EASY BRUSCHETTA CHICKEN
This Easy Bruschetta Chicken recipe is made with tender chicken breast pieces coated in garlic and spices that are grilled, then topped with a fresh tomato and basil topping. A little drizzle of balsamic glaze takes the flavors over the top!

- In a medium sized bowl, combine the tomatoes, garlic, olive oil, balsamic vinegar, basil, salt and pepper. Stir to combine and set aside.
- 2. Prepare your chicken breasts. You can pound them to even thickness or leave them as is. Coat the chicken with the olive oil.
- 3. In a small bowl, combine the Italian seasoning, garlic powder, salt and pepper. Coat the chicken breasts evenly with the seasoning.
- 3. Grill the chicken over high heat for 6-8 minutes per side or until cooked through.
- 4. When the chicken is cooked, top each piece with a slice of mozzarella cheese and allow it to melt.
- 5. Remove the chicken from the grill and let it rest for about 5 minutes. Top the chicken with the tomato basil topping and a drizzle of balsamic glaze and serve.

BRUSCHETTA CHICKEN

- Preheat the oven to 375 degrees F.
- Toss the diced bread with 1 tablespoon olive oil. Sprinkle with a pinch of salt and pepper and place on a sheet pan. Toast in the oven until golden, but still a little chewy, about 5 minutes.
- Meanwhile, heat 2 tablespoons olive oil in a skillet over a medium-high heat. Sprinkle the chicken cutlets with salt and pepper and, when the oil is hot, add to the skillet. Fry, flipping as needed, until cooked through and nicely seared, 3 to 4 minutes per side.
- Combine the tomatoes, garlic, basil chiffonade, the remaining 2 tablespoons olive oil, some salt and pepper and 1 tablespoon balsamic reduction in a bowl. Toss and set aside.
- Remove the bread from the oven and, at the last minute, toss with the tomato mixture. Top the cooked chicken with the bread/tomato mixture, allowing it to fall around the edges and fill in the gaps of the skillet. Drizzle over the remaining 2 tablespoons balsamic reduction and garnish with some fresh basil leaves. Serve immediately.
BRUSCHETTA CHICKEN AND MUSHROOMS
A lovely combination of two of my favorite dishes...bruschetta and chicken with mushrooms and cheese. It's quick, easy and a family pleaser. Omit the bread and it is even low carb!

- Preheat the oven to 350°F
- Brown the chicken breasts in a small amount of olive oil.
- Remove chicken and add butter. Saute mushrooms and garlic in butter until soft.
- Place browned chicken on cookie sheet.
- Top with sauteed mushrooms and slice of mozzarella cheese.
- Spread french bread with butter or olive oil.
- Place around chicken on cookie sheet.
- Place cookie sheet in oven for 10 minutes, or until cheese is melted and bread is toasted.
- Meanwhile, dice tomatoes, onions, and basil.
- Mix tomatoes, italian seasoning, onions and basil in a small bowl with salt and pepper to taste.
- Remove chicken and bread from oven.
- Place bread on serving plate.
- Top with chicken/mushroom/cheese mixture.
- Add 1/4 of tomato mixture to the top.
- Serve and enjoy!

Wonderful for an appetizer before a pasta meal and great paired with a glass of Chianti. Feel free to add your own touches to taste!

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Arrange bread slices on a baking sheet in a single layer.
- Broil bread slices until toasted, 1 to 2 minutes; watch carefully to prevent burning. Remove toasted slices and set aside on baking sheet.
- Heat olive oil in a skillet over medium heat; cook and stir mushrooms, green onions, garlic, salt, black pepper, and parsley until mushrooms are softened and juicy, about 5 minutes. Set mixture aside. Mix diced tomatoes with balsamic vinegar in a bowl and set aside.
- Top each toasted bread slice with mushroom mixture and spread tomato mixture on top. Spread mozzarella cheese over each appetizer. Return to broiler until cheese has melted and bruschetta are hot, about 5 minutes.
