A hybrid of bruschetta and caprese makes for a quick summertime vegan dinner.

1 cup textured vegetable protein (such as Bob's Red Mill® TVP)
¾ cup boiling water
2 tablespoons boiling water
1 (16 ounce) package frozen breaded eggplant cutlets (such as Trader Joe's®)
1 loaf Italian bread
¼ cup olive oil, or as needed
½ pound diced firm tomatoes
3 tablespoons capers
¼ teaspoon dehydrated minced garlic, or to taste

Steps:

  • Place textured vegetable protein in a bowl; add 3/4 cup plus 2 tablespoons boiling water and stir. Let stand for 5 to 10 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Place eggplant cutlets on a baking sheet.
  • Bake in the preheated oven for 10 minutes. Flip cutlets. Bake until golden brown, 16 to 17 minutes more.
  • Preheat grill for medium heat and lightly oil the grate.
  • Slice bread into 16 slices approximately 1/2-inch thick. Paint bread with olive oil.
  • Cook on the preheated grill until lightly browned, about 3 minutes.
  • Place tomatoes in a microwave-safe bowl. Heat in a microwave until slightly softened, about 3 minutes. Drain and discard excess liquid.
  • Stir tomatoes, capers, and dehydrated garlic into the rehydrated textured vegetable protein.
  • Arrange toasted bread slices on a serving dish. Stack 1 eggplant on each slice of bread; top with a dollop of tomato mixture.

8 ounces cream cheese, at room temperature
1/4 teaspoon garlic powder
1 teaspoon dried marjoram
1/4 teaspoon ground thyme
10 dashes coarse black pepper (10 grinds)
1 large red bell pepper, quartered
1 red ripe tomato, seeded and diced small
1 small white onion, diced small
1/4 cup pitted black olives, chopped
2 marinated artichoke hearts, and stems chopped
2 garlic cloves, chopped
1/2 cup feta cheese, crumbles
1/4 cup basil olive oil
2 tablespoons balsamic vinegar
1 large baguette, cut into 1-inch slices
1/2 cup best olive oil

Steps:

  • Combine cream cheese, garlic powder, marjoram, thyme, and pepper in a food processor until smooth. May be made up to one week in advance. (Bring to room temperature before serving.).
  • Preheat broiler or toaster oven broiler. Cover broiler pan or cookie sheet with aluminum foil, folded up at the sides. Broil pepper quarters, peel side up, close to the heat source, until the skin begins to bubble and char. Remove pepper to a closed container until cool enough to handle. The blackened skin will slough off easily; discard it. Pour any juices from the foil and container into a large bowl.
  • Into the same bowl, chop or small dice vegetables in proportions that please your eye and palate. Mix well before adding cheese. Swirl in olive oil and vinegar and stir gently so the feta keeps its shape. Season to taste. Allow to rest at room temperature.
  • Brush one side of each slice of bread with olive oil. Broil briefly, just until golden. Spread each with herbed cream cheese and a heaping spoonful of relish. Serve immediately.

Steps:

  • Preheat oven to 425°F Slice bread into 32 (1/2-inch thick) slices. Mix oil and parsley in small bowl. Brush oil mixture lightly on both sides of bread slices. Place in single layer on baking sheet.
  • Bake 6 to 8 minutes or until crisp and light brown, turning once. Cool on wire rack.
