Roasted Butternut Squash Soup and Curry Condiments image

3 to 4 pounds butternut squash, peeled and seeded
2 yellow onions
2 McIntosh apples, peeled and cored
3 tablespoons good olive oil
Kosher salt and freshly ground black pepper
2 to 4 cups chicken stock, preferably homemade
1/2 teaspoon good curry powder
Scallions, white and green parts, trimmed and sliced diagonally
Flaked sweetened coconut, lightly toasted
Roasted salted cashews, toasted and chopped
Diced banana

Steps:

  • Preheat the oven to 425 degrees F. Cut the butternut squash, onions and apples in 1-inch cubes. Place them on a sheet pan and toss with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper. Divide the squash mixture between 2 sheet pans and spread it in a single layer. Roast for 35 to 45 minutes, until very tender.
  • Meanwhile, heat the chicken stock to a simmer. When the vegetables are done, put them through a food mill fitted with the medium blade. (Alternatively, you can place the roasted vegetables in batches in a food processor fitted with the steel blade. Add some of the chicken stock and coarsely puree.) When all of the vegetables are processed, place them in a large pot and add enough chicken stock to make a thick soup. Add the curry powder, 1 teaspoon salt and 1/2 teaspoon pepper. Taste for seasonings to be sure there's enough salt and pepper to bring out the curry flavor. Reheat and serve hot with condiments either on the side or on top of each serving.

Love Thai flavors and I felt they would be a perfect match to play off the richness of a butternut squash soup. Curry, coconut, spicy are a wonderful to balance the richness of the squash. The first time I made it was kind of an accident. I was trying to make the traditional soup but when I tasted it lacked something. I looked to see how I could punch up the flavor. First I added the curry, I had some leftover red curry paste I made, added coconut milk and I felt I had something special. Like many soups and stews the flavor is better the following day. Enjoy!

2 tablespoons olive oil
2 chili moritas, or more to taste
1 large white onion, diced
5 carrots, peeled and diced
2 stalks celery, diced
2 cloves garlic
salt and ground black pepper to taste
2 tablespoons red curry paste, or to taste

1 large butternut squash - peeled, seeded, and diced
1 quart chicken stock
1 quart water
1 (14 ounce) can coconut milk
2 bay leaves

Steps:

  • Heat a large heavy-bottom pot over medium-high heat; add olive oil. Cook and stir chili moritas in the hot oil until chili moritas are puffed and softened, 3 to 5 minutes. Stir onion, carrots, celery, garlic, salt, and pepper into chili moritas and cook until onion is translucent, 10 to 15 minutes.
  • Stir curry paste and paprika into chili-onion mixture until coated. Add butternut squash; cook and stir until squash is lightly browned, about 5 minutes. Pour chicken stock, water, and coconut milk into squash mixture; add bay leaves. Bring mixture to a boil, reduce heat, and simmer until squash is softened, about 1 hour.
  • Pour squash mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.

The green curry paste, which is relatively easy to find in the international aisle of the grocery store, along with coconut milk and fish sauce, perfectly complements the butternut squash's sweetness. But it's the topping - a spin on miang kham, a snack in Thailand and Laos full of peanuts, coconut and chiles - that's the real standout.

4 tablespoons coconut oil or neutral-tasting oil
3 medium shallots, diced
1 (2-inch) piece of fresh ginger, peeled and thinly sliced
1 lemongrass stalk, cut into 3-inch pieces
Kosher salt
2 medium butternut squashes (about 4 pounds), peeled, seeded and cut into about 3/4-inch cubes
2 (13 1/2-ounce) cans coconut milk
6 to 8 tablespoons Thai green curry paste, or to taste
3 tablespoons fish sauce
3 to 4 cups water or chicken stock, preferably homemade
3/4 cup raw peanuts
3/4 cup unsweetened raw coconut flakes
2 tablespoons fish sauce
8 small dried red chiles, such as Japones or chiles de árbol, thinly sliced
1 tablespoon neutral-tasting or melted coconut oil
1 tablespoon minced lemongrass
1 teaspoon sugar
10 lime leaves, thinly sliced (optional)
Handful of Thai or Italian basil leaves

Steps:

  • Heat oven to 300 degrees. Melt oil in a large Dutch oven or soup pot over medium-high heat. When oil shimmers, add shallots, ginger, lemongrass and a generous pinch of salt. Reduce heat to low. Cook, stirring occasionally, until shallots are tender and just starting to brown, about 18 minutes.
  • Add squash, coconut milk, curry paste, 3 tablespoons fish sauce and 3 cups water or stock. Increase heat to high. When liquid comes to a boil, reduce to a simmer and cook the soup covered until squash is tender, about 25 minutes.
  • Make garnish while soup cooks: In a medium mixing bowl, toss together peanuts, coconut flakes, fish sauce, chiles, 1 tablespoon oil, the minced lemongrass, the sugar and the lime leaves, if using.
  • Spread mixture out onto a baking sheet in a single layer. Bake for 18 to 20 minutes, stirring every 3 minutes after the first 10 minutes. Remove from oven when coconut is deep golden brown, and pour mixture immediately into a bowl to prevent overcooking. Stir to combine, and set aside.
  • Remove soup from heat. Remove lemongrass stalks from pot. Use a hand blender to purée soup. Alternatively, transfer soup in batches to a blender or food processor and purée. Taste and adjust for salt and curry paste. Add water or stock to thin soup to the desired consistency.
  • Thinly slice the basil leaves and arrange on a small plate or platter, along with lime wedges and peanut mixture. Serve soup hot with garnishes.

2 tablespoons olive oil
3 minced garlic cloves
1 tablespoon curry powder
1/4 teaspoon ginger powder (can also use fresh ginger)
1 onion
2 carrots
1 1/2-2 cups butternut squash (small cubes)
salt
3 cups chicken broth
heavy cream (optional and to taste)
1/2 cup dry white wine (optional)

Steps:

  • Heat olive oil in a heavy pot over medium heat. Add minced garlic and chopped onions, stir to coat. Add thinly sliced carrots and cook for 3 minutes, or until they start to get soft.
  • Add squash. Stir and cook for a few minutes, until squash is soft and tender. After a few minutes, add salt to taste and the curry powder.
  • Pour in wine if using. Let cook for 30 seconds, then pour in chicken broth. Reduce heat to a simmer, cover pot, and cook for 1 hour. After 1 hour, taste and adjust seasonings. Turn off heat.
  • Puree soup using a blender. Return to soup pot and bring to a simmer.
  • If you use decide to add cream you'll want to "float" it on top of the soup by first pouring it into a teaspoon and then carefully dripping it over the top. To make a lovely design, drip a few small parallel lines over the top, take a spoon and swirl through them in a semi-circle around the bowl. It looks something like a leaf pattern. Not as difficult as it sounds; it just takes a little practice.

1 large butternut squash (about 2 pounds)
1 tablespoon oil
1/4 cup onion, minced
1 tablespoon freshly grated ginger
2 garlic cloves
1 -2 teaspoon Thai red curry paste, more if you like it hotter
6 fresh lime leaves, middle vein removed and torn into pieces
4 cups chicken broth
unsweetened coconut milk
1 teaspoon kosher salt
2 tablespoons freshly squeezed lime juice

Steps:

  • Preheat over to 400°F Cut the squash in half lengthwise and remove the seeds. Brush the cut sides of the squash with oil and place cut side down on a baking sheet. Roast for 45 minutes to 1 hour or until very tender. The squash should have a creamy texture. Once the squash has cooled enough to handle, scoop the flesh out of the peel using a spoon.
  • In an heavy bottomed pot, heat the oil over medium heat. Add the onion, ginger and garlic and sauté until softened, about 3 minutes. Add the curry paste and cook for a few more minutes. 1 3- pound butternut squash
1 medium yellow onion (diced)
4 cups low-sodium vegetable broth
1/2 teaspoon kosher salt + more to taste
1 14-ounce can full-fat coconut milk
3 tablespoons Thai red curry paste (more or less to taste)
Additional drizzle of coconut milk
Fresh cilantro leaves
Thinly sliced hot red pepper
Lime wedges for squeezing over the top
4- quart or larger slow cooker

Steps:

  • Place butternut squash, onion, broth, and 1/2 teaspoon salt in your slow cooker. Cook on low for 8-10 hours, or on high for 4-6 hours.
  • Remove the lid and let the soup cool a bit before pureeing. When cool enough to handle, carefully puree the entire batch right in the slow cooker with an immersion blender. You can also use a blender, working in batches, then return the soup to the slow cooker.
  • Stir in the coconut milk and the Thai red curry paste. Cover with the lid and cook on low for another 30 minutes or so to heat the soup back up. Taste and add additional curry paste and salt if desired.
  • Serve alone or with optional toppings.

COCONUT CURRY BUTTERNUT SQUASH SOUP

1 1/2 tablespoons Olive oil
4 pounds Butternut Squash, large
4 Shallots, large
1 clove Garlic, minced
3 cups Low sodium Chicken broth
1 teaspoon Sea salt
1 teaspoon Thai red curry paste
3/4 cup Coconut milk
2 teaspoons Fresh Lime juice
1 pinch Micro Purple basil leaves, flowers

Steps:

  • 1. Using a sharp, heavy knife, trim the stem end from the squash, then cut in half lengthwise. Scoop out the seeds and discard. Cut off the peel, and then cut the flesh into 1-inch (2.5-cm) cubes. (You should have about 9 cups/3 lb./1.5 kg.)
  • 2. In a soup pot over medium heat, warm the olive oil. Add the shallots and cook until softened, 2 to 3 minutes. Add the ginger and garlic and cook until fragrant but not browned, about 1 minute. Add the squash, broth and 1/2 tsp. salt and bring to a boil over high heat. Reduce the heat to maintain a simmer, cover and cook until the squash is tender when pierced with a fork, about 20 minutes. Remove from the heat and let cool slightly.
  • 3. In a small bowl, combine the curry paste and coconut milk and whisk until well blended. In a blender or food processor, working in batches if necessary, process the soup until smooth. Return to the pot and stir in the curry-coconut milk mixture. Reheat the soup gently over medium heat just until hot and season with lime juice and additional salt to taste. Ladle into warmed individual bowls and serve immediately.

3 -4 lbs butternut squash, peeled and seeded
2 yellow onions
2 mcintosh apples, peeled and cored
3 tablespoons olive oil
kosher salt & freshly ground black pepper
2 -4 cups chicken stock, preferably homemade
1/2 teaspoon good curry powder
condiments, for serving (optional)
scallion, white and green parts, trimmed and sliced diagonally
sweetened flaked coconut, lightly toasted
roasted salted cashews, toasted and chopped
diced banana

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the butternut squash, onions, and apples into 1-inch cubes. Place them on a sheet pan and toss them with the olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • Divide the squash mixture between 2 sheet pans and spread in a single layer.
  • Roast for 35 to 45 minutes, tossing occasionally, until very tender.
  • Meanwhile, heat the chicken stock to a simmer. When the vegetables are done, put them through a food mill fitted with the medium blade. (Alternatively, you can place the roasted vegetables in batches in a food processor fitted with the steel blade. Add some of the chicken stock and coarsely puree.)
  • When all of the vegetables are processed, place them in a large pot and add enough chicken stock to make a thick soup. Add the curry powder, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • Taste for seasonings to be sure there's enough salt and pepper to bring out the curry flavor. Reheat and serve hot with condiments either on the side or on top of each serving.

1 tablespoon coconut oil
1 cup chopped onions
1 tablespoon tomato paste
1 teaspoon red curry paste, or more to taste
3 cloves garlic, minced
3 pounds butternut squash cubes
1 small tart apple - peeled, cored and chopped
2 cups water, or as needed to cover
1 (14 ounce) can coconut milk
1 tablespoon grated fresh ginger
1 teaspoon white sugar
½ teaspoon salt, or more to taste
½ cup heavy cream

Steps:

  • Heat coconut oil in a large pot over medium heat; stir in onions. Cook and stir until onions are soft and starting to brown, about 5 minutes. Reduce heat to low and continue cooking and stirring until onions are very tender and caramelized, at least 30 minutes more.
  • Add tomato paste and 1 teaspoon curry paste; cook, stirring constantly, for 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute. Add butternut squash and apple; cook, stirring constantly, until evenly coated with spices, 1 to 2 minutes.
  • Pour just enough water into the pot to almost cover squash and apple. Stir, increase heat to high, and bring to a boil. Reduce heat to medium, cover, and simmer, stirring occasionally, until squash is very tender, 30 to 45 minutes.
  • Reduce heat to low and stir in coconut milk and ginger. Puree soup with an immersion blender until smooth. Add sugar and salt, and more curry paste if needed. If soup isn't smooth enough, cook an additional 20 to 30 minutes and puree again.
  • Stir in heavy cream. Add more water if soup is too thick. Taste and adjust seasonings. Serve hot.

2 large butternut squash, softened,* peeled and cubed
2 large leeks well washed and cut into broad slices (use pale green & white parts only)
3-4 large shallots chopped (or one small onion)
1 cup of chopped celery (tops and stems)
2 crisp apples peeled and thinly sliced
2 teaspoons dried thyme
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
4-6 tablespoons high quality curry powder such as "Madras"
7 cups very rich vegetarian chicken flavored stock (IE Carmel Kosher Chicken Dehydrated Chicken Soup)
2 ½ cups of apple cider
1 ½ cups of low fat ½ and ½ cream
½ heavy whipping cream
Sour Cream for garnish
Chives cut in 1" lengths for garnish

Steps:

  • • Place halved and seeded butternut squash in a pan of water in the microwave and cover. Cook on high for about 20 minutes or until softened. Remove and peel and cut in large cubes • Melt butter in large soup pot. • Sauté leek, shallots, and celery for 5 minutes. • Add butternut squash. Cook together for about 15 minutes or until softened. • Add apples, thyme, cinnamon, nutmeg, curry powder, chicken stock and apple cider. Cover and simmer for 40 minutes. • Cool a bit and then using a hand held stick blender, purée mixture. • When reheating add the heavy cream but do not let soup come to a boil • Serve with a dollop of sour cream and garnished with cut chives

2 tablespoons butter
3/4 cup sliced leeks or 3/4 cup chopped shallot
4 cups cubed butternut squash
1 tablespoon curry powder
1 tablespoon packed light brown sugar
2 cups college inn fat free & low sodium chicken broth
sour cream (optional) or Greek yogurt (optional)
chopped fresh chives (optional)

Steps:

  • 1. Melt butter in large saucepan over medium heat. Cook leeks 3 minutes. Add squash, curry powder and sugar; cook 2 minutes.
  • 2. Add broth; cover and bring to a boil. Reduce heat and simmer 15 minutes or until squash is soft. Remove from heat.
