STRAWBERRY LEMON FOOL PARFAITS



Strawberry Lemon Fool Parfaits image

Number Of Ingredients 8

2 cups strawberries
1/4 cup lemon juice
1/4 to 1/2 cup sugar (depending on sweetness of strawberries)
1/2 cup sliced strawberries
2 cups heavy cream
3 lemons
1 cup sugar, plus 1/4 cup
1 cup water

Steps:

  • In a saucepan, combine the strawberries, lemon juice and sugar. Cook over medium heat until the strawberries begin to soften, about 10 minutes. Remove the pan from the heat. Place the strawberry mixture in a food processor and process until smooth. Remove the mixture from the food processor and strain through a fine mesh strainer. Mix in the sliced strawberries and place in the refrigerator. Refrigerate until very cold. With an electric mixer, whip the cream. In parfait glasses, layer the strawberries and whipped cream, starting and ending with the whipped cream. Place in the refrigerate and chill for 4 hours.
  • Remove the zest of the lemons using a vegetable peeler. Be careful not to get any of the white pith. Julienne the zest. Blanch the julienned zest in boiling water for 5 minutes to remove any bitterness. In a small saucepan, combine 1 cup of sugar and the water. Bring to a boil. Add the blanched zest to the sugar syrup. Remove the sugar syrup from the heat and let the zest steep for 10 minutes. Remove the zest from the syrup and lay out on a rack. Sprinkle with the remaining 1/4 cup sugar.
  • Top the parfaits with some of the candied lemon zest.

CRANBERRY-MANGO FOOL WITH GINGERSNAPS

1 1/2 cups cold leftover cranberry-mango relish, recipe follows
2 cups cold heavy cream
2 tablespoons granulated sugar
1 teaspoon vanilla extract
Coarsely crushed gingersnaps
2 tablespoons unsalted butter
1 medium onion, red or yellow, diced
2 tablespoons grated fresh ginger
1 1/2 cups orange juice
1/4 cup light brown sugar
1 pound cranberries
2 ripe mangoes, halved, pitted and diced
1 tablespoon grated orange zest

Steps:

  • Put the cranberry-mango relish in a food processor and process until smooth.
  • Whip together the cream, sugar and vanilla extract until soft peaks form. Reserve 1/4 cup of the cream in a separate bowl. Fold the puree into the remaining cream until just combined. Fill each red wine goblet 1/2 way with some of the fool and sprinkle with some of the gingersnaps. Fill the goblets the rest of the way with the fool, top with a dollop of the remaining whipped cream and a sprinkling of gingersnap.
  • Melt butter in a medium saucepan over medium high heat. Add onions and ginger and cook until soft. Add orange juice and brown sugar and cook until the sugar is completely melted and the mixture thickens slightly, 5 to 7 minutes.
  • Add half of the cranberries and cook until they pop. Add remaining cranberries and cook for 5 minutes. Remove from heat and stir in the mangoes and zest. Serve at room temperature.

BLACKBERRY FOOL

I strongly recommend using fresh blackberries in this recipe for best flavor. Raspberries, strawberries or a combination of all three may be used, but they should all be fresh.

4 cups heavy cream
1 cup confectioners' sugar, divided
½ cup sour cream, at room temperature
⅛ teaspoon almond extract
2 pints fresh blackberries
8 strips of lemon zest, for garnish
8 sprigs fresh mint

Steps:

  • Pour the heavy cream into a large bowl with half of the confectioners' sugar and almond extract. Whip until stiff. Fold in sour cream. Refrigerate.
  • In a separate bowl, toss blackberries with the remaining confectioners' sugar. Let stand at room temperature for about 15 minutes.
  • In 8 parfait glasses, layer whipped cream and blackberries, beginning and ending with whipped cream. Garnish each parfait with a strip of lemon zest, a few blackberries and a sprig of mint.
