1 ½ cups white sugar
1 ½ teaspoons baking powder
¾ teaspoon baking soda
½ cup butter, room temperature
1 cup buttermilk
2 eggs
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
  • Combine flour, sugar, baking powder, and baking soda in a large bowl. Cut butter into flour mixture until mixture resembles coarse crumbs. Reserve about 1 cup butter crumbs.
  • Stir buttermilk, eggs, and vanilla extract into remaining crumbs until batter is just combined; pour batter into prepared baking dish. Sprinkle reserved butter crumbs over batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes.

1 cup packed brown sugar
3/4 cup sugar
3/4 cup vegetable oil
1 teaspoon salt
1 large egg, lightly beaten

TOPPING:
1 cup chopped pecans
1/4 cup packed brown sugar
1/4 cup sugar
1 tablespoon all-purpose flour
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • In a bowl, combine flour, sugars, oil and salt; mix well. Remove 1/2 cup and set aside. To remaining flour mixture, add egg, buttermilk and baking soda; mix well. 3/4 cup vegetable oil
2 1/4 cups flour (I use all purpose and it turns out fine)
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1 cup brown sugar
3/4 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 cup buttermilk (the dry buttermilk found in the baking section of the store will work, just follow the package instr)
1 egg, slightly beatten
1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Mix flour, salt, and 1/2 teaspoon of cinnamon into a large mixing bowl. Add sugar and oil and mix on medium speed until well blended and feathery.
  • Remove 3/4 cup of this mixture and put in a smaller mixing bowl for the topping. Add walnuts and remainder of cinnamon to the contents of the smaller bowl for the topping, mix well and set aside for later.
  • To remaining mixture (not the topping) add baking soda, baking powder, egg and buttermilk. Mix until smooth, this is the coffeecake batter.
  • Spoon the cake batter into a buttered 9 x 13 baking dish. Sprinkle the topping over the cake batter and press lightly with fingers. Bake at 350 degrees for 25 - 30 minutes.

½ cup shortening
1 large egg
2 cups all-purpose flour
1 cup buttermilk

½ cup chopped pecans
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch pan.
  • Cream brown sugar, 1/2 cup white sugar, and shortening together in a mixing bowl. Beat in egg. Add flour, buttermilk, baking soda, vanilla extract, and salt. Fold in rhubarb. Pour mixture into the prepared baking pan.

  • 2. In a blender, finely grind your oats. Transfer to a large bowl. Stir in flour, light brown sugar, 1/2 cup nuts, the baking powder, baking soda and salt. Make a well in center of dry ingrdients. In a medium bowl. Combine buttermilk, eggs, 1/4 cup melted margerine and the vanilla. Add the milk mixture to the flour mixture stir just until moistened it should be lumpy.
  • 3. Pour batter mixture slowly over honey mixture in pan. Bake at 375 f for 25 min make sure its done by inserting a toothpick see if it comes out clean. Remove from oven when done an invert it on a large plate . Cool 8 min and serve ummmmm

1/4 c sugar
1/2 pt fresh raspberries, rinsed and drained
1 1/2 c all purpose flour
2 tsp baking powder
1 c sugar
1 large egg, beaten
3/4 c buttermilk
3 Tbsp vegetable oil
1 tsp lemon extract (or vanilla)

Steps:

  • 1. Place raspberries in a small bowl and sprinkle with 1/4 cup sugar. Mix gently to coat berries. Set aside.
  • 2. Preheat oven to 350F. Coat an 8-inch square or round cake pan with nonstick cooking spray.
  • 3. Mix flour, baking powder and 1 cup sugar in a large bowl.
  • 4. In a smaller bowl, combine egg, buttermilk, oil and extract (I prefer lemon but vanilla will work fine).
  • 5. Add liquid mixture to flour mixture and mix until smooth.
  • 6. Pour batter into pan and top with berries. With a spatula or spoon, gently swirl berries into bater, leaving some on top.
  • 7. Bake for 30-35 minutes, or until pick inserted into center comes out clean (insert in a portion of cake with no berries).
  • 8. Cool in pan on wire rack.

2/3 cup butter

1 1/3 cups buttermilk

Steps:

  • Preheat oven to 350ËšF. Grease bottom and 1/2 inch up the sides of a 13x9x2-inch baking pan; set aside. In a medium bowl, combine flour, brown sugar, and salt. Cut in butter until mixture resembles coarse crumbs; set aside 1/2 cup. Stir baking powder, baking soda, cinnamon, and nutmeg into remaining crumb mixture.
  • In another bowl, combine eggs and buttermilk. Add egg mixture all at once to flour mixture and mix until just combined. Spoon batter into prepared pan. Combine reserved crumb mixture and nuts; sprinkle over batter.
  • Bake at 350ËšF for 35-40 minutes, or until a wooden toothpick inserted in the center comes out clean. Serve warm.

16 tablespoons unsalted butter, softened
2 cups sugar
4 large eggs
2 cups buttermilk
2 teaspoons vanilla extract
2 teaspoons coffee extract or 2 teaspoons freshly brewed espresso
4 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 300°; grease and flour a 10-inch Bundt pan or tube pan.
  • In a bowl, mix all the streusel topping ingredients together with a wooden spoon; set aside.
  • To make the cake-cream together the butter and sugar.
  • Add in the eggs, two at a time, mixing until well blended.
  • Mix in the buttermilk and extracts.
  • Sift together and stir in the remaining dry ingredients.

Rhubarb season is coming so I thought I'd post this recipe that I got from my Aunt. I believe it's a Mollie Katzen recipe as my Aunt loves her stuff.

1 1/2 cups chopped rhubarb (1/4-inch pieces)
3 tablespoons sugar
1/2 cup butter, softened
2/3 cup sugar
2 large eggs
1 teaspoon vanilla
1 1/2 cups unbleached flour
1/2 teaspoon salt
1 teaspoon baking powder
1/8 teaspoon baking soda
1/2 cup buttermilk
2 tablespoons brown sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350° (325° if you're using a glass pan). Place rhubarb in a bowl and sprinkle with sugar. Let stand while preparing the batter.
  • Spray an 8-inch baking pan with nonstick spray.
  • Cream together the butter and sugar in an electric mixer, until fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla.
  • In another bowl, mix together the dry ingredients until uniformly blended. Add the dry ingredients to the butter mixture, alternating with the buttermilk. Stir thoroughly, but minimally, until combined, don't overmix.
  • Fold in the rhubarb and transfer the batter to the prepared pan. The batter will be stiff and you'll have to work with it a little, spreading it in the pan. Don't worry if it doesn't look completely uniform in the pan.
  • Mix together the brown sugar and cinnamon and sprinkle on top of the batter.
  • Bake 25 minutes, or until a toothpick inserted all the way into the center comes out clean.
  • Serve warm or at room temperature.

1/2 teaspoon ginger
1 cup brown sugar
3/4 cup sugar, white
3/4 cup salad oil
1/2 cup walnuts, chopped
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 each egg
1 cup buttermilk

Steps:

  • Combine the flour, salt, 1 teaspoon cinnamon, ginger, sugar (both white and brown), and oil. Mix with an electric beater until well blended. Take out 3/4 cup of the mixture for the topping. To this mixture add the nuts and an additional 1 1/2 teaspoon cinnamon and mix well. Set aside. To the remaining mixture add the soda, baking powder, egg and buttermilk. Mix until smooth. Pour into a 9 x 13 inch greased pan. Sprinkle on the topping. Bake at 350 degrees F for 25-30 minutes.

Steps:

  • Mix together in a large bowl the flour, sale, 1 tsp cinnamon, finer, both sugars and corn oil. Remove 3/4 of the mixture and to it add the nuts and remaining teaspoon of cinnamon. Mix well and set aside. To the remaining batter, add the baking soda, baking powder, egg and buttermilk. Pour into well greased pan, sprinkle the nut topping evenly on top and bake at 350 for 40-45 minutes
