Nonstick baking spray
4 ounces unsweetened chocolate, broken into pieces
2 sticks (16 tablespoons) salted butter, softened
1 1/2 cups sugar
3 large eggs
1 tablespoon vanilla extract
1 cup finely chopped beets, from 8 ounces of cooked beets (see Cook's Note)
1/2 cup toasted walnuts, chopped
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
Confectioners' sugar, to serve

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch square baking pan with nonstick baking spray. Line it with a piece of parchment overhanging the edges (this will help in removing the brownies from the pan) and spray again.
  • Melt the chocolate in a bowl in the microwave or over a double boiler. Set aside to cool slightly.
  • In the bowl of a stand mixer using the paddle attachment, cream the butter and sugar. Beat in the eggs. With the mixer on low speed, drizzle in the melted chocolate. Add the vanilla extract, beets and walnuts and mix. Whisk together the flour and cocoa powder in a small bowl. Add half of the flour to the batter and mix just until combined. Mix in the remaining flour; do not over mix.
  • Pour the batter into the prepared baking pan. Spread it to even out the surface. Bake until a toothpick inserted in the center comes out clean, 50 to 55 minutes. Let the brownies cool completely.
  • Using the paper, lift the brownies from the pan. Remove the paper, and then cut the brownies into 9 squares. Dust with confectioners' sugar before serving.

12 Reese cups or Oreos
1 box brownie mix

Steps:

  • Preheat oven to 350 degrees fahrenheit. Smoosh 1 1/2 squares of break-apart refrigerated cookie dough into the bottom of each well. Place Reese cup upside down on top of cookie dough (or an Oreo!). Top with prepared box brownie mix, filling 3/4 full. Bake for 18-22 minutes

You know how I love to make recipes with contrast: salty and sweet; hot and cold. The secret ingredient to making the brownie super rich is a little bit of espresso powder. Adding it really enhances the chocolate flavor.

Nonstick cooking spray, for the skillet
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, melted
1 cup firmly packed light brown sugar
1 cup granulated sugar
1 tablespoon espresso powder
3 large eggs
1 tablespoon pure vanilla extract
1 cup semisweet chocolate chips
1 cup toffee bits
Vanilla ice cream, for serving
Salted caramel sauce and hot fudge sauce, for drizzling

Steps:

  • Preheat the oven to 350 degrees F. Coat a 10-inch cast-iron skillet with nonstick cooking spray.
  • Whisk together the flour, cocoa powder and salt in a medium bowl.
  • Stir together the melted butter, brown sugar, granulated sugar and espresso in a large bowl. Gradually add the eggs and vanilla to the large bowl, stirring until combined. Add the flour mixture and stir just until smooth. Fold in the chocolate chips and toffee bits. Pour the batter into the prepared skillet.
  • Bake until the edges are firm and the brownies are set, 40 to 45 minutes. Remove the skillet from the oven. Let cool slightly. Top with scoops of vanilla ice cream and drizzle with caramel and hot fudge sauce. Serve immediately.

1/2 cup butter
3/4 cup sugar

1 teaspoon vanilla
1/2 teaspoon baking powder

1 (6 ounce) package semi-sweet chocolate chips
1/2 cup chopped walnuts
1 (4 ounce) package softened cream cheese
2 tablespoons butter
1/4 cup sugar
1 large egg
1/2 teaspoon vanilla
1 tablespoon flour

Steps:

  • For brownies:.
  • Cream butter& sugar until smooth.
  • Add eggs, continuing to mix well Add vanilla Mix in the baking powder, salt and melted chocolate, stirring well.
  • Slowly add the flour, then fold in chocolate chips and nuts.
  • Reserve 1 cup of the mixture and pour remaining mixture into 9 X 9 square pan. Use Pam or parchment paper to line pan, for easier removal.
  • Filling:.
  • Whip the cream cheese and butter together.
  • Gradually add the sugar, mixing together well.
  • Add the egg, vanilla and then the flour mixing well Pour the cream cheese mixture over the brownie mix in the pan.
  • Take the 1 cup of the reserve brownie mix and drop by spoonfulls over the cream cheese mixture and swirl slightly to"marble" the brownies.
  • Bake in a pre-heated 350 degree oven for 30-35 minutes.
  • Let brownies cool and cut into squares to enjoy!

4 (1 ounce) squares unsweetened chocolate, chopped
1 cup butter
4 eggs
2 cups white sugar
1 cup all-purpose flour
3 cups confectioners' sugar
⅜ cup butter
3 tablespoons milk
2 teaspoons peppermint extract
3 drops green food coloring
3 (1 ounce) squares unsweetened chocolate, chopped
3 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan. In a small saucepan over medium heat, melt 4 squares of chocolate with 1 cup butter.
  • In a medium bowl, beat eggs and sugar with the melted chocolate mixture until well blended. Stir in the flour. Spread the batter evenly into the prepared pan.
  • Bake for 17 to 20 minutes in the preheated oven. Cool in pan. To make the mint layer: Beat the confectioners' sugar with 3/8 cup of butter in a medium bowl. Gradually beat in milk, green food coloring and peppermint extract. Spread evenly over the brownie layer and refrigerate for at least 1 hour.
  • To make the glaze: Melt 3 squares chocolate with 3 tablespoons butter over medium heat or in a microwave oven, stirring frequently until smooth. Spread over the mint layer when completely cool. Chill again to set before cutting into bars.

1 cup sugar
1/2 cup margarine, softened
1 large egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 cup unsweetened cocoa
1/4 cup milk (or half and half)
1/2 teaspoon baking soda
1/2 teaspoon salt
24 marshmallows, cut into halves
frosting
2 1/2 cups powdered sugar
1/3 cup unsweetened cocoa
1 dash salt
3 tablespoons margarine, softened
4 -5 tablespoons milk
1 (16 ounce) can chocolate frosting

Steps:

  • Heat oven to 350°F.
  • Combine 1 cup sugar and 1/2 cup margarine in large mixer bowl.
  • Beat at medium speed until creamy.
  • Add egg and vanilla, and continue beating until well mixed.
  • Reduce speed to low,and add all remaining cookie ingredients except marshmallows.
  • Beat until well mixed.
  • Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
  • Bake for 6-7 minutes or until edges are just set.
  • Remove from oven.
  • Press 1 marshmallow half onto center of each cookie.
  • Continue baking for 2 minutes or until marshmallow is softened.
  • Cool 1 minute; remove from cookie sheets.
  • Cool completely.
  • Combine all frosting ingredients except milk in small mixer bowl.
  • Beat at low speed, adding enough milk for desired spreading consistency.
  • Frost cooled cookies, covering entire marshmallow.
  • Variations: Before putting frosting over cooled cookies, spread a thin layer of peanut butter, caramel, or seedless raspberry jelly over marshmallow, and then add your frosting.
