1/4 cup butter, cubed
4 large tart apples, peeled and sliced 1/4 inch thick
2 teaspoons cornstarch
1/2 cup water
1/2 cup packed brown sugar
1/4 cup golden raisins
1 teaspoon lemon juice

Steps:

  • In a large skillet, melt butter; add apples. Cook and stir over medium heat for 6-7 minutes or until almost tender. Dissolve cornstarch in water; add to skillet. Add brown sugar and raisins; bring to a boil. Boil for 2 minutes, stirring constantly. Remove from the heat; stir in lemon juice. Serve warm.

1 tablespoon unsalted butter
2 juicy, sweet-tart apples, such as 'Jonathan,' peeled and cut into 12 wedges each
2 tablespoons pure maple syrup
1/4 teaspoon coarse salt

Steps:

  • Melt butter in a medium skillet over medium heat. Add apples; cook, turning once, until golden brown, about 5 minutes total. Stir in syrup and salt; reduce heat to low. Simmer until apples are soft, about 5 minutes. Serve warm.

1 cup sliced almonds
4 Tbs. unsalted butter
1 tsp. cinnamon
1 tsp. vanilla extract
4 Golden Delicious apples (2 lb.), peeled and cut into ¼-inch slices
½ cup raisins
½ cup maple syrup

Steps:

  • 1. Heat wok over medium heat. Add almonds, and cook 2 to 3 minutes, or until toasted and golden brown, stirring constantly. Transfer almonds to plate. 2. Melt butter in wok over medium heat, then add cinnamon and vanilla. Reduce heat to medium-low, and add apples. Cook apples 10 minutes, or until softened, stirring frequently. Add raisins and maple syrup, increase heat to medium, and cook 3 to 5 minutes more, or until syrup thickens. 3. Divide apples among 4 bowls, and garnish with toasted almonds.

2 tablespoons unsalted butter
3 pounds assorted apples, peeled, cored, and cut into quarters
3 cups apple cider
Juice of 1/2 lemon
1 teaspoon lemon zest
1/2 teaspoon ground cinnamon

Steps:

  • In a Dutch oven over medium heat, melt butter and add apples. Cook apples until slightly softened, about 5 minutes. Add cider, bring to a boil, and reduce heat to a simmer. Let simmer, partially covered and stirring occasionally, until soft, about 30 minutes.
  • Preheat oven to 250 degrees. Mash softened apples with a potato masher. Remove from heat and add lemon juice, lemon zest, and cinnamon. Using an immersion blender, puree mixture until smooth.
  • Pour apple mixture evenly into a baking dish. Transfer to oven and bake, stirring occasionally, until thickened and reduced, about 3 to 3 1/2 hours. Let cool before serving. Apple butter may be kept, refrigerated in an airtight container, up to 5 days.
