1/2 cup butter, softened
3-3/4 cups confectioners' sugar
1 tablespoon half-and-half cream or whole milk
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
Paste food coloring, optional

Steps:

  • In a large bowl, beat the butter, confectioners' sugar, cream and extracts. If desired, divide dough into portions and knead in food coloring. , Form into balls by teaspoonfuls; flatten into patties, or roll between 2 pieces of waxed paper to 1/8-in. thickness. Cut mints into desired shapes. Cover and refrigerate for several hours or overnight. Store in the refrigerator.

1/2 cup butter mints, coarsely crushed
1/4 cup powdered sugar
2 cups powdered milk
3/4 cup instant coffee granules, divide

Steps:

  • Combine the first 4 ingredients together in medium mixing bowl.
  • Divide equally and pour into jars.
  • Divide and layer instant coffee on top of each.
  • Secure lid and attach instructions.
  • Instructions:.
  • Place mixture in a bowl and toss lightly.
  • Spoon back into jar.
  • Combine 1/4 cup mix with 2/3 cups boiling water.
  • Stir until mixture dissolves.

4 cups confectioners' sugar (plus more for dusting)
1 tablespoon cream (or milk)

Its that time of the year when everyone could do with a mug of coffee and some soft serenading music. This is a wonderful creation. An easy mix from Martha Stewart that I came across in the Weekend magazine dated December 23rd'2005. Enjoy! Happy New Year, everyone!

4 vanilla beans, scraped
1 lb coffee beans, freshly ground

Steps:

  • Using a paring knife, scrape the seeds from the vanilla beans.
  • Mix the scraped seeds with the coffee.
  • For best results use a medium-bodied coffee from Kenya or Colombia.
  • Transfer the mix into a coffee bag.
  • Decorate with a lilac ribbon(use whichever is your favourite colour) and don't forget to add your personal message before you seal it up with a pretty sticker.
  • Enjoy the season of Christmas, Hannukah and New Year!
  • Note: You may substitute the vanilla beans with 1 or 2 tsps. of cinnamon or nutmeg powder for a different flavour. I haven't tried other flavours, but if you do, be sure to let me know in your comments how it turned out.

These pale golden butter-mint pats/cookies are similar to a shortbread type cookie, and are so melt-in-your-mouth delicious! A favorite from my father.

Number Of Ingredients 4

1 cup butter, softened (do not use margarine)
1 cup butter mints, crushed (yellow mints "Richardson Butter Mints"(made with real butter, comes in a 5.5 ounce box)
2 cups flour
1 tablespoon granulated sugar

Steps:

  • Cream butter in large mixer bowl until light; add crushed mints.
  • Add flour; blend well at low speed with mixer, or by hand.
  • Chill dough for 1/2 hour.
  • Roll out or pat dough into a 9-inch square on waxed paper.
  • Sprinkle with sugar.
  • Cut into 1 1/2-inch squares.
  • Using tiny cookie cutter, press a design on each square.
  • Place on ungreased cookie sheets.
  • Bake at 350 degrees for 18-20 minutes, or until the cookies are set and just starting to turn pale golden (not browned). Do not overbake.
  • (NOTE: Cook time includes chill time of 1/2 hour.).
  • (NOTE: To crush mints place in heavy plastic bag and crush with a rolling pin- or, use your processor.).
