BEEF, BEAN, & CHEESE TAQUITOS
Alicia Stoltenberg from Everyday Home Cook shares her recipe for Beef, Bean, & Cheese Taquitos. Taquitos are a fun food for appetizers, or even a main dish. They are great for the whole family, and perfect finger food for dipping in a side of salsa or cheese dip. This simple recipe is also freezer friendly. So, whip up a double batch and throw half in the freezer for a quick meal in the future!

Steps:
- Preheat oven to 400°F. Warm corn tortillas as directed on package.
- Spread 1 to 1 1/2 tablespoons refried beans down the center third of a tortilla, top with about 1 to 2 tablespoons ground beef, and a sprinkle of cheese. Roll up and place seam side down on one of two large cookie sheets or two 12"x17" jelly roll pans. Repeat with remaining tortillas.
- Spray taquitos lightly with cooking spray. Bake in preheated 400°F oven for about 20 minutes, until lightly browned and crispy. Serve immediately.
B'S BEEF AND BEAN TAQUITOS W/ MEXI-RANCH DIPPING SAUCE
After making a Mexican casserole that failed to please my family, I ended up just throwing spoonfuls of it into tortillas and frying them taquito style in attempts to salvage the ingredients used. It came out pretty good, but probably needs some tweaking. The sauce is just something I threw together but I feel it compliments the taquitos nicely.

- Taquitos:.
- Brown ground beef with onion and garlic, drain.
- Add taco seasoning and prepare according to directions on packet.
- Add refried beans, salsa, and 1 cup of the cheese mixture.
- Stir to mix ingredients and heat mixture all the way through.
- Heat tortillas in microwave to soften, layering them with paper towels.
- Spoon roughly 2 tablespoons of mixture into each tortilla, sprinkling a bit of the remaining cheese on top.
- Roll and fry in oil.
- Optional: Cut each taquito into thirds with diagonal cuts.
- Sauce:.
- Mix sour cream, ranch, and desired amount of taco sauce.
- Top with chopped cilantro.

- Cut steak into thin strips. Combine mustard, chili powder, salt, pepper and garlic in a bowl; add steak and toss to coat. Transfer to a 3-qt. slow cooker; add tomatoes, onion and bouillon. Cover and cook on low for 6-8 hours. Stir in beans; cook 30 minutes longer. Serve over rice.
