1 pound ground turkey
1/4 cup olive oil
1/2 cup quick oats ((gluten-free, if desired))
1/2 teaspoon garlic powder
Freshly ground black pepper
1/2 cup barbecue sauce
1/4 cup ketchup
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 375°F. Line a rimmed baking sheet with foil. Spray a six-cup muffin tin with nonstick cooking spray and set on top of the baking sheet.
  • In a large bowl, combine ground turkey, olive oil, quick oats, garlic powder, and freshly ground black pepper.
  • In a 1-cup measuring cup, measure out barbecue sauce, ketchup, and Worcestershire sauce; stir well. Pour half of the barbecue sauce mixture into the ground turkey mixture and mix to combine.
  • Evenly divide the meat mixture between the six muffin cups, smoothing the tops of the mounds. Carefully spoon the remaining barbecue sauce mixture over the meatloaf muffins. Bake for 30 to 45 minutes, until the center of a meatloaf muffin reaches 165°F on an instant read thermometer. Use a spoon to help lift the muffins out of the pan and drain on a paper towel-lined plate.

1 (8 ounce) package Cheddar cheese, cubed
1 onion, diced
1 cup seasoned bread crumbs
¾ cup milk
2 eggs
2 tablespoons Worcestershire sauce
2 cloves garlic, diced
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
  • Combine ground turkey, Cheddar cheese, onion, bread crumbs, milk, eggs, Worcestershire sauce, garlic, salt, and pepper in a large bowl; mix well with your hands.
  • Drop scoops of the turkey mixture into the muffin tin using a large ice cream scoop.

3/4 cup ketchup
2 pounds ground turkey
1 cup chopped onion (1 medium onion)
2 slices sandwich bread, torn into small pieces
1 cup grated cheddar cheese
1/2 chopped dill pickle (1 medium pickle)
1 tablespoon Worcestershire sauce
1 large egg, lightly beaten
2 garlic cloves, minced
2 teaspoons dry mustard powder
1 teaspoon salt
1/2 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. In a large bowl, mix 1/2 cup ketchup with the remaining ingredients until well combined. Divide mixture among 6 cups of a 12-cup (4 ounce) muffin tin, spacing them evenly and gently compressing and mounding the tops. Brush tops with remaining 1/4 cup ketchup.
  • Transfer tin to oven; bake until inside temperature registers 170 degrees on an instant read thermometer, about 45 minutes.
  • Remove from oven; let rest 5 minutes before removing from tin. Serve hot.

Barbecue sauce is a Southwestern staple, so I use it in meat loaf instead of ketchup. The buttermilk and garlic also lend a tangy flavor. Whenever I serve this, it gets rave reviews, even from those who don't ordinarily care for meat loaf.

1 cup soft bread crumbs
2 large eggs, lightly beaten
1/2 cup finely chopped red onion
6 tablespoons barbecue sauce, divided
1/4 cup buttermilk
2 tablespoons minced fresh parsley
1 teaspoon garlic salt
1/4 teaspoon pepper
1-1/2 pounds ground beef

Steps:

  • In a large bowl, combine the bread crumbs, eggs, onion, 4 tablespoons barbecue sauce, buttermilk, parsley, garlic salt and pepper. Crumble beef over mixture and mix well. Shape into a loaf. Place in a greased 11x7-in. baking dish. , Bake, uncovered, at 350° for 50 minutes. Spread with remaining barbecue sauce. Bake 10 minutes longer or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before slicing.

I found this on The Healthy Foodie blog and really liked it. I modified it to fit my needs and tastes. The recipe said to bake them in 4 mini loaf pans, but I ended up baking mine in muffin tins so they would be done quicker. You could also bake it as one loaf, but of course it would take longer then. My kids loved these when I made them too.

1 lb ground turkey or 1 lb chicken
1 small onion, finely chopped
1/2 cup whole wheat bread crumbs
1/4 cup dried cranberries
1/4 cup dried parsley
2 tablespoons Dijon mustard
1 tablespoon honey
1/2 teaspoon ground cinnamon
1/2 teaspoon allspice
1 teaspoon salt
1/2 teaspoon black pepper
2 eggs
1/4 cup buttermilk

Steps:

  • Preheat oven to 375°F.
  • Coat muffins tins or baking pans with non stick cooking spray.
  • Place all of the ingredients together in a large bowl and mix until very well combined.
  • Transfer mixture to prepared muffin tins and bake 15 - 20 minutes or until meat thermometer says it's done. (Mini loaf pans would take 30-35 minutes and one large loaf would take 45 - 60 minutes.).
  • Remove meat loaves from oven and let cool about 5 minutes before removing them from the pans.
  • Enjoy!
