6 burrito-sized flour tortillas
3 cups refried beans
1 cup Taco Bell Red Sauce
1/4 yellow onion
1 cup cheddar cheese (, finely shredded)

Steps:

  • Wrap tortillas in damp paper towels and microwave for 20 seconds on 50% power.
  • Top each tortilla with refried beans, Taco Bell red sauce, onions and cheese.
  • Fold in the top and bottom and wrap tightly before serving.

1 can (16 ounces) refried beans
1 cup salsa
1 cup cooked long grain rice
2 cups shredded cheddar cheese, divided
12 flour tortillas (6 inches)
Shredded lettuce, optional

Steps:

  • Preheat oven to 375°. In a large bowl, combine beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up. , Arrange burritos in a greased 13x9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. If desired, topped with lettuce.

4 lavash bread (whole wheat) or 4 wheat flour tortillas (lard-free)
1 (15 ounce) can no-salt-added pinto beans
1/2 cup low-sodium salsa (no-salt-added)
2 tablespoons red bell peppers (finely chopped)
1 teaspoon chili powder (without salt)
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon oregano
hot sauce, to taste (1 tablesoon or so of a low sodium brand, such as Jake & Amos)
salad greens
tomatoes, chopped
carrot, shredded
avocado, chunked
scallions, sliced or red onion, finely chopped

Steps:

  • Warm the lavash or tortillas one by one in a dry skillet or in the microwave.
  • Stack them in a clean towel to keep warm.
  • Combine beans, salsa, bell pepper, and seasonings in a medium saucepan.
  • Heat uncovered for 5 minutes, stirring occasionally, then remove from heat.
  • Mash beans to desired consistency.
  • Spoon 1/4 of bean mixture onto each tortilla, allowing room for rolling into burrito shape.
  • Add any topping(s) you desire.
  • Roll into burrito shape.

1 medium onion, diced
2 pounds ground beef
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon ground oregano
1/4 teaspoon salt
Three 7-ounce cans Mexican tomato sauce (I use El Patobrand) or enchilada sauce
One 28-ounce can refried beans
3/4 cup grated Cheddar, plus extra for sprinkling
12 burrito-size flour tortillas
1/2 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 170 to 180 degrees F.
  • In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
  • Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
  • Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
  • When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
  • Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.
