You can use any toppings you like, but we'd really recommend using nutritional yeast if you're after a healthy and delicious alternative to cheese. 40 g buckwheat flour
80 ml water
1/2 teaspoon dried oregano
1 teaspoon olive oil
1 (200 g) can chopped tomatoes
1 tomatoes, sliced
20 g spinach
1 garlic clove, crushed
1 tablespoon nutritional yeast

Steps:

  • Preheat the oven to 200C/390°F.
  • Add some olive oil to a frying pan to heat. Mix together all the tortilla ingredients then add half of the mixture to the frying pan, heat for 2 minutes on each side over a medium heat, then set aside and repeat with the other half of the mixture.
  • Add the chopped tomatoes and crushed garlic clove to a saucepan, bring to the boil then reduce to a simmer and leave for 5 minutes.
  • Spread the tomato mixture on top of the tortillas and add the rest of the toppings. Place in the oven for 10 minutes to cook and then serve!

⅓ cup buckwheat flour
⅓ cup water
½ teaspoon dried oregano
2 teaspoons olive oil, divided
½ (14.5 ounce) can diced tomatoes
1 clove garlic, crushed
1 tomato, sliced
5 tablespoons fresh spinach
1 tablespoon nutritional yeast

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine buckwheat, water, oregano, and 1 teaspoon olive oil in a bowl; mix until well combined.
  • Heat 1 teaspoon olive oil in a skillet over medium-high heat. Add half of the tortilla batter; cook until edges are dry, about 2 minutes. Flip and cook until browned on the other side, 2 to 3 minutes more. Transfer to a baking sheet. Repeat with remaining batter.
  • Place diced tomatoes and garlic in the same skillet over medium heat; bring to a boil. Reduce heat and simmer until soft, about 5 minutes. Spread tomato mixture over tortillas and top with tomato slices, spinach, and nutritional yeast.
  • Bake in the preheated oven until golden, about 10 minutes.
