1 bag pita bread
Good olive oil
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut each pita in half and then each half in triangles and place them in a single layer on a sheet pan. Drizzle with olive oil and sprinkle generously with salt.

8 slices white bread
2 tbsp salted butter (- see note 1)
1/8 tsp freshly ground black pepper (- see note 2)

Steps:

  • Pre-heat oven to 400°F/200ºC.
  • Melt the butter in the microwave or in a small pan on the hob.
  • Use a serrated knife and a sawing action to cut the crusts from the slices of bread. (see note 3)
  • Lightly brush 1 side of bread with butter mixture. Sprinkle with pepper
  • Cut each slice of bread into 4 triangles.
  • Place the bread, buttered sides up, onto a baking sheet.
  • Bake 6-8 minutes or until golden and toasted.
  • Allow to cool on a rack for at least 30 minutes.

1 pound skinless, boneless raw salmon fillets
4 teaspoons finely chopped fresh dill
2 tablespoons olive oil
3 tablespoons fresh lime juice
Salt to taste, if desired
Freshly ground pepper to taste
1/4 cup finely chopped red onions
Dill and mustard sauce (see recipe)
Buttered toast triangles (see instructions)

Steps:

  • Carefully pick over the salmon to remove all traces of bone. Cut away and discard any flesh that has a darkened tinge.
  • Put the salmon on a flat surface and chop it finely with a knife. Do not use a food processor or a blender. You do not want to make a smooth paste. There should be about two cups or slightly less, closely packed.
  • Put the salmon in a mixing bowl and add the dill, oil, lime juice, salt, pepper and onions. Stir to blend thoroughly. Serve in small portions with dill and mustard sauce on the side and buttered toast triangles.

Steps:

  • Preheat the oven to 375 degrees. Trim the crusts off four thin slices of loaf bread. Leave the slices whole or cut each slice (to serve as a base for certain savories such as angels on horseback, deviled chicken livers and so on) into uniform rectangles.
  • Melt one tablespoon of butter and butter the bread on both sides. Arrange the bread pieces on a baking sheet and place in the oven. Bake six minutes or until lightly browned on the bottom. Turn the pieces and continue baking one or two minutes longer until browned on the second side.
