 envelope onion soup mix
1 cup water
1 medium head cauliflower, broken into small florets
4 garlic cloves, minced
1 cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 350°. Combine 2 tablespoons melted butter, syrup and pepper; toss with squash to coat. Roast squash in a greased 15x10x1-in. baking pan until tender, 40-45 minutes. Transfer to a large bowl; mash until smooth, stirring in thyme., In a large skillet over medium heat, cook and stir beef, crumbling meat, until no longer pink, 6-8 minutes; drain. Stir in soup mix and water; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 4-6 minutes. Transfer to a greased 13x9-in. baking dish., Top evenly with cauliflower. Sprinkle with garlic; drizzle with remaining melted butter. Spread squash mixture over top. Bake, uncovered, until cauliflower is tender, 35-40 minutes. Sprinkle with cheese. Let stand 10 minutes before serving.

Butternut Squash and Thyme Shepherd's Pie image

A tasty shepherd's pie style meal with a meat and veggie filling topped by a mashed thyme and butternut squashed topping. Delicious! Think this recipe makes too much? Cut the recipe in half or make the whole thing in 2 dishes. It's the perfect freezer meal to have on hand.

Number Of Ingredients 14

6-8 cups cubed raw butternut squash
1/2 tsp. dried thyme
1/4 cup sour cream
1/2 tsp. salt
1 Tbsp. oil
1 large onion, diced (approx. 1.5 cup)
3 cloves garlic, minced
2 lb. ground meat
2 cups frozen peas
2 cups frozen corn
1 tsp. oregano
1 tsp. salt
1/4 tsp. black pepper
1 TBS. cornstarch (optional)*

Steps:

  • Put 1 cup water in bottom of Instant Pot. Place steamer basket** in insert and add cubed butternut squash. Close and seal Instant Pot and set for manual high pressure 5 minutes. After cooking, do a natural pressure release for 5-10 minutes then release any remaining pressure.
  • Mash cooked butternut squash with sour cream, salt, and thyme. Set aside until ready to assemble your dish.
  • Heat oil in a large frying pan over medium-high heat. Add diced onion and garlic. Stir frequently. When onion is soft, add ground meat.
  • Add cornstarch, oregano, salt, and pepper. Fry, stirring and breaking up meat into smaller pieces frequently. When meat is almost cooked through, add peas and corn. Continue to cook until meat is cooked through and vegetables are hot.
  • At this point, if there is enough space in your pan for the topping, you can top it with the mashed butternut squash. Otherwise, transfer to a 9×13 dish. If you want to divide this into multiple meals, do so before topping.

3 1/2 cups peeled and cubed butternut squash
1/2 cup chopped onion
1 pound raw lean ground turkey
1/2 teaspoon chopped garlic
1/2 teaspoon salt, divided
Dash garlic powder
Dash onion powder
Dash black pepper
3/4 cup fat-free gravy
1 1/2 cups frozen mixed vegetables
1 tablespoon light whipped butter or light buttery spread

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the squash in a large microwave-safe dish with 1/2 cup of water. Cover the bowl and cook the squash in the microwave for 12 to 14 minutes, until the squash is soft.
  • Meanwhile, bring a medium skillet sprayed with nonstick spray to medium heat on the stove. Add onion and, stirring occasionally, cook until it's slightly browned, 2 to 3 minutes.
  • Raise the heat to medium high. Add turkey, chopped garlic, 1/4 teaspoon of salt, garlic powder, onion powder, and black pepper to the skillet. Cook and crumble until the turkey is fully cooked, about 12 minutes.
  • Drain any excess liquid from the skillet, and transfer the mixture to a casserole dish sprayed with nonstick spray. Evenly top with gravy, followed by frozen mixed veggies. Set aside.
  • Drain the excess water from the squash and mash well. Add butter and the remaining 1/4 teaspoon of salt and mix thoroughly. Evenly layer the squash mixture over the mixed veggies.
  • Bake in the oven until the topping is slightly crispy, 20 to 25 minutes. Enjoy!

3 cups cubed peeled butternut squash (1-inch pieces)
1 large potato, peeled and cut into 1-inch cubes (about 2 cups)
2 medium carrots, thinly sliced
2 cups vegetable broth
1/2 teaspoon plus 3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 pounds ground turkey
1 large onion, chopped
1 tablespoon olive oil
3/4 pound sliced fresh mushrooms
3 garlic cloves, minced
1/2 cup white wine
1 teaspoon dried thyme
1/4 cup all-purpose flour
2 cups frozen peas (about 8 ounces)

Steps:

  • Preheat oven to 350°. Place first 4 ingredients in a large saucepan; bring to a boil. Reduce heat; simmer, covered, until vegetables are tender, 10-15 minutes. Drain vegetables, reserving broth. Mash vegetables until smooth, stirring in 1/2 teaspoon salt and 1/4 teaspoon pepper., In 2 batches, cook turkey and onion in a Dutch oven over medium-high heat until turkey is no longer pink, 5-7 minutes, breaking turkey into crumbles. Remove from pan., In same pan, heat oil over medium-high heat; saute mushrooms until tender, 7-9 minutes. Add garlic; cook and stir 1 minute. Add wine, thyme and the remaining salt and pepper; bring to a boil, stirring to remove browned bits from pan. Cook until liquid is evaporated. Stir in flour until blended; gradually stir in reserved broth. Bring to a boil; cook and stir until thickened. Stir in peas and turkey mixture; heat through., Transfer to a greased 2-1/2-quart baking dish. Spread with mashed vegetables. Bake, uncovered, until filling is bubbly, 30-35 minutes. Let stand 10 minutes before serving.

Rose Reisman, cookbook author and renowned healthy living advocate, serves up a new take on a family favourite, with only 270 calories and a healthy 25.6g of protein per serving.

1 lb extra lean ground beef
1 1/2 cups finely diced onions
3/4 cup frozen edamame
3/4 cup tomato sauce
3/4 cup carrot, finely diced
1/3 cup chicken broth
2 teaspoons garlic, crushed
1 1/2 tablespoons all-purpose flour
1 1/2 tomato paste
1 tablespoon mazola corn oil
1 teaspoon dried basil
1 1/2 lbs butternut squash or 1 1/2 lbs acorn squash, cut into cubes
3/4 cup shredded aged white cheddar cheese
3 tablespoons grated parmesan cheese
2 tablespoons mazola corn oil
1 pinch salt and pepper

Steps:

  • Preheat oven to 350°F. Lightly coat a 9-inch square baking dish and a large baking sheet with cooking spray.
  • Place a large nonstick skillet, lightly coated with cooking spray, over medium-high heat. Add oil and onion and sauté for 3 minutes. Add garlic and carrots and sauté for 3 minutes. Add ground beef and sauté for 5 minutes or until no longer pink, breaking up the meat as it cooks.
  • Add flour and cook for 1 minute. Add tomato paste, stock, tomato sauce, basil, salt and pepper. Cover and cook on low heat for 3 minutes or until thickened. Add edamame and cook for one minute. Place in baking dish.
  • While meat mixture is being prepared, place squash onto baking sheet and roast for 25-30 minutes, until just tender. Place in a bowl and mash, adding corn oil, grated parmesan, salt and pepper. Spoon over meat filling, sprinkle with cheese and bake for 5 minutes.

Number Of Ingredients 21

1.2kg floury potatoes, such as Maris Piper or King Edward
50ml vegetable oil
30g dried porcini mushrooms, soaked in hot water for 15 mins, then drained (reserve the liquid)
2 large leeks, chopped
2 small onions, chopped
4 medium carrots (about 300g), cut into small cubes
1 vegetable stock cube (make sure it's vegan - we used Kallo)
3 garlic cloves, crushed
2 tbsp tomato purée
2 tsp smoked paprika
1 small butternut squash, peeled and cut into small cubes
½ small pack marjoram or oregano, leaves picked and roughly chopped
½ small pack thyme, leaves picked
½ small pack sage, leaves picked and roughly chopped
4 celery sticks, chopped
400g can chickpeas
300g frozen peas
300g frozen spinach
20ml olive oil
small pack flat-leaf parsley, chopped
tomato ketchup, to serve (optional)

Steps:

  • Put the unpeeled potatoes in a large saucepan, cover with water, bring to the boil and simmer for 40 mins until the skins start to split. Drain and leave to cool a little.
  • Meanwhile, heat the vegetable oil in a large heavy-based sauté pan or flameproof casserole dish. Add the mushrooms, leeks , onions, carrots and the stock cube and cook gently for 5 mins , stirring every so often. If it starts to stick, reduce the heat and stir more frequently, scraping the bits from the bottom. The veg should be soft but not mushy.
  • Add the garlic, tomato purée, paprika, squash and herbs. Stir and turn the heat up a bit, cook for 3 mins, add the celery, then stir and cook for a few more mins.
  • Tip in the chickpeas along with the water in the can and reserved mushroom stock. Add the peas and spinach and stir well. Cook for 5 mins, stirring occasionally, then season, turn off and set aside. There should still be plenty of liquid and the veg should be bright and a little firm.
  • Peel the potatoes and discard the skin. Mash 200g with a fork and stir into the veg. Break the rest of the potatoes into chunks, mix with the olive oil and parsley and season.
  • Divide the filling into the pie dishes and top with the potatotes. Heat oven to 190C/170C fan/gas 5 and bake the pies for 40-45 mins, until the top is golden and the filling is heated through. If making individual pies, check after 20 mins. Best served with tomato ketchup - as all great shepherd's pies are.
