1 bottle (2 liters) lemon-lime soda, chilled
2 pints vanilla ice cream

This bubbling cocktail recipe is from the October 2008 issue of Martha Stewart Living and was featured on the Martha Stewart Show.

Yield Makes 8 cocktails

Number Of Ingredients 5

1 cup boiling water
1 cup sugar
2 cups packed mint leaves
6 kiwis, peeled and quartered
1 liter club soda

Steps:

  • In a glass measuring cup, pour boiling water over sugar. Stir until sugar has dissolved; refrigerate syrup until cool.
  • Puree mint leaves with cooled syrup in a blender. Add kiwis, and blend until just smooth.
  • Strain mixture into a pitcher through a fine mesh sieve lined with cheesecloth; discard solids; stir in club soda. Transfer pitcher to refrigerator until chilled. Pour into 8 clean chemistry flasks and serve with straws.

Get some berries bubbling in your cauldron and add some edible glitter to this spooky purple cocktail, made with vodka, raspberry liqueur and blue curaçao

20g caster sugar (optional)
50g frozen mixed berries
200ml vodka
100ml raspberry liqueur
50ml blue curaçao
100ml lemon juice
ice
edible glitter, to garnish (optional)
4 cocktail cherries, to serve (optional)

Steps:

  • Start by making the fruit base. Pour 60ml water into a saucepan and add the caster sugar, if using (use 75ml water if not using the sugar), and tip in the berries. Cook for 3-4 mins over a medium heat until the berries have defrosted and are starting to soften, and the liquid is bubbling. Turn off the heat and leave to cool. Strain and pour into a jug.
  • Pour the fruit base (you should have approximately 80ml) into a cocktail shaker with the vodka, raspberry liqueur, blue curaçao, lemon juice and a large handful of ice. Shake well until the outside of the shaker feels cold and frosty.
  • Double strain into four chilled coupe or martini glasses. Sprinkle with a little edible glitter, if using, and stir. Garnish with a skewered cocktail cherry, too, if you like.
