It's everything you love about wings, only in burger form! Spicy Buffalo Chicken Burgers have a secret to keep them juicy and flavorful: shredded carrot and celery in the burger!

For the burgers
1 pound ground chicken
1/2 cup panko breadcrumbs
2 tablespoons grated carrot
2 tablespoons grated celery
2 tablespoons Franks hot sauce, plus extra for serving
1/2 teaspoon kosher salt
1/2 teaspoon granulated garlic
1/4 teaspoon black pepper
To serve
4 potato hamburger
Butter lettuce
Blue Cheese Sauce

Steps:

  • Preheat the grill and rub with oil: Preheat the grill for direct heat grilling, by turning gas burners to medium-high or spreading charcoal coals so there is direct heat under the grilling grates. The temperature should be 450-500˚F. To make sure the burgers do not stick, dip a kitchen towel or some paper towels in oil and use tongs to quickly rub down grill grates. Alternatively, you can spray the grates with spray oil, but be careful of flare-ups.
  • Grill the buns: Add buns to the grill next to burgers and grill for 30 seconds. Optionally, you can brush buns with a little butter or oil, but it isn't necessary.
  • Leftovers and storage: Leftover buffalo chicken burgers keep well in the fridge for 3-4 days. They reheat really well in the microwave on high for 1 minute.

2 pounds 99%-lean ground turkey
1 small onion, minced
½ cup panko bread crumbs
¼ cup Buffalo wing sauce
¼ cup chopped fresh parsley
1 egg
3 cloves garlic, minced
½ teaspoon celery seed
¼ teaspoon ground black pepper
1 pinch cayenne pepper
1 pinch paprika
1 teaspoon salt
12 slices Monterey Jack cheese
12 hamburger buns, split
6 tablespoons ranch dressing, or to taste
6 tablespoons Buffalo wing sauce, or to taste

Steps:

  • Preheat a George Foreman® Grill or an outdoor grill for medium-high heat.
  • Mix ground turkey, onion, panko, 1/4 cup Buffalo wing sauce, parsley, egg, garlic, celery seed, black pepper, cayenne pepper, paprika, and salt together in a large bowl; form into 12 patties.
  • Grill patties on the grill for 3 minutes, flip and continue grilling until cooked through, about 2 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Top each burger with a slice of Monterey Jack cheese and place each inside a bun.
  • Mix ranch dressing and 6 tablespoons Buffalo wing sauce together in a bowl; spread onto each burger.

1 pound ground chicken
1 cup dry bread crumbs
¾ cup crumbled blue cheese
1 extra large egg
¼ cup onion, chopped
⅓ cup buffalo wing sauce
4 hamburger buns, split and toasted

Steps:

  • Mix together the chicken, bread crumbs, blue cheese, egg, onion, and wing sauce in a mixing bowl until evenly combined. Form into 4 patties and place between sheets of waxed paper or plastic wrap. Place into an airtight container and refrigerate overnight for best results.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.

Like wings and like big stuffed sandwiches that are great foods for a superbowl party ... Well this is the best of both worlds. Great buffalo wing taste, celery and carrots for a crunch, a wonderful blue cheese sauce all in a nice thick crunchy sandwich. Please feel free to use your own wing sauce and homemade blue cheese but a store bought sauce for both will work just fine for this. The chicken and vegetables can be made ahead so all it takes is a few minutes to put it together, and bake for 20 minutes either on the grill or in the oven. Slice and serve with all your other favorite party foods. The ultimate Buffalo Wing Sandwich. This is perfect for a party cuz you can make it all ahead and just put it together and grill. BBQ, Superbowl party, or a football night dinner with friends. Add a good salad, some fries or onion rings or a potato salad and you got dinner. I promise you will love it. FYI, if you don't like provolone, you can use mozzarella if you prefer.

4 boneless skinless chicken breasts
2 cups blue cheese dressing
10 slices provolone cheese (right from your grocery deli, feel free to use shredded mozarella if you prefer or your favorite che)
3 carrots, large (thin sliced on a angle)
3 celery ribs (thin sliced on a angle)
1 onion (medium, cut in half and then thin sliced)
3/4 cup italian dressing to marinade vegetables
2 1/2 cups buffalo wing sauce
1 loaf Italian bread
4 tablespoons of melted butter
1 tablespoon kosher salt
1 teaspoon ground black pepper

Steps:

  • Marinade -- the chicken all day or even over night. In a large baggie add 1 cup of wing sauce and the chicken. Seal and shake and mix well to coat.
  • Vegetables -- 3-4 hours before making the sandwich, marinate the vegetables. Add the sliced onions, carrots and celery in the Italian vinaigrette in a baggie. Just toss in the refrigerator.
  • Chicken -- Once again, you can grill the chicken ahead of time to make dinner a quick fix. Grill outside or inside grill pan is fine for this. Salt and pepper the chicken and grill until done. It should take about 10-12 minutes. Don't cut the chicken until you are ready to put the sandwiches together. Just let cool and wrap in foil and refrigerate until ready to assemble the sandwich.
  • Sandwich -- Cut lengthwise and hollow out both the top and bottom just a bit to make room for the filling. Then place under the broiler for just 30 seconds. Just browning the inside will help keep the sandwich from getting soggy. Bring the chicken to room temp and cut thin slices on a angle. Spread the blue cheese on both the top and bottom of the bread, then to the bottom slice of bread, add 1/2 of the chicken, 1/2 cup of wing sauce, the marinated vegetable (drained), 1/2 of the provolone cheese, the remaining chicken and 1/2 cup wing sauce and the other 1/2 of the cheese. Finish with the top bread.
  • Sauce and Bake -- Melt the butter and add the remaining 1/2 cup sauce just in the microwave and then brush on the bread, top and bottom. Now wrap in foil and either grill inside or outside. Inside oven should be 375. I like to weigh my down just a bit as it grills or bakes, Just a cast iron or any heavy pan will work just fine. Cook for 10 minutes and then flip and cook another 5-7 minutes. Remove and let set a minute and then slice up. It will serve 8-10 very hungry people.

Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook.

Buffalo Sauce Burgers Stuffed With Blue Cheese image

Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Recipe #139827--they are excellent and I highly recommend them.

4 tablespoons butter, cut in small pieces
1/3 cup mild hot sauce (they mentioned Durkee, I used Frank's RedHot)
1/2 cup finely crumbled blue cheese
1 tablespoon minced garlic (you may want to use less if you're not a big fan of garlic)
2 lbs 85% lean ground beef or 2 lbs ground buffalo meat
1/2 teaspoon celery seed
1/3 cup finely chopped onion
6 hamburger buns, split

Steps:

  • Melt butter and whisk in hot sauce.
  • Mix blue cheese and garlic in a small bowl.
  • Using your hands, gently mix beef (or buffalo), celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
  • Spoon about 2 teaspoons of cheese-garlic mixture in center of 6 patties, then top with remaining patties and press together, sealing edges.
  • Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
  • Heat grill to medium and oil grate.
  • Grill burgers about 4-5 minutes on each side, or until cooked to taste. (I'll only eat ground beef cooked well, so I cooked a bit longer.) Brush with remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.
  • (I couldn't think of many traditional condiments I wanted on this burger, so I just ate mine with extra buffalo sauce and lettuce).
