This frosting comes from my Mom. You can use it on made-from-scratch brownies, or give boxed brownies a special touch. Very rich and VERY good!

Steps:

  • Combine the milk, butter, and sugar together in a saucepan and bring to a boil; allow to cook at a rolling boil for 30 seconds and immediately remove from heat. Add the chocolate chips and vanilla to the milk mixture and stir until the chips are completely melted. Pour immediately over warm brownies.

Ice Cream Cake:
Unsalted butter, for buttering the pan
8 to 10 brownies (2 1/2-inch squares)
1/2 cup crushed chocolate sandwich cookies
2 quarts mint chocolate chip ice cream, softened
Vanilla Whipped Cream Frosting:
2 cups heavy cream
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
Chocolate sprinkles, for sprinkling

Steps:

  • For the ice cream cake: Butter a 9-inch springform pan and line it with a parchment paper circle. Cover the bottom of the pan with the brownies, using any extra pieces to line the sides of the pan if desired. Sprinkle with the cookies. Scoop the ice cream onto the cookie layer, packing it in tightly. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
  • Unmold the cake by running a knife around the edge of it, then unhinging the springform ring and removing it. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
  • For the vanilla whipped cream frosting: Add the cream, confectioners' sugar and vanilla to a large bowl and beat with an electric mixer until soft peaks form. This makes enough frosting to cover the top and sides of the cake with additional to pipe decorations if desired.
  • Frost the top and sides of the cake with the whipped cream frosting and decorate with the sprinkles. If the cake begins to get too soft, put it back into the freezer for a few minutes.
  • Freeze an additional 1 1/2 hours and up to overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

1 cup all-purpose flour
1/4 cup unsweetened Dutch-process cocoa powder, sifted

1 3/4 cups packed brown sugar
1/2 cup granulated sugar
4 large eggs
Peanut Butter Fudge frosting, recipe follows
3/4 cup unsalted butter, room temperature
1/2 cup creamy peanut butter
Pinch salt
2 cups confectioners' sugar
3/4 cup unsweetened Dutch-process cocoa powder

Steps:

  • Preheat the oven to 350 degrees F. Line standard cupcake pans with 24 cupcake liners.
  • Combine the butter and chocolate in a small microwave-safe bowl. Microwave on high, uncovered, stirring every 30 seconds, until the butter and chocolate are melted and smooth. Set aside to cool. Mix the flour, cocoa powder, espresso, and salt in another bowl. In the bowl of an electric mixer fitted with the paddle attachment, mix both sugars and reserved chocolate mixture until well combined. Add the eggs, 1 at a time, beating until each is smooth, scraping down the sides of the bowl if needed. Add the flour mixture until blended. Fill the cupcake liners 2/3 full. Bake until golden, rotating the pans halfway though, 18 to 20 minutes. Transfer the pans to wire racks to cool completely before removing the cupcakes.
  • To assemble: Frost the cooled cupcakes with Peanut Butter Fudge Frosting.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, peanut butter, and salt on medium-high speed until creamy. Turn the speed to low and beat in the confectioners' sugar, 1/2 cup at a time. Add the cocoa powder and beat until extremely smooth and creamy.

Steps:

  • For cupcakes:
  • Preheat oven to 350°F. Line 10 standard (1/3-cup) muffin cups with paper liners. Combine butter, 1/2 cup chocolate chips, and unsweetened chocolate in top of double boiler set over simmering water. Stir until mixture is melted and smooth. Remove from over water. 4 tablespoons/55 grams unsalted butter, cut into pieces, plus more for the pan
1/2 cup/120 milliliters neutral oil, such as vegetable or coconut
1 cup/220 grams light brown sugar
1/2 cup/100 grams granulated sugar
1 1/3 cup/170 grams all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon fine sea salt
3 large eggs
1 1/2 teaspoons vanilla extract
6 ounces/170 grams finely chopped bittersweet chocolate
3/4 cup/180 milliliters heavy cream

Steps:

  • Heat the oven to 350 degrees. Lightly butter a 10-inch oven-safe skillet. Fill a medium pot with about 1 1/2 inches of water, and bring to a simmer.   • Bake the brownie until the surface appears set: A toothpick inserted into the center should come out with a few moist crumbs attached, 30 to 33 minutes. Let cool completely.
  • While the brownie cools, make the ganache: Place the chocolate in a medium, heat-safe bowl. Bring the cream to a simmer in a small pot over medium heat. Pour the hot cream over the chocolate and let it stand undisturbed for 15 seconds. Stir the ganache until the chocolate is melted and the mixture is smooth. Let cool slightly.
  • Once the brownie is cool, spread the ganache onto the brownie in an even layer. (It will have thickened slightly. If it's not thick enough, you can refrigerate it for 10 minutes or so; if it thickens too much, you can microwave it in 10-second bursts in a microwave-safe bowl until it's spreadable again.) 1 oz cocoa powder

Steps:

  • 1. Preheat the oven to 350 degrees. Butter a 9 inch spring form pan set aside.
  • 2. Whisk together the flour, sugar, cocoa powder, baking powder and salt in a bowl. Beat together the butter, eggs and vanilla. Add to the dry ingredients and mix until smooth. Stir in the toasted nuts. Pour into the prepared pan.
  • 3. Bake on a middle shelf of the oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Immediately sprinkle the marshmallows on top and return to the oven for a few minutes to melt the marshmallows. Remove from the oven and carefully spread the chocolate frosting over top.
  • 4. To make the chocolate frosting mix all ingredients together in a bowl, beating with an electric whisk until smooth and thick. Spread on the hot marshmallows. Let cool completely. Cut into wedges to serve.

  • In a large bowl, cream 1/2 cup butter until light.
  • Add the vanilla, salt, and melted semisweet choclate and beat well.
  • Sift the cocoa into the butter mixture and beat again.
  • Add the powdered sugar 1/2 cup at a time, beating well after each addition.
  • Stir in as much of the 3-4 T of milk as you like until the frosting reaches spreading consistency.
  • Frost cake and enjoy!

  • In a saucepan over med heat combine butter, sugar, milk, and cocoa.
  • Melt, and bring to a boil.
  • When it has bubbles all the way across the top of surface now time.
  • Boil hard one minute only.
  • Remove from heat, add vanilla.
  • let cool slightly, stir and beat until its like very thick corn syrup, and sticky to bottom of pot. I always use a spoon, so I can tell how it is thickening up.

  • Line an 8 by 8-inch pan with foil, leaving a 2-inch overhang. Spray with nonstick spray.
  • Melt butter and chocolate in a heavy bottomed saucepan over medium heat stirring constantly.
  • Once the chocolate is melted and smooth, stir in the sugar, eggs, salt, and vanilla extract together. Whisk until smooth. Add the flour and stir until thoroughly combined. Pour into pan.
  • Bake for 30 minutes. Remove from oven and let cool completely on wire rack.
  • Cream Cheese Frosting:
  • Beat the butter and cream cheese with a hand mixer until fluffy and light. Add the powdered sugar and beat until combined. Add the orange juice and zest and beat until thoroughly combined. Place frosting in a piping bag with a large star tip.
  • Remove brownies from the pan. Using a 1 1/2-inch round ring mold cut out the brownies into circles. Decoratively pipe the frosting on the brownies.

6 tablespoons unsalted butter, cut into 4 pieces
1 1/4 cups semi-sweet chocolate chips, about 8 ounces
3 ounces unsweetened chocolate, chopped
1/2 cup packed golden brown sugar
1/3 cup sugar
2 large eggs
1 teaspoon vanilla
1/2 cup flour
1/3 cup walnuts, toasted,chopped
1/4 teaspoon salt
1 cup powdered sugar
3/4 cup creamy peanut butter (do-not use old-fashioned or fresh ground)
1/4 cup unsalted butter, room temperature
1/4 teaspoon vanilla
4 teaspoons whipping cream (about) (optional)
chocolate shavings or chocolate sprinkles

Steps:

  • For cupcakes; Preheat oven to 350 degrees.
  • Line standard (1/3 cup) muffin cups with paper liners (These are really better made in mini muffin tins.) Combine butter, 1/2 cup chocolate chips, and unsweetened chocolate in the top of double broiler set over simmering water.
  • Stir until mixture is melted and smooth, Remove from water.
  • Whisk both sugars into chocolate mixture, then whisk in eggs 1 at a time.
  • whisk in vanilla, then flour, walnuts, salt and remaining 3/4 cup chocolate chips.
  • Divide batter among muffin cups (about 1/4 cup each).
  • Bake cupcakes until tester inserted into center comes out with moist crumbs attached, about 20 minutes.
  • Transfer cupcakes to rack and cool completely.
  • Frosting; Put powdered sugar and the next 3 ingredients in a medium bowl.
  • Using electric mixer, beat until mixture is smooth, adding whipping cream by teaspons if frosting is to thick to spread.
  • Spread frosting in swirls over tops of cupcakes, sprinkle with chocolate shavings or sprinkles.

OLD FASHIONED BROWNIE RECIPE
1 cup butter, melted
1-1/2 cups white sugar
1-1/2 cups brown sugar, packed
1 TBS pure vanilla extract
4 eggs
1-1/2 cups flour
1 cup unsweetened cocoa powder
1 tsp salt
1 cup milk chocolate chips

Steps:

  • PREHEAT oven to 350 degrees. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups. In a large bowl, beat the butter, vanilla and sugar until light and fluffy. Add the eggs, one at a time, beating after each addition. NOTE: Coat the chocolate chips in a little flour before putting them in the batter so they wouldn't fall to the bottom of the pan. Sift the flour, cocoa powder and salt together and gradually add to the chocolate mixture until just blended. Fold in the chocolate chips and spread into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the middle comes out clean. Cool completely. WHITE MARSHMALLOW FROSTING: 1-1/2 cups sugar 1/2 cup water 6 large marshmallows, chopped 2 egg whites, beaten stiff 1/4 tsp baking powder 2 tsp lemon juice Boil sugar and water to 238 degrees; add chopped marshmallows, but do NOT stir. Pour hot syrup over beaten egg whites, then add baking powder and lemon juice. Continue beating until mixture forms a peak; spread between layers of cake, on top and sides. Sprinkle with coconut, if desired. Cream Cheese Frosting: 2 cups homemade powdered sugar 4 ounces cream cheese, chilled and cut into chunks 2 TBS soft butter 1 TBS homemade pure vanilla extract 1/8 tsp salt Combine all frosting ingredients together and whip until light and fluffy. Spread frosting over cooled brownie cupcakes and decorate if you wish.

Steps:

  • Heat oven to 350°F. Grease and flour 8- or 9-inch square pan. In large bowl, measure all Cake ingredients. Beat with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat 3 minutes on high speed, scraping bowl occasionally. Pour into pan.
  • Bake 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • Meanwhile, in medium bowl, beat cream cheese, 1 tablespoon milk, 1 teaspoon vanilla and dash of salt; add 2 oz chocolate. Gradually add powdered sugar, beating until frosting is smooth and spreadable. If necessary, stir in additional milk, 1 teaspoon at a time.
  • Once cake is completely cool, frost and serve.
